COOKING PROCESS:

☑ Peel the potatoes and cut them into small cubes. Fry with chopped garlic in a frying pan for literally 3-4 minutes.

Who doesn't like potato pancakes? Draniki are a tasty, satisfying and very appetizing dish of Belarusian cuisine. Let's look at the classic recipe for making potato and zucchini pancakes. A dish prepared according to this recipe turns out tasty, satisfying and aromatic.
To prepare potato pancakes, you need to use older potatoes, since young potatoes have very little starch, and during frying they can burn or fall apart when turned over. It is desirable that the zucchini be young, without large seeds.
Ingredients
- zucchini – 1 small, or half a large one;
- potatoes – 1 kg;
- onion – 1 head;
- Wheat flour;
- egg;
- pepper, salt, seasonings;
- olive or vegetable oil for frying.
Preparation:
We prepare the vegetables, peel and peel them. If the zucchini is young, there is no need to peel it.
Grate the zucchini and place in a colander to drain off excess liquid. If there is a lot of juice, you can squeeze it out manually.

How to fry zucchini in a frying pan
For frying, only the youngest zucchini, no more than 6-8 centimeters in diameter, are taken. At this age, the zucchini has no rough seeds and the peel is still very soft and tender that there is no need to remove it.
INGREDIENTS:
- 3-4 young zucchini.
- Garlic quantity as desired.
- Flour - glass.
- Mayonnaise.
- A bunch of dill.
- Vegetable oil.
- Salt to taste.
COOKING PROCESS:
☑ Cut young zucchini into half-centimeter circles. There is no point in cutting them thinner as they can simply burn. Thick ones won't cook through.
☑ And so we cut the zucchini, put it in one large bowl and salt it well and pepper it a little. Mix the heels so that each piece gets salt. Leave the zucchini in the salt for a couple of minutes.
☑ Pour oil into a frying pan and put it on fire.
☑ Pour the flour onto a plate.
☑ When the oil is hot, take a circle of zucchini, roll it in flour on both sides and place it in a frying pan. And we do this until there is no room left in the pan.
☑ Fry the zucchini on both sides until characteristic blush and remove to a separate plate.

Fresh zucchini salad with marinade
To prepare this salad, you don’t need to fry anything; the zucchini is added fresh. The marinade completely changes their taste, and if you don’t know that there are zucchini in the salad, no one will guess that the salad is made from them.
You will need: 3 medium young zucchini, pickles (adjust the quantity to taste), 1-2 eggs, lemon juice to taste, 2 tbsp. spoons of mayonnaise, 1 tbsp. spoon of finely chopped dill and parsley.
For the marinade: 1 glass of water, 2 tbsp. spoons of apple cider vinegar, salt and bay leaf, a few peas of allspice.
Wash the zucchini well, do not cut off the skin. Cut into medium sized cubes. Bring water to a boil in a saucepan, pour in vinegar, salt to taste, add bay leaf and pepper. Add the zucchini and cook over low heat for 10 minutes. Using a slotted spoon, remove the zucchini from the marinade and let cool completely.
While the zucchini is cooling, hard-boil the eggs and chop them finely. Mix with herbs, cooled zucchini, add pickled cucumbers cut into small cubes. Add salt to taste, pour in lemon juice, season with mayonnaise and mix everything. Serve the salad with lemon slices and tomato wedges.

Place the rice on the stove and after the water boils, turn the heat down by half. Cook for exactly 10 minutes and remove the pan from heat. The rice is half ready. Now you can proceed to the rest of the products.
☑ Chop the onions and carrots and fry them in a deep frying pan.
☑ Cut the eggplants and zucchini into cubes, add a little salt and leave to salt for a while.
☑ Also cut the remaining ingredients into cubes. Just finely chop the greens.
☑ After frying the onion, add the zucchini and fry it.
