As a rule, we try to surprise our family and guests, so we prepare the best dishes for this wonderful holiday.

New Year's salads are perhaps the most important dishes on the table on this festive night. Therefore, every housewife tries, in addition to the traditional Olivier, to prepare a couple of salads for different tastes - meat, fish, vegetables, mushrooms. We select the best dishes, look for new items for the New Year and prepare them with special care. Usually on the holiday table you can count about a dozen different salads.

I’m starting to plan the New Year’s menu and today I want to offer you new simple and tasty salads so that you can please your family and friends with original dishes. The main secret of these dishes is affordable products that can be bought at an affordable price and speed of preparation. Convenient for the New Year's menu, and also delicious. Worth a try!

New Year's salad “Novelty” - very simple and tasty!

If you belong to the category of people who do not like to bother with extravagant dishes, especially on the eve of the New Year, I suggest preparing this light and at the same time complete salad.

Ingredients:

  • Lettuce leaves (arugula) - 60 gr.
  • Avocado - 1 pc.
  • Cucumber - 1 large
  • Red fish (lightly salted) - 100 gr.
  • Lime - juice of half
  • Sesame (seeds) - 1 tbsp. l.
  • Salt - to taste
  • Olive oil - 100 ml.
  • Sesame oil - 1-2 drops

Preparation:

1. First of all, fry the sesame seeds in a dry frying pan without adding oil until slightly brown. This will take a little time, just a minute. The seeds should turn yellow and begin to jump around in the pan. Remove from the stove and transfer to a plate.

2. Wash and dry the lettuce leaves. Set aside. First cut the washed and dried cucumber lengthwise, then into half circles.

3. Let's move on to preparing the sauce for the dressing. Cut the lime in half and squeeze the juice into a small bowl. Then add olive and sesame (if using) oil, salt to taste and 1/2 tbsp. l. toasted sesame seeds. Whisk until emulsified.

4. Now let's move on to the red fish. It must be cleared of bones and cut into cubes or slices.

Instead of lightly salted fish, you can use smoked fish.

Cut the avocado in half, remove the pit, cut into slices and carefully remove with a spoon. Place all prepared ingredients in a deep bowl. Add the remaining sesame seeds, season with sauce and stir. Bon appetit!

With pineapples and ham

Ingredients:

  • 300 – 350 g canned pineapple;
  • 1 tbsp. grains of canned corn;
  • 200 – 250 g pork/chicken ham
  • 4 pre-boiled eggs
  • several lettuce leaves;
  • 2/3 tbsp. salted olive mayonnaise.

Preparation:

  1. Cool and peel pre-boiled eggs, chop them into neat cubes. There is no need to separate eggs into yolks and whites before grinding.
  2. Place pineapples in a colander. When the syrup has drained, cut the fruit into miniature pieces.
  3. Remove marinade from canned corn. If desired, both canned products can be additionally rinsed with running water. Then the salad will not have a sweet note.
  4. Cut the ham into cubes. There is no need to chop, the meat should taste good in the salad.
  5. Lay out the future snack in layers. To make it more accurate, you can use a culinary ring.
  6. The lettuce leaf is laid out first. Corn is poured onto him. Next they are distributed: ham - eggs - pineapple.
  7. The layers are carefully compacted by hand and coated with salted mayonnaise to taste.

The main thing is to carefully remove the culinary ring so as not to disturb the integrity of the treat.

Recipe for New Year's salad in the shape of a pig

Did you know that in Asian culture it is customary to decorate the New Year's table according to the beast of the coming year? This tradition is also beginning to gain popularity here. In this regard, I would like to invite you to prepare a salad for the New Year’s table in the shape of a pig. It is very easy to prepare, and the products that we need are used by many in their daily diet.

Ingredients:

  • Ham - 250 gr.
  • Hard cheese - 200 gr.
  • Fresh cucumber - 2 pcs.
  • Tomato - 1 pc.
  • Beijing cabbage - 250-300 gr.
  • Corn (canned) - 200 gr.
  • Olives (pitted) - 100 gr.
  • Mayonnaise - 100 gr.

Preparation:

1. First cut the cucumber in half, then into strips and into cubes. Cut the Chinese cabbage into small strips. Cut pitted olives into slices. Transfer the chopped ingredients into a salad bowl. We also add corn here.

2. Cut two circles from the ham and set aside for now. We will use them to make decorations for our salad. Cut the remaining ham into cubes and place in a salad bowl. Add mayonnaise and mix well.

3. Grate the cheese on a coarse grater. From the set aside ham circles, cut out the snout, ears and tail. Now we put the salad on a plate, give it a shape, sprinkle with grated cheese, make a muzzle, make eyes from olive circles and decorate. It is advisable to prepare the salad before serving so that it does not lose its taste.

Salad for the New Year 2020 “Salmon on a fur coat”

This salad is a holiday version of the Herring under a Fur Coat dish. The delicate and harmonious taste of lightly salted salmon combined with traditional ingredients gives this simple salad a new taste.

  • Olive oil - 1 tbsp. l.
  • Dijon mustard (grain) - 1 tsp.
  • Balsamic vinegar - 1 tsp.
  • Juice of half a lemon (if there is a lot of acid, you can omit the lemon)
  • Salt, pepper, sugar - to taste
  • Cashew or pine nuts (roasted)

Preparation:

1. Before we start preparing the salad, we need to prepare the sauce. To do this, squeeze the peeled garlic through a garlic press. Add salt, pepper, sugar, freshly squeezed juice of half a lemon, balsamic vinegar, olive oil and Dijon mustard to the garlic. Mix everything well. Set the prepared sauce aside to let it steep.

2. Now let's move on to preparing the salad. Take one layer of dry-cured ham, put a piece of cheese on it and roll it into a roll. We do the same with the remaining plates of ham.

3. Let's move on to decorating the salad. Place washed and dried herbs on the bottom of a flat serving dish. Then place the cherry tomatoes cut in half. Next, cut the prepared rolls in half and place the tomatoes on top in any order. All that remains is to pour plenty of sauce over our salad and garnish with cashews and pine nuts. The finished dish can be served to the table.

Salad for the New Year's table Black Pearl

Products for salad:

  • Table chicken eggs - two;
  • Crab sticks - 200 gr.;
  • Any hard cheese - 200 gr.;
  • Separated prunes from pits - 200 g;
  • Chilled butter - 50 gr.;
  • Walnut pieces - 50 g;
  • Mayonnaise sauce - from 6 to 8 tbsp. spoon;
  • Greens - the amount depends on taste and desire.

How to cook:

Steam the prunes in warm water for 15 minutes and then dry with a napkin. We make cuts in each prune and stuff it with pieces of chopped walnuts.

At this time, the eggs have already cooked and cooled. We peel them and grate them on a coarse grater.

The cheese also passes through a grater, but it is better to chop the crab sticks finely.

For chilled butter, choose a medium grater.

Now we move on to laying the salad in layers. To do this, you need to have a shape - a ring. When served, it will look more impressive.

The bottom layer is a grated egg, then a layer of crab sticks, which we cover with mayonnaise sauce.

The next layer is grated cheese; place grated butter on this layer.

Now carefully lay out the prunes and walnut pieces over the entire round surface. Cover this with a layer of crab sticks and top with mayonnaise sauce. Place the remaining cheese and butter on top.

The final layer is grated egg, and you can decorate the salad with herbs and chopped walnuts.

Warm New Year's salad with beef

This juicy, tender and very tasty dish in a sweet and sour sauce with a slight spiciness will not leave anyone indifferent. Try it and see for yourself. Cook the vegetables in this dish until they are slightly crispy.

Ingredients:

  • Beef - 300 gr.
  • Bell pepper - 2 pcs.
  • Cucumber (large) - 1 pc.
  • Soy sauce - 30 ml.
  • Black pepper (ground) - to taste
  • Salt - 1 tsp. (without slide)
  • Garlic - 1-2 cloves
  • Vinegar
  • Vegetable oil
  • Sesame

Preparation:

1. Cut the beef into large strips and pour in soy sauce. Leave aside for 10-15 minutes so that the meat is soaked in the sauce.

2. While the meat is marinating, we will start cutting vegetables into large strips.

3. Pour vegetable oil into a heated frying pan and fry the meat along with soy sauce for about 15 minutes. Now add chopped garlic to the meat.

4. Fry for about another minute and add the chopped vegetables. There is no need to fry vegetables and meat for a long time (only 5 minutes) so that they retain their crispy appearance. Lightly add salt, pepper and mix. Remove the pan from the stove and transfer the salad to a deep bowl.

5. Add a little vinegar and stir.

Add vinegar to the salad immediately before serving, otherwise the meat will become tough.

  • Apple - 1 pc.
  • Walnuts – 50 g
  • Hard cheese - 100 g
  • Boiled egg - 5 pcs.
  • Pickled (or salted) cucumbers - 3 pcs.
  • Mayonnaise
  • Carrots for decoration

Preparing the recipe

Prepare all the ingredients in advance, because the salad idea will be implemented in layers. To do this: peel the eggs, grate the beets on a coarse grater, chop the nuts, cut the herring into small pieces, grate the cheese.

To assemble the shape of the Snowman's head, take a deep round plate. Cover the plate with cling film.

In another bowl, place half of the grated cheese and two grated eggs (yolk and white). Mix the ingredients with two tablespoons of mayonnaise. Place the resulting mixture on a plate with cling film. Level the mixture so that it lies on the surface of the plate with a recess.

Now we need to turn the salad over. To do this, cover it with the flat dish in which you will serve it and quickly turn it over. Remove the cling film.

Snowman head decoration

The result is a convex part with all the ingredients assembled into the shape of a head. The idea of ​​a salad in the shape of a Snowman's head continues to be implemented.

Grate the whites of two eggs and place on top to cover 2/3 of the surface. Use a spoon to smooth out the grated egg whites to make the Snowman's face.

Lightly salt the grated beets, add a little more mayonnaise and stir. Place on 1/3 of the remaining surface to create a Snowman hat.

Ingredients:

2. Add chopped parsley, finely grated garlic, salt and pepper to taste to the tomatoes. Mix everything. Leave the tomatoes like this for 10-15 minutes.

3. Meanwhile, cut the crab sticks into small cubes and grate the cheese on a fine grater.

4. The tomatoes have been marinated and released their juice. Place the tomatoes in a fine sieve to remove excess liquid.

5. Now we are all ready to start forming the salad. Place a pastry ring with a diameter of 20 cm on the dish. Grease the bottom of the dish with a small layer of mayonnaise and lay out the tomatoes. We cover them with mayonnaise, then lay out the crab sticks and cover them with mayonnaise again. Next, lay out the canned corn and coat with mayonnaise. Place the next layer of grated cheese and grease with mayonnaise.

  • Lettuce - 200 gr.
  • Sea cocktail (in oil) – 300 gr.
  • Cherry tomatoes - 300 gr.
  • Fetax cheese - 200 gr.
  • Pine nuts - 50 gr.

For refueling:

  • Sea cocktail oil - 3 tbsp. l.
  • Mustard - 1 tsp.
  • Juice of 1/2 lime or lemon
  • Garlic - 1 clove
  • Sugar - 1 tsp.
  • Oregano - 1 tsp.
  • Salt, pepper - to taste

Preparation:

1. First, let's prepare the sauce. Pour 3 tbsp into a small bowl. l. vegetable oil, squeeze out the juice of half a lime, grate a clove of garlic on a fine grater, add 1 tsp. sugar, salt, pepper to taste, 1 tsp. oregano, 1 tsp. mustard and mix everything well. Let's set it aside for now.

2. Let’s start assembling the dish itself. For this it is better to use a large dish. Coarsely chop the lettuce leaves and place on a plate. Cut the cherry tomatoes in half, remove the stems and place them in a second layer on top of the salad. Place the third layer of Fetax cheese, cut into cubes.

If you don't have Fetax cheese, you can replace it with regular cheese or small Mozzarella balls, cut in half.

3. Next, lay out the sea cocktail, from which you must first drain the oil. Sprinkle pine nuts on top and pour plenty of sauce over it. The salad is ready, it can be served and treated to guests.

A simple recipe for an unusual salad “Snowdrifts” with chicken and eggs

I would like to bring to your attention another original recipe made from simple ingredients. it turns out very tasty and tender. Your guests will be surprised to see such beauty on the festive table. Be sure to try it.

Ingredients:

  • Boiled chicken meat - 300 g
  • Boiled eggs - 5 pcs
  • Garlic - 1 clove
  • Cheese - 100 gr
  • Onion - 1 pc.
  • Salt, ground pepper - to taste
  • Vinegar 9% - 3 teaspoons (10 ml)
  • Sugar - 3 teaspoons
  • Filtered water – 100 ml
  • Mayonnaise - to taste

Preparation:

1. Cut the onion into thin quarter rings. Place it in a bowl and cover with sugar. Mix with your hands, kneading thoroughly to release the juice. Then add vinegar to the onion, pour in water and leave it to marinate for 15 minutes.

2. Cut peeled boiled eggs in half and remove the yolks from the whites. Set aside the whites for now. Place the yolks in a separate bowl, add salt, ground pepper, and squeeze the garlic through a press. Add also 1.5 teaspoons of mayonnaise and mash with a fork into a homogeneous creamy mass.

3. Using a spoon, spoon the resulting mass into the egg white halves and smooth out. You will get eggs stuffed with their own yolks.

4. Cut the boiled chicken meat into small pieces. You can use breast fillet, but I prefer leg meat. I boiled the thigh and leg, removed the meat from the bones and peeled off the skin.

5. Now it's time to form the salad. Take a plate and grease its bottom with mayonnaise. Then place the meat in the first layer and cover it with mayonnaise.

6. Then take the pickled onion, drain all the liquid and place it in the next layer. Next, spread the stuffed eggs over the entire surface. Using a brush, brush them with mayonnaise.

7. Sprinkle all this generously with finely grated cheese. Now our “Snowdrifts” salad is ready and can be placed on the table with other dishes.

“New Year’s” salad with cod liver (with homemade mayonnaise)

I would like to offer you another recipe for a very tasty puff salad, the main ingredient of which is cod liver. In combination with the rest of the ingredients and homemade mayonnaise, cod liver will surprise you with new flavor shades that are unlikely to leave any of your family or friends indifferent.

Ingredients for 4 servings:

  • Cod liver - 150 gr.
  • Hard cheese (any type) - 100 gr.
  • Fresh tomatoes - 150 gr.
  • Chicken/quail eggs - 3 pcs./9 pcs.
  • Salted or pickled cucumbers - 150 gr.
  • Onions - 100 gr.

For homemade mayonnaise:

  • Vegetable or olive oil - 60-100 gr.
  • Mustard - 0.5 tsp.
  • Fresh egg - 1 pc.
  • Lemon juice - 1 tbsp. l.
  • Salt - 1 small pinch

Preparation:

1. First, boil 3 eggs for the salad. Save one fresh egg for making homemade mayonnaise. Place chicken eggs in a fireproof bowl with cold water and place on fire. Cook for 10 minutes, then transfer to cold water.

2. Grate the hard cheese as finely as possible (preferably on the fine side of a grater), mash the cod liver thoroughly with a fork until smooth.

3. Once the eggs have cooled, remove the shells. Cut boiled eggs, salted (or pickled) cucumbers, peeled onions and tomatoes into small cubes. If desired, the tomatoes can be peeled before slicing if, for example, you find it too tough. You just need to put the tomatoes in boiling water for a couple of minutes and then remove them with a knife.

4. Next you need to prepare homemade mayonnaise. Break a fresh egg into a bowl or a special beating glass, add vegetable oil, mustard (can be replaced with dry mustard or mustard seeds), lemon juice and a little salt.

5. Beat the ingredients for mayonnaise thoroughly using an immersion blender. You should end up with a thick sauce. If the mayonnaise seems runny to you, you can correct this by adding more vegetable oil and whisking the sauce thoroughly again.

6. Next, we begin assembling the salad. Divide all ingredients into 4 parts. Then prepare 4 transparent bowls. First place the cod liver on the bottom of the bowls, sprinkle onion cubes on top. Next, add a layer of pickled cucumber cubes. Place chicken eggs in the next layer. Place fresh tomato cubes on the egg layer.

7. Pour homemade mayonnaise over the puff salad. Sprinkle the mayonnaise layer generously with grated cheese. If you wish, you can decorate the finished salad with cod liver with olives and herbs. The New Year's salad is ready! Bon appetit!

With smoked chicken and mushrooms

You will need:

  • 350 g boneless smoked chicken;
  • the same amount of fresh mushrooms;
  • bulb;
  • 4 hard-boiled eggs;
  • a couple of strong cucumbers;
  • table greens;
  • spices suitable for chicken, salt;
  • fresh cranberries.

Preparation:

  1. The first layer of the appetizer will be cubes of smoked chicken. You can take any other bird instead. The meat layer does not need to be salted, but it must be coated with sauce.
  2. Next, slices of fresh cucumbers with sauce and salt are distributed.
  3. For the third layer, you must first boil any wild mushrooms, and then fry them until tender along with pieces of onion. Salt and add spices.
  4. The frying is distributed over the cucumber mass and a mayonnaise grid is also drawn on it.

Ingredients:

  • Egg - 1 pc.
  • Chicken fillet - 200 gr.
  • Potatoes - 2 pcs. (large)
  • Carrots - 1 pc. (small)
  • Tomato - 2 small or 1 medium
  • Cheese - 40 gr.
  • Salad onions - 0.5 onions
  • Salt - to taste
  • Sugar - to taste
  • Crackers - for serving
  • Parsley - sprig
  • Mayonnaise

Preparation:

1. Let's make sure that we have everything we need. Immediately set the chicken fillet to cook. Add some salt to the water and cook for half an hour from the moment it boils. The broth can be used to prepare first or second courses. We also set the potatoes and carrots to cook; they take the longest to cook. The egg cooks quickly, so you can poach it while you chop the ingredients.

2. Cut the peeled carrots and potatoes into small cubes. Cut the cheese into thin short strips. Take strong tomatoes for the salad and cut them into cubes.

3. Chop the onion finely. But the chicken fillet can be cut a little larger. Eggs can be chopped by hand or using an egg slicer. All salad components are prepared.

4. Place all the ingredients for the salad in a bowl convenient for mixing. Add salt and pepper to taste and season with mayonnaise. Mix all the ingredients.

5. As a matter of fact, the salad is already ready. You can serve it in a festive salad bowl or place it on a dish using a garnish ring. If you choose the second option, first place the lettuce tightly in the ring, then carefully remove it.

6. Place some crispy croutons on top of the salad, garnish with tomatoes and parsley leaves. This salad should be prepared immediately before serving so that the croutons do not get soggy. New Year's salad is ready. Simple, fast and delicious!

Salad “New Year's Olivier”

And now we want to introduce you to the recipe for the legendary salad, which is considered a mandatory New Year’s attribute, like a Christmas tree or gifts from Santa Claus. This treat will captivate everyone and give you an amazing fairy-tale mood on a festive night.

Ingredients:

  • boiled beef – 300 g;
  • boiled potatoes – 3 pcs.;
  • boiled carrots – 1 pc.;
  • eggs – 3 pcs.;
  • pickled cucumbers – 2 pcs.;
  • canned peas - 1 can;
  • salt, pepper, mayonnaise - to your taste.

Preparation:

  • Boil the washed meat until fully cooked.
  • We do the same with other products. Cool, peel, cut into equal cubes.

  • Transfer the components into a deep container.

  • We also send mayonnaise here, mix everything, don’t forget to sprinkle with pepper and salt.

  • We serve delicious Olivier to the table in a new way.

Advice!

Instead of pickles, you can use fresh vegetables, and pork, chicken or sausage can perfectly replace beef.

Juicy salad with squid and Chinese cabbage

This simple, juicy and tasty recipe for a holiday salad with squid and Chinese cabbage will definitely appeal to seafood lovers. The most important part of this recipe is not to overcook the squid.

Ingredients:

  • Squid – 500 gr.
  • Beijing cabbage - 1/2
  • Corn (canned) - 1 can
  • Egg - 2 pcs.
  • Mayonnaise - to taste
  • Dry garlic - 1/4 tsp.
  • Salt - to taste

Preparation:

1. We will start preparing the salad by boiling chicken eggs and squid separately. Place one cleaned squid carcass in boiling salted water and cook small squids for 10 seconds from the moment of boiling, and large ones for 15 seconds. Then take them out and cool.

2. While the squid is cooling, cut the Chinese cabbage into cubes. Cut the boiled and peeled eggs into smaller cubes. Cut the squid into strips. If you have small squids, you can cut them into rings.

3. Now all we have to do is mix Chinese cabbage, eggs, squid and corn. Salt and pepper to taste, add dry garlic and season the salad with mayonnaise.

If you prefer fresh garlic, then half a clove will be enough for this serving to add a subtle aroma. The salad can also be supplemented with boiled shrimp and octopus.

“Royally” with seafood and caviar

Ingredients:

  • 1 full glass of small shrimp;
  • 2 – 3 boiled eggs;
  • 200 – 250 g squid;
  • 200 – 250 g crab meat;
  • 2/3 tbsp. grated semi-hard/hard cheese;
  • 1 – 2 teeth. fresh garlic;
  • 5 dessert spoons of red caviar;
  • classic mayonnaise.

Preparation:

  1. Place the squid carcass into actively bubbling boiling water. Cook for 3 – 4 minutes over medium heat. To make the product tastier, you can add bay leaves, peppercorns or other spices to the cooking water.
  2. Chop the boiled cooled seafood into thin long strips. If there is any film left on them, it must be removed.
  3. Cook shrimp in boiling water for 3 – 4 minutes. You can also add spices to these seafood, let the shrimp cool and clean them thoroughly.
  4. Mix seafood. Add straws of crab meat or regular crab sticks to them.
  5. Mash the garlic and add to the salad. Send small, neat cubes of boiled eggs, red caviar, and grated cheese there.

Season the appetizer with mayonnaise and you can immediately take a sample from it.

Salad without mayonnaise “Tender Mandarin”

New Year's salad doesn't have to be heavy and very filling. I present to your attention a recipe for a light dish without mayonnaise.

Ingredients:

  • Chicken fillet 1 piece (about 200 g)
  • Lettuce leaves approximately 100 g.
  • Mandarin 3 pcs.
  • Salad onion 1/2 not large
  • Salt, pepper, oregano - for chicken

Refueling:

  • Honey 2 tbsp. l.
  • Soy sauce 3 tbsp.
  • Ready mustard beans 1 tsp.
  • Olive oil 5 tbsp. l.
  • Salt and pepper to taste

Method of preparation: Rub chicken fillet with salt and pepper, add oregano. Place the meat on greased parchment paper, wrap and fry in a hot frying pan.

Fry the chicken on both sides until done. Meat baked in this way turns out very juicy and tender. Cut the onion into half rings. Peel the tangerine and cut into rings without dividing into slices.

Cut the finished chicken fillet into thin pieces.

We collect the salad. Place lettuce leaves on a plate and meat slices on top. Divide the tangerine rings into pieces convenient for you and add to the salad. Add the onion last.

Prepare the dressing: In a separate bowl, mix soy sauce, mustard, vegetable oil and honey. Salt the mixture to taste. If desired, you can add a few drops of lemon juice.

The “Tender Mandarin” salad is ready.
