Greek sauce "Scordalia"

Ingredients:

  • 450 g potatoes (about 2-3 tubers)
  • 85g raw almonds (whole but without husks)
  • 4–6 teeth garlic
  • 90 ml white wine vinegar (or lemon juice)
  • 180 ml olive oil
  • 2 tbsp. l. water
  • salt to taste

Preparation:

  1. Cut the peeled potatoes into small cubes and place in a colander. Rinse under cold water until the water runs clear. Then transfer to a saucepan and add cold water to cover the potatoes by 5 cm. Season generously with salt.
  2. Bring water to a boil over high heat, then reduce heat to medium-low. Cook until potatoes are soft (10–15 minutes). Then drain it in a colander and rinse with hot running water.
  3. In a blender, combine almonds, garlic, 2 tbsp. l. cold water and wine vinegar (or fresh lemon juice, about 2 lemons) to a paste. Season with salt.
  4. Place the potatoes on a baking sheet and place in an oven preheated to 175°C. Bake until excess moisture has evaporated and the surface of the potatoes is dry, about 5 to 7 minutes.
  5. After this, mash the potatoes. Add the olive oil and almond mixture and mix thoroughly. If the butter does not mix well with the sauce, add more cold water, 1 tbsp at a time. l. at a time, using a blender until the mixture is fluffy.
  6. Season the finished dish with salt and garnish with parsley. Serve immediately with warm pita or bread.

How to get kids to eat potatoes

  • Choice egg.
  • 100 g mayonnaise.
  • 150 g Dutch cheese.
  • Salt, refined oil and seasonings.

Thinly sliced ​​potatoes are placed on the bottom of a deep greased form and greased with mayonnaise. Onion half rings, tomato slices and ground meat mixed with a salted egg are distributed on top. All this is crushed with cheese shavings and cooked at 200 degrees for about forty minutes.

Ingredients:

  • 1 tooth garlic
  • 240 ml heavy cream
  • 4 tbsp. l. butter
  • 200–240 g grated mozzarella
  • 60 ml milk

Preparation:

  1. Peel and cut the potatoes into large chunks, then place in a large saucepan and add enough water to completely cover the potatoes. Add some salt.
  2. Bring to a boil, reduce heat and simmer until potatoes are tender, about 15 minutes. Drain the water and leave the potatoes in the pan until completely dry.
  3. Using a blender or food processor, puree the potatoes. Add chopped garlic, stir.
  4. Return the potato mixture to the pan, add the warmed cream and softened butter, and stir. Keep warm until serving.
  5. Before serving, place the pan over low heat and sprinkle the dish with grated mozzarella. When the cheese has melted, pour in warm milk in a thin stream. Stir. Serve immediately.

Zrazy with minced meat

This tasty and simple potato dish, the recipe and photo of which will be available a little later, consists of stuffed cutlets. It goes well with fresh vegetable salads and is a good option for a regular family dinner. To prepare these dishes you will need:

  • 8 potatoes.
  • 300 g of any ground meat.
  • 100 g of Russian cheese.
  • Small onion.
  • 2 cloves of garlic.
  • 3 tbsp. l. flour.
  • Choice egg.
  • Breadcrumbs, salt and refined oil.

Peeled and washed potatoes are boiled in salted water, mashed into a puree and combined with egg, flour and ground pepper. Flatbreads are made from the resulting mass; ground meat, fried with chopped onions, and mixed with grated cheese is placed in the middle of each of them. The resulting pieces are shaped into cutlets, breaded and browned in a greased frying pan.

Casserole with mushrooms and cheese

This aromatic and very simple potato dish can be prepared not only for a family dinner, but also for the arrival of guests. Despite its simple composition, it turns out very tasty and quite beautiful. To make this casserole, you will need:

  • 1 kg of potatoes.
  • 700 g champignons.
  • 300 g of Russian cheese.
  • Large onion.
  • 2 selected eggs.
  • 200 ml 30% cream.
  • 2 cloves of garlic.
  • Salt, refined oil and white pepper.

The washed and peeled potatoes are boiled until half cooked, cooled, cut into thin slices and placed in a greased pan. Mushrooms fried with chopped onions are distributed on top. The whole thing is covered with a sauce made from beaten eggs, salt, white pepper, crushed garlic, cream and cheese shavings, and covered with foil. Cook the dish at moderate temperature for about half an hour. Then it is carefully removed from the foil and baked for another ten minutes.
