This appetizer can be safely prepared even for a festive feast. Its highlight is that slices of vegetables, even when cooled, will be very tasty. A universal dish!

It is prepared quickly, simply and from available products. All the ingredients included are inexpensive and combine perfectly with each other. I highly recommend this recipe!

What you will need:

  • Minced meat (any) – 250-300 gr.;
  • Salt, pepper to taste;
  • Medium-sized tomatoes - 2 pcs.;
  • Onion – 1 pc.;
  • Medium zucchini – 2 pcs.;
  • Cheese – 150 gr.

Step-by-step cooking process:

1. Take small zucchini and always young ones. Such vegetables do not need to be peeled - they are already very soft. In addition, hard seeds have not yet formed in young zucchini.

So, wash them, dry them with a towel and cut them into circles the thickness of a finger (about 1 cm).

2.Now you need to make a hole in the center of each circle. If you have a special tool for coring apples, use it. But you can just cut it out with a knife.

We don’t throw away the pulp; we will need it later.

You should get rings that look something like this. Place them in a deep bowl, add salt and mix well. Let's set it aside for now. Let them salt and let out the juice.

3. Chop the onion very finely. You can even chop it into small grains with a blender (but not into porridge). We send it to the minced meat.

4. Place the cut out zucchini pulp into a blender and turn it into a pulp. We also transfer it to the meat mass. Season the whole thing with salt, pepper and mix until smooth.

5. Grease a baking tray with vegetable oil. Place zucchini slices on it, close to each other.

Fill each hole with meat filling, with a good mound.

6. Cut the tomato into thin slices. Place a plastic tomato on each piece. Heat the oven to 200 degrees. Place the baking sheet here for 25 minutes.

7. Then we take it out, sprinkle it with grated cheese and put it back in the oven, at the same temperature for another 10 minutes. The cheese should melt and turn slightly golden.

Done - ready to serve! But I like it when the dish sits for a while, cools down and, as they say, rests. Firstly, it will no longer be so hot and scalding. Secondly, during baking, juice was released, which will be absorbed back into the food as it cools.

Casserole of zucchini and minced meat in the oven without hassle

It's no secret that these green vegetables go perfectly with minced meat, both in taste and in health! I offer you another quick recipe for this union. The dish is prepared very quickly and simply. And it turns out incredibly delicious.

You can cook it for a holiday or just for dinner. The dish is quite low in calories and, at the same time, very healthy!

We will need:

  • Garlic – 2-3 cloves;
  • Zucchini – 1 kg;
  • Hard cheese – 170 gr.;
  • Any minced meat (in this case, pork + beef) – 400 gr.;
  • Medium-sized onions – 2 pcs.;
  • Sour cream – 200 gr.;
  • Tomatoes – 2-3 pcs.;
  • Raw chicken eggs – 2 pcs.;
  • Parsley or other greens - a small bunch;
  • Salt, spices to taste.

Let's start cooking:

We took the zucchini young, so we didn’t remove the skin and seeds. If your harvest is late, be sure to peel the peel and remove the seeds with a loose core.

We rub the prepared product with a grater on its large attachment. Place in a bowl, add salt well and mix. Let it stand in this form for about 15 minutes so that the vegetable releases its juice in interaction with the salt.

By then, we'll have everything else ready. Cut the onion into small cubes. Heat a little vegetable oil in a frying pan. Place the onion here and fry until translucent. In this case, you need to stir frequently.

You can use any meat for minced meat. In this case, we took 200 grams of beef and pork pulp. Add the onions to the frying pan.

Mix thoroughly, breaking all large lumps into small grains. Salt and season to taste. You can take your favorite spices that go well with meat. For example, a mixture of Italian herbs and suneli hops.

Fry for about 5 minutes, until half cooked. Then transfer to a separate bowl.

Using a press, add garlic here. If you don’t have such a device, grate it with a fine grater. Well, or finely chop it with a knife. Mix everything well.

Use a coarse grater to grate the cheese and finely chop the greens with a knife. We turn the tomatoes into thin circles.

Meanwhile, the zucchini has already released moisture. Now you need to squeeze them thoroughly, removing all the liquid. This can be done through a sieve or simply by squeezing with your hands.

Preparing the filling. Combine sour cream with eggs into a homogeneous mass.

There should be no separate fragments of protein or yolk left in it.

Salt and pepper to taste. Our sauce is ready!

Grease a heat-resistant form with a thin layer of vegetable oil. Place half of the total amount of squeezed zucchini here. Cover with an even layer of meat filling.

Place the remaining vegetable mass on top, and then the tomato slices. Pour sour cream sauce evenly.

Heat the oven to 190-200 degrees. Place the dish here for about 20 minutes.

If you have a ceramic mold, then it is better to place it in a still cold oven, and then turn on the heat. Then keep in mind that the time it stays in the oven will be longer, taking into account the heating time.

Then we take out the form. The dish is not ready yet - now we need to sprinkle it with herbs and then cheese. Return to bake at the same temperature for another 10-15 minutes. An appetizing golden brown crust should form.

I don’t recommend serving it piping hot. After all, during the baking process, the products released a lot of juice and the dish is now watery. And if you let it sit for 20 minutes at room temperature or in the oven turned off, the liquid will be absorbed back into the vegetables and minced meat. Then it turns out even tastier and more enjoyable.

Stuffed zucchini boats in the oven

Another very popular way of stuffing is boats. For their preparation, small young specimens of such a size that they can fit on a plate are suitable. The number of cut zucchini boats should correspond to the number of servings.

Ingredients:

  • Minced meat (any) – 300 g;
  • Tomatoes – 1 pc.;
  • Onions – 1 pc.;
  • Garlic – 3 cloves;
  • A glass of sour cream;
  • Cheese – 100 g;
  • A bunch of dill;
  • Salt and pepper - to taste.

How to cook

Cut each zucchini lengthwise into 2 parts. Scoop out the core from the halves with a spoon.

and cut them into small cubes.

Finely chop the onion and fry in a frying pan with oil. Add the minced meat there, and then the finely chopped zucchini core and simmer for 10-15 minutes. Add salt and pepper to them. Take it off the stove and let it cool slightly.

Grate cheese and garlic. After the minced meat has cooled a little, add chopped tomato, garlic, cheese, sour cream and mix everything well.

  • young zucchini – 3 pcs.;
  • hard cheese – 150 g;
  • full-fat mayonnaise – 100 g;
  • sweet pepper – 1 pc.;
  • onion - 1 head;
  • salt and favorite spices.


Step-by-step cooking process:
  1. Zucchini is cut lengthwise and the pulp and seeds are removed.
  2. Fry minced meat in a frying pan.
  3. Add finely chopped onion and bell pepper to the meat.
  4. Add salt and spices and cook covered for about 5 minutes.
  5. Place the resulting filling into the zucchini, sprinkle generously with cheese shavings, and then coat with mayonnaise.
  6. Place in the oven for half an hour.

If you want to get sharper “boats,” you can chop a few cloves of garlic into minced meat.

Zucchini with minced meat and rice in a frying pan

This dish is reminiscent of cabbage rolls, only the shell for them will be circles - barrels of zucchini. A thick-walled frying pan or saucepan is best for stewing.

You will also need products:

  • Any minced meat – 350-400 g;
  • Boiled rice – 1 cup;
  • Egg – 1 pc.;
  • Onions – 1 pc.;
  • Carrots – 1 pc.;
  • Tomatoes, can be frozen – 3-4 pcs.;
  • Sour cream – 2 tbsp. l.;
  • Vegetable oil for frying;
  • Salt and pepper - to taste.

Preparation

Add boiled rice, egg to the minced meat, salt and pepper it, mix well. Set aside for a while.

If you have young vegetables, you do not need to peel them. You will have to do this on older ones, since the peel on them is already rough. We cut the zucchini into circles about 3-4 cm high, so that it is convenient to stuff them later. Clean the middle with a spoon or cut out with a knife.

Stuff with the prepared filling and place the circles in a pan, possibly on top of each other. Pour water into the pan 2 cm above the zucchini, add a little salt to the water. Turn on the heat under the pan so that they begin to simmer.

Let's make the sauce. To do this, fry finely chopped onion until transparent in a frying pan with oil, then add carrots and fry until the carrots become soft. Add frozen tomatoes to the onions and carrots, and then sour cream.

Sour cream will give the sauce a delicate consistency.

Salt the sauce, sprinkle with pepper and when the sour cream is gone, the sauce will be ready. Meanwhile, the water in the pan with the zucchini begins to boil. Add the sauce to them, distribute it over the entire surface so that it is not lumpy.

Cover the pan with a lid, but not tightly. And leave to simmer for about 40 minutes.

The prepared zucchini turns out very tasty, and the sauce in which they were stewed is reminiscent of cabbage rolls in sour cream sauce.

  1. Cut the zucchini into slices, the thickness of which should not exceed 2 cm. If the peel of the vegetable is rough, it must first be cut off from it.

  3. Grind the meat in a meat grinder together with the onion. If you have ready-made minced meat, then add chopped onions to it, and if you like, add finely chopped dill.
  4. Add the zucchini mixture to the minced meat, mix everything and add salt.
  5. Prepare the batter in a separate bowl.
  6. Fill the centers of the zucchini with minced meat.
  7. Prepare a baking sheet - grease it with vegetable oil.
  8. Dip each stuffed zucchini circle in the batter and place on a baking sheet next to each other.
  9. Place the baking sheet in the oven; it must be preheated.

According to this recipe, zucchini is baked for about 40 minutes, which should be enough time to prepare the minced meat, taking into account the fact that it is used raw.

This recipe for stuffed zucchini in the oven is very simple and at the same time delicious. I like the process of creating it - it is simple, and when served, the dish looks very impressive. For cooking, only simple ingredients are used, which I buy at the nearest supermarket.

Ingredients:

  • Young zucchini 1 kg.
  • Ground beef or chicken 250 gr.
  • Minced pork 150 gr.
  • Ripe tomatoes 400-500 gr.
  • Carrots 200 g.
  • Onion 100 gr.
  • Garlic 30 g.
  • Meat or vegetable broth 250 ml.
  • Sweet ground paprika 1 tsp.
  • Black pepper (peas) 10 pcs.
  • Ground black pepper or a mixture of peppers 1/3 tsp.
  • Chili pepper 3 pcs.
  • Ground coriander 1 tsp.
  • Dill, parsley 5 g each.
  • Salt 1 tsp.
  • Bay leaf 2 pcs.
  • Water 100ml.
  • Greens - for serving.
  • Sour cream - for serving.

Cooking process:

  1. Pour boiling water over the tomatoes and leave for 10 minutes.
  2. Chop the garlic, onion and fresh herbs with a knife. Cut the carrots into thin slices.
  3. Make a cross-shaped cut on the tomato and carefully remove the skin. Grate them on a fine grater (you can press them through a sieve).

  • salt, mayonnaise, pepper.

Preparation procedure:

  • 2 onions, diced;
  • ¼ cup rice;
  • 150-200 g minced meat or minced meat;

3. Fill the zucchini with this mixture, but not too tightly, as the rice will swell during cooking. Place each filled squash upright in a large ovenproof casserole dish or baking dish.

4. Slice the tomato and place a slice on top, thereby covering the minced meat in the zucchini.

5. Dilute 1 tbsp. l. tomato paste with water in a glass and pour it into the bottom of the mold where the zucchini are. Then pour in a little water so that the water is no higher than the middle of the zucchini.
