1. Cottage cheese, preferably homemade, is rubbed through a sieve with a spoon. In theory, you can do it through a meat grinder, but it seemed to me that it would be more tender this way. Yes, that’s what the old recipe said. 2. then we add egg, butter, soda, and salt to the cottage cheese. 3. Place the cauldron with this mixture on low heat and begin to mix it all with a spoon until smooth. We add spices along the way - I sprinkled dried basil. If you want to give the processed cheese a yellowish color, add turmeric. 4. Stir continuously until the mass completely melts and the first bubbles appear. If you overheat it, water may begin to separate and the processed cheese will have a consistency similar to feta cheese. 5. Pour the mixture into a bowl and let it cool. Processed cheese is ready. I note that the quality of the cottage cheese is very important. If the cream cheese turns out too runny, try adding cream next time. Add greenberries and eat to your health!

How to make processed cheese at home from cottage cheese. How to make processed cheese from cottage cheese

My family loves Altai processed cheese very much. Judge for yourself, when you spread a delicate creamy texture on a piece of fragrant bread, and even sprinkle finely chopped herbs on top, or even aromatic herbs are already in the product itself, you can’t imagine a better breakfast. And tasty, and healthy, and appetizing!

But somehow it turned out that this miracle was not available at the dacha, but the family really wanted it. Fortunately, they come to us every evening and sell fresh dairy products, including village cottage cheese, so the problem was quickly solved and the next morning everyone enjoyed a delicious breakfast.

We will need:

  • Fresh cottage cheese – 0.5 kg.
  • Butter – 100 gr.
  • Egg – 1 pc.
  • Soda – 1 tsp.
  • Salt, herbs - to taste and desire.

Preparation:

1. The best results are obtained when the product is cooked in a steam bath. Therefore, fill a small saucepan or any saucepan that is convenient for you about half with water and send it to the stove to heat to boiling temperature.

2. At this time we prepare our ingredients. To begin, place fresh cottage cheese in a large metal bowl that will be convenient to place on top of the pan.

3. Add slightly melted butter, cut into pieces, break an egg, add salt and add a spoonful of soda. It is this that allows the dairy product to “bloom” when heated to the state we need.

4. To speed up the process of mixing the ingredients and then melting them evenly, you can use a blender, which will quickly turn the mixture into a homogeneous mass without lumps.

5. Now you can proceed to the most important and crucial moment in the entire cooking process. We place the bowl on the saucepan so that its bottom does not touch the water, but rather is located above thick steam, which will be the most important heating element in the process of melting the resulting mass.

6. Cook with constant stirring until the entire mixture reaches a viscous consistency. If you like processed cheese with additives, then this is the best time to add chopped herbs, pieces of ham, mushrooms or other fillers.

7. Pour the finished liquid product into a metal or ceramic sealable mold. You can choose any container from which it will be convenient to take the creamy mass later.

8. Let it cool on the counter to room temperature, and then close the lid and put it in the refrigerator for a couple of hours.

9. The finished delicacy is very convenient and easy to spread on pieces of bread.

For breakfast, such a product is always highly desirable, and it is eaten with great pleasure!

Processed cheese with garlic

An appetizer based on garlic and mayonnaise is a rather bold decision and is not suitable for every occasion. You can add a boiled egg to this dish, which will make it more tender and airy, and greens for taste and color. Best served as a separate salad or with croutons or slices of bread. Experts note that this recipe contains an ingredient such as processed cheese. This means that it needs to be prepared in advance according to the classic recipe above and used here.

What you need to prepare:

• processed cheese – 250 grams; • mayonnaise – 2 tsp; • garlic – 2 cloves; • paprika; • greenery.

Step-by-step cooking process:

1. Mix the prepared processed cheese with garlic, passed through a press. Mix well so that the garlic is distributed throughout the cheese mass. 2. Add mayonnaise and mix the appetizer again.

It is recommended to serve processed cheese with garlic, spreading it on croutons or bread, sprinkling with paprika and herbs.

Homemade processed cheese. Production of processed cheese in production

What, what, what is our processed cheese made of? The name of this product speaks for itself - yes, to get it, the raw materials that make up the base of the cheese simply need to be melted. This is what happens in industrial production.

The most common cheese, for example, Tilsit or Emmental, is melted, butter, milk powder, salt melters (E additives that scare us so much) and water are added.

And this is the composition of a good quality product made at the enterprise of bona fide manufacturers. One can only imagine what kind of powders and E-shells are added to cheeses that are cheaper and produced by someone unknown and where.

But even a small child can eat processed cheese made with his own hands without fear, because it contains only natural and even very healthy ingredients.

At home, we simply do not have those additives that are so necessary for factory-made cheese to enhance the taste, increase production volumes, and even not stick to foil!

So, homemade processed cheese consists of the most banal, but very healthy product - cottage cheese or milk with the addition of cottage cheese! And soda is used as a melting agent. It’s all so simple to the point of genius.

The production of this product, for sure, has always seemed like a complex technological process that can only be carried out in production workshops with a bunch of automated equipment and dosing equipment.

But we assure you that every housewife has everything needed to prepare it in her kitchen. And the process itself takes about half an hour, taking into account all the culinary procedures. Our step-by-step recipe will tell you how to easily and quickly get delicious processed cheese.

First, let's prepare the kitchen equipment.

We will need:

  • blender or mixer;
  • a saucepan with boiling water on the stove - for melting cheese in a water bath;
  • container for whipping all ingredients. It should be taken into account that this container should be conveniently placed on the pan over the water bath;
  • heat-resistant containers for the finished product.
  1. Place the cottage cheese in a container and break it up with a blender so that a situation does not arise where the curd grain in the homemade cheese does not melt. You can, however, rub it through a sieve or mince it, why not. Whipped cottage cheese turns out to be very thick in consistency, almost like plasticine.
  2. Add butter and eggs to the cottage cheese. Add baking soda and a pinch of salt, as well as spices if desired. Beat with a blender until smooth.
  3. Now place the container with the resulting mixture over boiling water in a saucepan and stir constantly. Melting time takes about 5 - 10 minutes. When the mixture is completely melted and looks like liquid processed cheese, pour it into the prepared container.

After cooling, the product is ready for use. In total it turns out to be about 700 g, which is not so little, you will agree.

As you can see, it is very easy to prepare processed cheese at home, the main thing is that you have plenty of crispy bread at home on which all this splendor can be spread. And as soon as the cheese runs out, you can easily cook it again.

Milk-based processed cheese

  • butter - 120 gr.
  • milk with fat content from 3.2% - 1 l.
  • salt - 20 gr.
  • soda - 20 gr.
  • cottage cheese - 0.9-1 kg.

  1. Place the pan on the stove, pour milk into it and leave over medium heat until the first bubbles appear. At this time, pass the cottage cheese through a kitchen sieve so that it breaks down into small grains.
  2. As soon as the milk reaches the required boiling temperature, reduce the burner to low power. Pour in the curd product and knead the mixture with a wooden spatula.
  3. After 3-5 minutes, you will notice that the composition begins to disintegrate. You will end up with two sections that consist of whey (a liquid with a yellowish tint) and individual curds.
  4. Continue stirring the product until the whey becomes almost clear. As practice shows, these manipulations will take about 5 minutes. Next, remove the container from the heat and proceed to the next step.
  5. Prepare a wide container and a sieve; utensils will be needed to separate the whey and curd mass. Some housewives prefer to place the mixture in a colander, having previously lined it with gauze.
  6. Pour the product into the filter and wait until all the liquid has drained. Press the curd a little with your hands and tie the gauze edges, making a bag. Hang it over the basin and leave for 1 hour.
  7. Chop the butter into cubes and place in a deep glass or ceramic bowl. Place in the microwave on the edge of a turntable. Melt the product completely and add to the cottage cheese.
  8. Add salt, soda, beat the finished mixture with a mixer or use a blender. The main thing is to bring the mass to complete homogeneity. There should be no lumps in it, otherwise the cottage cheese will turn out to be of poor quality.
  9. Next, melt the composition in a convenient way. You can pour it into a thick-bottomed pan and then put it on the stove. Or make a water/steam bath, with the help of which the simmering will take place safely.
  10. When the mixture dissolves, it will resemble a sticky paste. It’s easy to check if it’s done: put a fork in and remove it. If you see threads extending from the total mass, the cheese is ready.
  11. Remove the product from the stove and pour into heat-resistant containers. Cool to room temperature, then refrigerate for storage. The holding period should not exceed one week.
  12. If you follow the instructions, you will get 750 g at the end. processed homemade cheese. Grease a crispy bun with it, prepare a salad, after mixing the product with paprika, herbs, ham or pickles.

How to make processed cheese from cottage cheese at home. Step-by-step cooking recipe

  • Having prepared all the necessary components, you can begin the cooking process. To make a delicious curd-based cheese, you need to carefully follow the instructions. So, homemade cottage cheese should be placed in a medium-sized container, such as a bowl or pan.

  • After this, you need to beat an egg into the cottage cheese and add the required amount of soda, which will provide the mixture with the necessary thickness.

  • To prevent the taste of the cheese from being bland, do not forget to add salt.
  • The resulting mass must be mixed well until it has a homogeneous consistency. Then you should grate the butter, previously frozen in the refrigerator, on a coarse grater. If the butter has a soft consistency, it can be cut into cottage cheese into medium-sized pieces.

  • Now it's the blender's turn. With its help, you need to beat the resulting mass until it becomes completely homogeneous and puree-like. The next step is to use a water bath to melt the cheese.

  • To do this, you will need a small metal pan; place the mixture whipped with a blender into it. You need to pour water into another container, slightly smaller in volume, and after it boils, place the pan with the cheese mixture on top. Don't forget about stirring. It is recommended to do this with a plastic spatula, which is usually used when baking cakes.
  • As it heats up, the curd mass will begin to rapidly thin out. You need to cook the cheese for an average of 7 minutes, stirring constantly.
  • During the cooking process, the cottage cheese should completely dissolve; when this happens, you can turn off the heat.

  • When hot, the cheese has a fairly liquid consistency, but as it cools, the mass thickens quite quickly. If this does not happen, then, if desired, you can boil the cheese mass for another 5-6 minutes. As excess moisture evaporates, the cheese thickens more intensely.
  • Cooled processed cheese can be placed in glass jars or plastic trays.

  • When the processed cottage cheese reaches room temperature, you can put it in the refrigerator, where it will thicken even more. After 3-4 hours, home-cooked, delicate and natural Yantar cheese will be ready to eat.

Adherents of unusual taste sensations and gourmets can complement the recipe by adding fried champignons (finely chopped) or sweet peppers to the cheese. You can also experiment with spices and herbs. Recommendations with photos will help young housewives prepare a delicious dessert.

How to make cream cheese from cheese. Making processed cheese from hard cheese

We prepare very soft or firmer, good taste, which we, if desired, diversify with the addition of ham, mushrooms, herbs, etc. Try it - it's not difficult.

  • 300 g hard cheese, Russian type
  • 55 -60 ml water
  • 110 g butter
  • 50-90 ml milk from 3% fat (if required)

melting salt

Cooking method

We start cooking with melting salt. Pour soda and citric acid crystals into a glass or glass bowl, add lukewarm water - and watch the violent reaction for a few seconds. Mix.

Grate the cheese, pour in the resulting melting agent and mix well. Leave for an hour and a half, stirring several times. If you don’t have such a convenient metal bowl, take a saucepan or ladle.

We put everything you need - milk, butter chopped for quick softening, water - close to the hob. If we are going to add fillers to the cheese, we prepare it too.

We build a water bath: pour some water into the pan, put it on low heat until it heats up to 80-85°, but does not boil. We adjust the bowl so that it rests on the edges of the pan, but does not reach the water.

Stir continuously with a spoon until the cheese begins to melt. This takes 3-5 minutes depending on the type of cheese. Finally the cheese is melted.

Add water and oil, mix.

Let's take the mixer. The mass became homogeneous and smooth. The cheese slowly pours off the spoon in thick, stable threads. If you need hard processed cheese (like cheese curds in foil), it’s time to finish cooking. For soft – add milk, heat for a few minutes, stirring with a mixer.

Pour the cheese into small containers. We made it with both chopped ham and herbs. Just add to the cheese and stir. Let it cool, if necessary, stir again, cover with lids and put in the refrigerator.

Cheese cooked in a water bath with mushrooms

You will need:

  • Homemade cottage cheese – 500 g;
  • Soda – 0.5 teaspoon;
  • Salt;
  • Spices;
  • Champignons – 100 gr.

This is one of the easiest recipes for making homemade processed cheese. First, prepare the champignons: wash the mushrooms, wipe dry, chop finely, then fry in a mixture of butter and refined vegetable oils. Prepare a water bath; the boiling water should not touch the bottom of the pan or bowl. Combine the cottage cheese with soda, place in a water bath, stir continuously, after about 10-15 minutes the mass will melt completely, at this moment add salt and herbs, fried mushrooms.

Remove the finished cheese from the steam bath, pour into molds, and place in the refrigerator to harden. Instead of mushrooms, you can use any additives, for example, bell peppers, pickles, garlic, nuts, and herbs. By playing with additives, you can diversify the recipe and get homemade cheese with a wide variety of tastes.
