Making minced meat

  1. Pour the chopped onion into a bowl with the rolled meat mixture and stir the resulting mixture well by hand.
  2. After this, add spices: black pepper, ground coriander, hot red pepper and a little cumin.

  1. After proofing, add salt to the minced meat and mix it thoroughly again.
  2. Now we divide the minced meat into four equal parts, each of which we beat well in the palm of our hand, tossing it from one hand to the other.

Frying lula kebab

  1. Place the skewers on the grill with hot coals.

  3. Now we divide it into equal parts and, with hands dipped in water, form cutlets from them. From the specified amount of minced meat you should get 5-6 cutlets.

  4. We take a skewer and pierce the cutlet with it.

  5. Now, carefully, using squeezing movements, stretch this cutlet, distributing it over the skewer. The layer of minced meat on the skewer should not be thick. This way our lula kebab will quickly fry, we won’t have to turn it on the grill for a long time and often from side to side, which means exposing it to the unnecessary risk of falling on the coals.

  6. Pay attention to the tip - it is thinner and seems to be slightly smeared over the skewer. All this is for strength, so that the cradle holds on and does not fall. Since it is thin, it will quickly be caught by fire and will hold the bulk of the minced meat in place.

  7. Unlike shish kebab, lula kebab is fried over hotter coals, with constant fanning. As soon as the meat on the downward-facing surface changes color, immediately turn it over and fry the second surface in the same way until the color changes. Turning it over again, we wait for the juice to start releasing; as soon as it appears, we turn it over again. Task: do not let the fat drip onto the coals, because of this the lula kebab will start to burn and the finished color will be ugly. For pork kebab to be ready, 2 turns are usually enough. However, go by the color, it should be golden brown.

  8. Removed from the grill, lula kebab is immediately wrapped in pieces of pita bread (it will need to be pre-cut into smaller squares). Lavash will absorb all the juice dripping from the cradle, and you will not lose a drop of deliciousness.
