In Russia, pasta is usually consumed as a side dish for main (meat, fish) dishes. Meanwhile, in other countries they are often one of the components of salads and snacks. Pasta salads are very tasty and filling; they can be served as a separate dish. This snack can be taken to work as a snack or on a picnic. In addition, salads are convenient because, unlike other identical dishes, they can be dressed in advance, which will not spoil their taste. Minestrone salad
We recommend preparing a salad that includes a large amount of fresh vegetables. To work we will need:
- 4 tbsp. olive oils;
- 250 g penne pasta;
- freshly ground pepper (black);
- 1.25 tbsp. fresh corn kernels;
- 1 piece each zucchini (young), carrots, onions;
- 2 cloves of garlic;
- coarse salt;
- 20 g green beans;
- 420 g cannellini beans;
- 500 g multi-colored tomatoes;
- 2 tbsp. l. balsamic vinegar.
Cooking technology
- For the salad, boil the pasta in the traditional way until al dente, drain and cool.
- Heat two large tablespoons of olive oil in a saucepan, fry the chopped garlic over low heat for 2 minutes, add the carrots cut into small cubes and fry for another 4 minutes, until soft.
- Add beans, cut into small pieces, zucchini and corn into small cubes. Fry, stir constantly for about 10-15 minutes, add salt and pepper, transfer to a bowl and let cool.
- Add the rest of the olive oil, canned beans, vinegar, pasta, and finely chopped tomatoes to the vegetables.
- Season with spices, mix and serve.

Warm pasta salad with chicken, celery and cucumber
The recipe is delicious, simple and proven.
Ingredients:
- Pasta – 200 gr.
- Chicken thigh - 1 piece
- Sweet pepper - 1 piece
- Cucumber - 1 piece
- Celery - 1 stalk
- Homemade mayonnaise - 2 teaspoons
- Yogurt - 1 tablespoon
- Olive oil – 50 ml
- Salt, pepper - to taste
- Garlic - 1 clove
- Parsley - a few sprigs
Preparation:
- Let the pasta cook.
- Place the chicken thigh in a bag and lightly beat it. Then add freshly ground black pepper, salt and about 1 teaspoon of olive oil to the bag. Knead all this well in the bag until it is soaked and put it on the grill pan to fry for about 3 minutes on each side.
- Meanwhile, washed and peeled vegetables: pepper (one quarter), cucumber, celery, cut into small cubes.
- Strain the pasta from the water. Place in a deep bowl, add 2 teaspoons of mayonnaise, 1 tablespoon of thick yogurt, mix, add chopped garlic, chopped vegetables, a little ground pepper, salt and finely chopped parsley. Mix.
- Place the cooked pasta on a plate and place the fried meat cut into strips on top.
- To prepare homemade mayonnaise we will need: mix 1 yolk with 1 teaspoon of mustard, add a couple of tablespoons of lemon juice, mix and pour in about 200 ml of olive oil in a thin stream.

How to cook
- Cut the pepper in half, remove the seeds, wrap it in foil greased with olive oil, and bake in the oven for about 30 minutes at 220 degrees.
- Boil the pasta in salted water until cooked (preferably al dente), cool, rinse under cold water.
- Prepare the dressing from olive oil, basil and salt, beat with a blender for about 20 seconds.
- Cut the baked peppers, sun-dried tomatoes into strips, and cut the mozzarella into cubes.
- Combine the above ingredients with tuna and pasta, season, mix well.
- Add arugula just before serving to keep it crispy.
The calorie content of this salad is 591 kcal per serving, the resulting ingredients yield 4.
Tip for the recipe
Al dente in Italian means “to the tooth” and indicates the state of the paste when it is ready, but at the same time quite hard and not overcooked. When cooking, for example, farfal, when biting into properly cooked pasta, the tooth should feel resistance. In order to achieve this result, it is necessary to strictly observe the cooking time indicated on the package, and, in addition, constantly taste the pasta; seconds count in this matter.
Salad with ham, vegetables and cheese
A very tasty and simple salad with affordable ingredients. Let's say right away that its calorie content is quite high - 841 kcal. Components:
- 300 g ham;
- 2 pcs. sweet peppers and tomatoes;
- 400 g pasta;
- 300 grams of canned corn;
- 200 g cheese;
- mayonnaise to taste.
For this pasta salad (you can clearly see it in the photo), spiral-shaped pasta or cones are most suitable. Boil them and let cool. We cut the tomatoes and peppers into cubes, the ham into thin slices, and grate the cheese on a coarse grater. We combine all the components together and season with mayonnaise.
Warm pasta salad
Such dishes are served not only cold, but also warm. To prepare the salad, you should take the following ingredients:
- 250 g cherry tomatoes;
- 400 g orecchiete or fusilli;
- bunch of basil;
- 4 cloves of garlic;
- 150 ml olive oil;
- 30 ml wine white vinegar.
The paste should be selected according to the criterion that it is easily saturated with garlic and vinegar. For this pasta salad recipe (you can see the dish in the photo), it is better to use fusilli or orecchiete.
First you should prepare the filling: coarsely chop the basil, chop the garlic, cut the tomatoes into halves. Place the tomatoes in a bowl, add garlic, olive oil and wine vinegar, and leave to marinate. In a large saucepan, boil water and cook the orecchiette for 8-10 minutes. The pasta should be thoroughly dried and immediately mixed with tomatoes, at the last moment add basil and serve the dish immediately. The secret to this salad is that it is mixed with the filling before the pasta has cooled. It is in this case that it will absorb all the aromas and juices of the fresh marinade.
