How to make lingonberry pie from shortcrust pastry with apples and kefir

Prepare the ingredients for making baking dough from apples and berries:

First, fill the frozen lingonberries with warm water and leave for 30 minutes. In the meantime, let's start preparing the dough for the apple-lingonberry pie: you will need to beat 2 eggs with 1 cup of sugar until a whitish foam forms.

Add 100 g of frozen butter to the egg-sugar mixture, after grating it on a fine grater, and then pour in kefir.

Add 1 cup of flour to the resulting mass, pre-mixed with 10 g of baking powder and 100 g of starch.

Set the resulting dough aside and begin preparing the fruit and berry filling.

Line the baking dish with parchment, which must be generously greased with butter (you can lightly sprinkle it with flour).

Meanwhile, wash the apples, peel them, remove the membranes and seeds and cut them into thin oblong slices, no more than 1 cm thick.

Pour the dough into a baking dish and place in the oven preheated to 200 degrees for 15 minutes.

When the dough is slightly baked, remove it from the oven and place the chopped apples on top of it. You can sprinkle with sugar (1 tablespoon) if the apples are sour.

Let's start preparing the filling: take 300 ml of sour cream and beat it with 150 g of flour mixed with vanilla. The finished filling must be divided into two equal parts (approximately 200 g each). Pour one part over the apples.

Drain the water from the lingonberries (they should already be defrosted) and knead with 100 g of sugar. Pour the resulting berry mixture over the apple layer of the pie.

Pour the second part of the filling over the lingonberry-sugar mixture, stretching it as much as possible over the entire surface.

Place the pie in the hot oven for another 25 minutes.

You can spread the lingonberry-sugar mixture on top (if there is any left).

  1. Cut the butter into several pieces and soften.
  2. Mix the eggs with granulated sugar, then gradually add the flour. Knead the dough thoroughly, breaking up any lumps.
  3. Grease the baking dish with oil, pour the prepared dough into it, if necessary, level it with a spatula.
  4. Wash the berries, let the water drain, crush with sugar. We wait about 10 minutes until the berries release their juice, drain the juice, and pour the filling in an even layer onto the dough.
  5. Place the pie in an oven preheated to 200 degrees for 35-50 minutes. Baking time depends on the amount of dough prepared and the height of the pan.
  6. Remove the finished pie from the oven, let it cool, and remove from the mold. If desired, sprinkle with powdered sugar and lemon zest before serving.

Tips for making shortbread pie with lingonberries and apples according to the recipe:

  1. If you use fresh lingonberries, then you should not fill them with warm water.
  2. You can take any variety of apples - soft and juicy ones are ideal (Simirenko, Golden, Idared varieties).
  3. If there are not enough lingonberries, then you can additionally use any berries; red currants, raspberries, strawberries, blueberries, and blueberries will do.
  4. Kefir plays an important role in baking - thanks to it, the finished dough has a delicate taste and is not compressed in consistency. It is better to take full-fat kefir (from 3.2%).
  5. Butter can be replaced with margarine or a vegetable-milk mixture (spread).
  6. When baking the whole cake, it is recommended to switch the oven to the top part (so that the bottom of the cake does not burn, since it has already been baked for 15 minutes).
  7. Apples can be grated on a coarse grater.

Pie with lingonberries and apples, the recipe for which was described above, will appeal to both adults and children!

It’s strange, you must admit, that in a country whose nature is so rich in all sorts of edible varieties, dishes such as pizza or hamburger are in demand!

Well, of course, there is no arguing about tastes, but just imagine a fragrant, crumbly pie, from the pieces of which thickened drops of lingonberry juice flow down. And the aroma of stewed apples?

Introduced? Then let's get to work!

Pies with apples and lingonberries - general cooking principles

Lingonberries for pies can be used either frozen or fresh. Fresh berries are carefully sorted, selecting spoiled ones, washed and dried from moisture, spread in a thin layer on a linen or paper towel. Frozen berries do not thaw in most cases.

Considering the sour taste of lingonberries, it is better to take sweet varieties of apples so as not to add excess sugar to the filling. The fruits are peeled, cut into slices, cubes or grated.

The fruit filling is flavored with cinnamon or vanilla. You can add cream cheese to it or fill it with a specially prepared pudding filling based on apple juice. Very often, starch is added to keep the abundant juice from berries and apples.

Pies with apples and lingonberries are baked mainly from shortbread or yeast dough. For faster baking, they use store-bought puff pastries, and for less troublesome baking, use dry bulk baked goods, which are prepared, without exaggeration, in minutes and require only kneading and rolling.

Place the cake pans on a wire rack set on the middle level. The oven is preheated to the desired temperature. If pies are baked in an electric oven, the temperature is raised to 200 degrees, while in a gas oven the products are baked at 180 degrees.

Pie with apples and lingonberries - cooking tricks and useful tips

In order for the baked goods to always turn out well, it is recommended to follow a certain rule when kneading the dough - all its components, especially the liquid part and eggs, must be at the same temperature.

Before kneading the yeast dough, the products must be placed on the table in advance so that they warm up well and evenly. Shortbread dough, on the contrary, loves the cold. The oil added to it is often frozen by placing it in the freezer in advance.

To ensure that the top of the dough, which directly touches the filling, does not remain raw (glutinous) after baking, it is sprinkled with a thin layer of breadcrumbs or semolina and only after that the fruit and berry filling is laid out.

Step 1: Prepare the dough.

Before starting cooking, heat the water so that it is warm, and melt the butter in a saucepan over low heat, stirring the ingredient with a whisk all the time. When these components are prepared, you can proceed to the main stage of preparing the dough. First, dilute the yeast in warm water and brew it for 10 minutes
.
As soon as the ingredient is suitable, add wheat flour, sifted through a sieve. Pour warm melted butter there, break the egg, sugar, milk and salt. Knead the dough thoroughly, first with a whisk or spoon, and then with clean, dry hands, which can also be sprinkled with flour for convenience. This process usually takes 10-15 minutes
.
Then leave the dough in the bowl, cover it with a clean kitchen towel, perhaps slightly damp, and set it aside in a warm, dry place for 1 hour
.

Step 2: Prepare for the boss.

When the dough is about ready, and there are only 10-15 minutes left, you can start preparing the filling.
Rinse the apples thoroughly under warm running water, then remove the skins from them with a special knife. Cut each fruit into halves and remove the core and seeds. Cut the peeled fruits into small cubes or thin slices, in general, in any way convenient for you. Place the lingonberries in a colander and rinse well, removing small twigs and leaves. Then shake to remove excess moisture and pour the berries into a deep bowl. Add apple pieces there. Mix all the ingredients together, add powdered sugar and starch. Mix everything thoroughly so that the bulk ingredients are evenly distributed.

Step 3: Form a pie with lingonberries and apples.

Prepare the countertop by dusting it with flour. Roll out the finished dough, cutting off 150-200 grams
for decoration. Place the dough pancake in a baking dish, not forgetting to shape the edges. Place the apple-lingonberry filling and lightly smooth it out with a tablespoon. From a cut piece of dough, make a mesh over the pie or any other decorations of your choice.

Step 4: Bake a pie with lingonberries and apples.

Preheat the oven to 150-160 degrees
Celsius.
Once it reaches the desired temperature, place the cake inside and bake for 25-30 minutes
.
Important:
adjust the cooking temperature and time depending on your oven. Remove the finished pie, sprinkle with powdered sugar and leave to cool to room temperature.

Step 5: Serve the pie with lingonberries and apples.

Serve the pie with lingonberries and apples as soon as it reaches room temperature, just cut it into portions and place on saucers.
Brew aromatic hot tea or choose any other drink that suits your taste. In any case, you will be captivated by the wonderful taste and aroma of the finished pie, and the interesting combination of fresh apples and lingonberries. Bon appetit! To taste, you can vary the ratio of apples and lingonberries in the filling, depending on what you, your guests and your family like best.

In winter, when it is very difficult to get fresh berries, you can replace them with fresh frozen ones.

You can also use regular sugar, as well as brown sugar, to sprinkle the finished pie; it will also give the dish a very light caramel aroma.

Of course, lingonberries can be replaced with cranberries, but keep in mind that they are more acidic and therefore it may be worth adding more powdered sugar and using only sweet varieties of apples.

Thinking about something delicious to cook, I thought: “Why not try making an upside-down pie with apples and lingonberries!” And then inspiration struck me. I wanted the pie to be not only tasty, but also beautiful.

I decided to decorate with apple rings! After a little thought, the recipe for this pie was born. While cooking, a wonderful aroma of fresh baked goods reigned in the kitchen, which created coziness throughout the apartment!

Layer pie with lingonberries in the oven

It is very easy to prepare a layer cake with juicy lingonberries only because such dough is absolutely easy to purchase in any store. You should choose puff-yeast dough so that it is fluffy. Essentially, this pie is a crispy shell with a juicy and healthy filling.

You will need:

  • Ice cream dough – 0.5 kg. (of course you can use your own homemade dough).
  • Lingonberries - 350-400 g. In this recipe, it is advisable to use fresh ones, but you can also add thawed ones or lingonberry jam jelly).
  • Sugar - a few tbsp. sand
  • Egg for greasing baked goods to give them a “blush”

Cooking:

  • The dough should be defrosted in advance; it should be soft and elastic.
  • A baking dish is only needed with high sides; only such dishes will not allow the juice of the berries to leak out and make the pie “unpresentable.”
  • Divide the entire dough into two parts of 250 g each (these will be the top and bottom layers).
  • The mold must be greased with any fat so that the dough does not stick.
  • Carefully place the rolled out dough on the bottom layer. The layer should not be very thin; the edges of the dough should completely “flow around the sides” and rise up.
  • Place the washed and dried berries on top of the dough in an even layer, sprinkle the berries with sugar. You can also add your favorite confectionery spices: zest, cinnamon, vanillin or nutmeg (all to taste).
  • Roll out the top layer of dough and carefully cover the berries with it. The edges of the dough should be brought together and folded inward, so that the cake is completely and effectively “sealed.”
  • Brush the pastry with egg and place the pie in the oven. There the temperature should be no more than 170-180 degrees.
  • This pie bakes very quickly and 25-30 minutes will be enough. Keep an eye on the browning; as soon as the pie begins to darken and turn brown, turn off the temperature or lower it.

You should not eat or cut a hot pie; it should stand for about 20-25 minutes so that the berry juice becomes thicker as the sugar cools and the pie does not fall apart or crumble. The finished, cooled pie can also be decorated with powdered sugar (it will melt when hot).

The combination of sweet apples and sour berries in the filling is one of the most harmonious. Therefore, pie with lingonberries and apples can be classified as the most exquisite desserts. There are different ways to prepare it; here are the most popular recipes.

You can bake apple pie with lingonberries using different types of dough. It can be prepared with yeast or kefir; pies made from puff pastry or shortcrust pastry have excellent taste.

For this baking, you should take sweet varieties of apples, then you won’t need to add a lot of sugar to the filling. But you can take fresh or freshly frozen lingonberries. Even dried berries will do.

Fresh berries must be sorted, washed and dried, scattering them on paper towels. Freshly frozen lingonberries do not require additional preparation; they do not even need to be defrosted; they will thaw during the baking process. If you have dried lingonberries at your disposal, then you need to pour boiling water over them for a few minutes and then rinse them with cold water.

The apple-lingonberry filling is aromatic on its own, but, if desired, you can use aromatic additives - vanillin or ground cinnamon. It is recommended to additionally add a little starch to the filling; this component “binds” the released juice. Therefore, the bottom crust of the pie will be well baked and will not be wet.

Open pie with lingonberries

This recipe invites you to bake a pie with a delicious sour cream filling. It is this that will prevent the berries from releasing juice and will add tenderness to the baked goods. The basis of such an “open” pie is shortbread dough.

You will need:

  • Spread (vegetable-cream mixture) – 100 g (you can also use butter of any fat content or margarine, according to your preference).
  • Sugar – 100-150 g (adjust the sweetness of the pie to your taste, add more or less sugar).
  • Eggs – 2 pcs.
  • Flour - 340-350 g (one full glass and another third), look at the consistency of the dough.
  • A small package of baking powder (it is not recommended to replace baking soda).
  • Sour cream (preferably fat, at least 20%) – 200g. and sugar to taste in sour cream (you can do without it if you don’t like sweets or are on a diet).
  • Lingonberries – 1 cup fresh berries

Cooking:

  • Beat the eggs thoroughly with a little sugar
  • Stir in gelatin and add butter and flour in small portions, kneading the dough. When it becomes “steep”, knead the dough with your hands.
  • While the dough is “resting,” sort out the lingonberries, wash them and dry them.
  • The dough should be rolled out with a rolling pin and carefully placed in a mold generously greased. Raise the dough to the height of the sides of the pan.
  • Pour in the berries and evenly distribute the lingonberries in an even layer over the dough.
  • Prepare a cream filling from whipped sour cream and sugar. It is advisable to add a couple of tablespoons of corn or rice flour (can be replaced with semolina) into the sour cream mixture; this will allow the cream to become denser and not “flow”.
  • Bake the “open” pie for 40 minutes at a temperature of no more than 170-180 degrees, check the baking readiness and cut only the cooled pie.

Apple pie with lingonberries made from yeast dough

A pie baked from... will be soft, fluffy and very tasty. It is better to make an open version, as the combination of apple slices and bright red berries looks very beautiful.

For baking you need:

  • 0.5-0.6 kg flour;
  • 2 sachets (8 g each) active dry yeast in granules;
  • 250 gr. Sahara;
  • 2 eggs;
  • 75 gr. butter;
  • 300 ml milk;
  • 800 gr. apples;
  • 100 gr. lingonberries;
  • 1 teaspoon ground cinnamon;
  • 100 gr. peeled walnuts.

Heat 150 ml of milk slightly, add a tablespoon of sugar and yeast, stir well until the yeast is completely dissolved. We set the dishes with the solution aside and “forget” about it for 10 minutes.

Pour the rest of the milk into a deep bowl for kneading the dough, add melted butter and 1 egg, lightly beaten with a pinch of salt and 2 tablespoons of sugar. Pour the risen yeast into this mixture. We begin to gradually add flour, actively kneading the mass. When the dough becomes thick enough, put it on a board and, adding flour little by little, knead until elastic. Place in a deep bowl, cover with a towel and place in a warm place for about an hour.

Cut the apples into pieces of arbitrary shape. Place the fruit in a saucepan, add a little water and simmer until soft. Cool, mix with sugar and berries (a few berries can be left for decoration).

Separate a piece of the finished dough to decorate the top of the pie, and roll out most of it into a round layer that needs to be transferred to a baking sheet.

Place the filling in the center and turn the edges up, covering the filling around the edges. Make flagella from the remaining dough or cut out various figures and place them on the surface of the pie. Let the product stand for about 10 minutes. Then brush the top part (decor, sides) with beaten egg. The oven will be at 170 degrees for about an hour. Sprinkle the cooled pie with sugar and decorate with the reserved berries.

Yeast pie with lingonberries

To prepare this pie, you can use both homemade and store-bought frozen yeast dough, which will simplify your cooking process.

You will need:

  • Milk (any fat content) – 220-250 ml.
  • Flour - 0.5 kg (plus approximately 80-100 grams may be required for sprinkling).
  • Dry yeast – 2 tbsp. (you can also replace with fresh ones in appropriate proportions).
  • Sugar 1-2 tbsp. (for yeast fermentation) and a small amount of sugar for sprinkling fresh berries (by eye).

To make the dough golden brown, you can brush it with beaten egg before putting it in the oven. Also, instead of fresh lingonberries, you can always use lingonberry jam jelly, soaked lingonberries or dried ones.

Cooking:

  • The yeast should be covered with sugar, pour a glass of warm milk and let it stand for 10-15 minutes so that it begins to ferment.
  • After this, add a few tablespoons to the mixture. flour, mix everything thoroughly and let the dough stand for an hour and a half in a warm place. This is necessary to ensure that the baked goods are fluffy.
  • After time has passed, you can add more sugar to the dough (if you like sweets) and, stirring in the rest of the flour, make a dough.
  • Place the dough on a greased table and knead it with oiled hands.
  • Roll out the dough and place it in the pan, making a well in the center and raising the edges.

Yeast-free butter pie

If you don’t like working with yeast, you can make a rich yeast-free cake.

  • 0.5 kg flour;
  • 2 eggs;
  • 100 ml milk;
  • 4 tablespoons sour cream;
  • 60 gr. butter;
  • 3 tablespoons sugar;
  • 0.5 teaspoon salt;
  • 2 teaspoons baking powder;
  • 500 gr. apples;
  • 200 gr. lingonberries;
  • 2 tablespoons starch;
  • sugar in the filling to taste.

Beat 1 egg with salt and sugar, add sour cream and milk, baking powder, beat everything. We begin to sprinkle flour. When the dough becomes thick enough, add softened butter and knead the dough, adding more flour. The dough turns out elastic and does not stick to your hands. Place the dough to rest for half an hour, preferably in the refrigerator.

Rub the apples with coarse shavings, add the prepared berries, starch and sugar. Let's form a closed pie. To do this, roll out the dough into a rectangular shape, place the filling in the center, pinch the edges, forming a pie. Carefully place it on a greased baking sheet, seam side down. Brush the top of the product with beaten egg and sprinkle with a small amount of sugar.

Advice! If possible, it is better to use brown sugar for sprinkling; the baked goods will turn out more beautiful.

Bake for about an hour until the crust appears golden brown and smells delicious.

Pie Cream Recipes

The easiest option is to mix sour cream with granulated sugar and add vanilla sugar. Then beat the whole mass, turning everything into a homogeneous consistency. Coat the cooled lingonberry pie thickly.

But there are many more options: butter cream with egg whites or condensed milk, as well as custard and chocolate creams. All of them are easy to prepare and give excellent taste.

Condensed milk cream

Condensed milk goes well with lingonberries, but then you should add less granulated sugar to the filling. First, soften two hundred grams of butter in a cup. Add the same amount of condensed milk, a third of a teaspoon of cinnamon and one spoon of vanilla sugar. Beat the cream well until it becomes thick and dense.

Custard

To prepare it you will need:

  • a little less than a glass of sugar;
  • 500 ml milk;
  • 3 egg yolks;
  • 50 grams of butter;
  • 150 ml heavy cream;
  • 1 teaspoon vanilla sugar;
  • 2.5 tablespoons of starch.

The milk is brought to a boil, mixed with a third of the egg mass and whisked. Then the remaining mixture is gradually added. Keep everything on low heat, stirring until it thickens.

The cream likes to stick to the walls, and therefore requires attention. The secret of the recipe: to make the sweet cream, it needs to be cooled well. It goes into the refrigerator for at least four hours!

Chocolate cream

It is tasty and easy to prepare. Melt two hundred grams of chocolate in a water bath, stirring constantly. When it cools down, pour two hundred grams of cognac into it, stir and put in the refrigerator for an hour. Immediately after cooling, whip the cream.

Whatever cooking recipe you choose, lingonberry pie will be a real decoration for any table. It goes well with black, green and herbal teas, as well as cold drinks. Another advantage of this pie is that when it cools, it remains no less tasty.

Place the filling on the bottom layer, leaving the edges of the dough free. Cover with a second, slightly stretched layer and press the edges tightly, holding both parts of the pie together. Bake at high temperature (220 degrees) for 20 minutes.
