- - emmental cheese 200 g
- - 2 tbsp cornstarch
- - 200 ml white wine
- - 1 clove of garlic

Some will even find these cheeses with an unfamiliar aroma and taste unpleasant and will begin to prepare such a fondue from the cheeses familiar to us in Russia - Dutch, Russian, Kostroma, etc. It is better to prepare cheese fondue in a small saucepan, and then pour it into a fondue pot. And for those who have a slow cooker, cheese fondue can be perfectly prepared in a slow cooker. Cut a clove of garlic in half and rub the inside of the pan. Pour white wine into the pan and turn on the heat. Grate two types of cheese and place in a pan with wine. Melt the cheeses over low heat, stirring occasionally. Cheese fondue at home can be prepared from ordinary white bread by drying the cut pieces in the oven. Or cut a French baguette into pieces and prick each piece onto a fork, dip it into a fondue pot with melted cheese and put it in your mouth. In general, it is best for each guest to have two forks from the fondue set. With one you prick the bread and dip it into the general cheese mass, where everyone present dips their forks. And the other one you eat ready-made fondue.
Cheese fondue without wine
The birthplace of fondue is Switzerland. This dish was invented by Alpine shepherds who took cheese, white wine and bread with them to the mountains. Translated from French, fondue means “molten.” If previously only pieces of bread were dipped into cheese fondue, now it can be various vegetables: bell peppers, cauliflower, broccoli, cucumber, cherry tomatoes, gherkins, grapes, pitted olives, etc.
Ingredients
- - 1 clove of garlic
- - 200 g Gouda cheese
- - 200 ml milk
- - 200 g Edam cheese
- - nutmeg, grated
- - corn starch 2 tbsp
- - ground black pepper, salt
- - lemon juice 2 tbsp
- - White bread.
Preparation
Cheese fondue recipe without alcohol is perfect for children. The best way to go with cheese fondue is to buy a French baguette. It is soft on the inside and has a hard, crispy outside. When pieces of bread are dipped into melted cheese, it is precisely because of this crust that the bread does not become soggy. If you don’t have such a baguette, then you need to dry the pieces of white bread in the oven. Such pieces will become hard on the outside and soft on the inside.
Rub a small pan where the fondue will be prepared with a clove of garlic, cutting it in half. Then pour in the milk and bring to a boil. Of course, you can also use cream to make fondue. But cheese fondue with cream will have more calories than with milk. Then gradually add cheese and stir. The cheese should melt and acquire a uniform consistency. Mix cornstarch with lemon juice and pour into the cheese mixture. Add a little nutmeg, grating it on a fine grater. Add salt and ground pepper to taste, cook, stirring, for another 2-3 minutes and pour into the fondue pot. The cheese fondue recipe has its own peculiarity. The cheese mass should thicken so that the cheese does not drip; then you will prick pieces of bread onto forks, dip them into the fondue and bring them to your mouth.

Fondue, what is it? Its name comes from the French word “fondre”, which translates as “to melt”. The traditional Swiss dish includes two types of cheese - Gruyère and Emmental, which are melted in dry white wine, sometimes with the addition of cherry vodka (kirsch). However, in different parts of Switzerland you can find your own fondue recipe, characterized by a wide range of added components, the presence of which only benefits the dish.
Fondue is not just a dish, it is a special style of communication, certain traditions, etiquette. It is consumed by placing a piece of bread or other side dish on a long fork and dipping it into the melted mixture of cheese and wine. The fork is usually held over the fondue pot so that the excess cheese sauce drips back and it cools slightly. The bread is eaten from the fork carefully so as not to touch it with the mouth, because she will again have to plunge into the common dish.

History of fondue
What is this dish and what is its history?
Its origins lie with Swiss shepherds. In the alpine pastures they feasted on pieces of bread, which they dipped in a mixture of melted cheese and wine. This hearty dish laid the foundation for the emergence of fondue itself in its various variations, and also outlined the ceremony for its consumption. There is another version of the origin of the dish, which originates in peasant cuisine. Thrifty housewives collected old dried pieces of cheese and melted it in a cauldron, where they dipped bread and ate it.
Gradually, this dish began to appear on tables in aristocratic society; of course, it was prepared from the best varieties of wine and cheese, and was also eaten with the best and freshest bread.
The fondue dish quickly spread across kitchens all over the world and in each of them acquired its own special personality, thanks to experiments with its preparation.
Utensils for preparing fondue
Initially, to prepare this dish, they used exclusively heat-resistant, often cast-iron dishes, usually pots.
They were the best option for melting pieces of cheese both over the fire and in the oven. Today, fondue has gained such popularity and is so loved by gourmets that special dishes for its preparation are presented in the form of various modifications, and making a choice is not so easy. Fondue pots are made of cast iron, stainless steel, copper, and ceramics. Electrical appliances have become very popular. Their appearance itself is also quite diverse. They are like a cauldron on a special stand into which the sauce is poured. A fondue maker, thanks to a burner or candle, allows you to keep the dish warm. The device is also equipped with skewers for threading pieces of bread, vegetables or fruits. They may have separate cups placed around the fondue pot
However, if such utensils are not available, you can always use an ordinary saucepan or kettle. And in them you can prepare a dish that is in no way different in taste from what was created even in the most sophisticated fondue pot.
Special dishes for fondue
Melting is carried out in a special cauldron - caquelon. In our country it is known as a fondue maker and you can buy it in dishware or hardware stores.
It is difficult to replace such a device with something, since it must be constantly heated above the burner. Caquelon may have a cast iron or ceramic bowl. As a rule, for preparing a dish there are special fondue kits, which include the pot itself, a burner, special forks with elongated handles, and in some cases dry alcohol for the burner. You will also need a wooden spatula for stirring the cheese mass so that it does not burn and stick to the walls and bottom of the pot, and a special cheese knife to easily cut the cheese at the very beginning of cooking

Naturally, as many people as there are, so many opinions. There is no such dish that would appeal to all people. This also applies to fondue. Reviews associated with it vary significantly. The dish undoubtedly has an amazing, delicate taste, rich aroma, and an interesting history. However, it has one undeniable drawback, which excludes its constant presence on our table. This is its calorie content. But, as elsewhere, in order to safely consume your favorite dish, you can use some tricks.
Naturally, the calorie content of fondue depends on its components - mainly cheeses, since dry wine can be ignored. If desired, you can use less high-calorie cheeses, and instead of bread dipped in sauce, take vegetables.
In any case, if someone cares about keeping their figure slim, you can prepare fondue for your loved ones who prefer hearty dishes. They will definitely like it and they will undoubtedly appreciate your culinary talent.
Traditions associated with fondue
There are many interesting customs associated with this dish that originate in Switzerland.
Having spread throughout the world, they underwent some changes, since in each fondue-loving country, they were intertwined with their own customs, principles and had a shade of the mentality of a given nationality. When guests gathered at a common table, a fondue pot with a steaming, aromatic dish was placed on it. Each person present was given a special fork and plate. Guests pricked pieces of bread, vegetables or meat (depending on the type of dish prepared) onto forks, dipped them in the sauce, held them over the pot for a few moments so that excess drops would drain off, and the treat would cool slightly, and put the delicacy into their mouths. We tried not to touch the forks with our mouths, since they would be repeatedly dipped into the common dish, and the rules of hygiene, as well as good manners, are relevant everywhere and always.
If a guest dropped a piece of bread into the common sauce, he was subject to “punishment.” If it was a woman, she was obliged to kiss all the men sitting at the table. If a man, he bought a bottle of wine for everyone present. An unlucky eater can be forced to fulfill a pre-agreed wish. If someone dropped his bread a second time into the common sauce, he was obliged to hold a fondue reception in his house and invite everyone present there.
Therefore, when asked about fondue, what is it, you can definitely answer that it is not only an incredibly tasty and satisfying dish, but also a wonderful opportunity to spend a fun and interesting evening. A fascinating conversation will serve as a wonderful addition to dinner and will leave a lasting impression on everyone’s soul.
