History of the dish
Despite its name, French chicken is not considered the national dish of French cuisine. In France, the national dish is called Gratin, and it is based on pork or veal. Compound:
- chicken meat (fillet) – 1 kg;
- onions – 2-3 pcs.;
- potatoes – 700 g;

- salt, pepper mixture and other seasonings.
Preparation:
- Chicken meat should be thoroughly washed and dried. It needs to be cut into longitudinal portions, preferably thin.
- Then, using a kitchen hammer, lightly pound the chicken pieces.
- Grease a baking sheet evenly with sunflower or olive oil, and place pieces of meat on top (overlapping slightly).
- Chicken meat needs to be salted and seasoned with spices. It is best to use universal spices that are suitable for both meat and vegetable dishes.
- Potatoes need to be peeled and washed thoroughly. Cut the root vegetables into portions, preferably into circles, and place in the next layer.
- Onions need to be peeled and cut into rings or half rings. The onions can be pre-marinated for 30 minutes. Place the chopped onion on top of the potatoes. Remember, the more onions, the juicier the French chicken will be.
- Grate the hard cheese.
- The grated cheese is laid out in the next layer. You need to gently press it with your hands so that the layer is dense. The more cheese, the thicker the crust.
- If desired, you can top the dish with mayonnaise.
- Bake French chicken in the oven for at least 40 minutes at a temperature of 200°.
- The finished dish is cut into portions and served hot.
Mushroom meat with cheese and onions
Continuing the theme of variations, it is logical to mention a recipe for French meat with chicken and mushrooms. Obviously, you only need to add mushrooms to the main list of ingredients. The rest is just as simple and delicious!
You will need:
- Chicken fillet - ½ kg;
- Tomatoes - 2 pcs.;
- Champignons - 300 g;
- Hard cheese - 200 g;
- Spices, herbs.
Cooking time: 50 minutes.

French meat with tomatoes
As already mentioned, the classic French meat recipe always includes veal. Currently, housewives are experimenting, adding new ingredients, so this dish can be prepared from chicken. The peculiarity of this recipe is that you must add white wine to the sauce.
Traditionally, the dish is prepared with the addition of fresh tomatoes. The tomatoes are first doused with boiling water and the skins are removed. Cooking chicken in French is quite simple. Ingredients (for 4 servings): 2 chicken breasts, 1 egg, 4 sprigs of cilantro, 0.5 tsp. starch, 40 g tofu, 800 ml chicken broth, 2 tsp. sesame oil, 50 g tree mushrooms (can be replaced with oyster mushrooms), 50 g shiitake mushrooms (can be replaced with champignons), 1 tbsp. l. rice vinegar, 1 red chili pepper, salt to taste.
Instructions . Cut the chicken breast and peeled mushrooms into strips, the chili pepper into thin shavings, and the tofu into cubes. Pour the broth, oil and vinegar into a saucepan and bring to a boil. Then add chicken, mushrooms, starch and raw egg. Stirring, cook the mixture until the ingredients are ready, add salt to taste.
