Boiled adjika from tomatoes and peppers with garlic for the winter

List of necessary ingredients for 4 liters of adjika:

  • Firm, fleshy tomatoes – 2 kg;
  • Red bell pepper – 2 kg;
  • Hot pepper – 400 gr;
  • Garlic – 400 gr;
  • Salt – 100 g;
  • Sugar – 150 gr;
  • Table vinegar 9% – 100 ml.

How to cook boiled adjika with tomatoes, peppers and garlic:

1. Separate the garlic heads into cloves, remove excess peels and pour boiling water for 20 minutes. Thanks to this, the garlic will be peeled much easier and faster.

2. Wash the tomatoes well, cut off the stem and cut in half or into quarters.

3. Wash the bell pepper, remove seeds and cut into 4 parts. Wash the hot peppers and cut them in half without removing the seeds.

4. Drain the water from the garlic and peel it.

5. Pass the garlic and pepper through a meat grinder.

6. Next we pass the tomatoes through a meat grinder.

7. Mix the contents of the pan. You should get a fairly thick mass. This is why it is recommended to use meaty tomatoes.

8. Place the pan on the stove and bring the mixture to a boil. The mass must be stirred periodically, otherwise it may burn.

9. After the mass boils, add salt, sugar and vinegar. Mix everything well and bring to a boil again. Next, turn the heat slightly below medium and cook the mixture for about 25-30 minutes, remembering to stir.

10. Pour adjika into pre-sterilized jars to the brim.

11. Screw on pre-sterilized lids. Turn the jars upside down and let cool completely. This adjika can be stored either in a cellar or basement, or at room temperature. Bon appetit!

Among the variety of options, it is difficult to choose the best adjika recipe without garlic. In winter, tasty preparations are always very necessary, especially if they are prepared in a special way. We offer an unusual recipe for sauce with nuts.

Ingredients:

  1. Tomatoes – 2.2 kg.
  2. Chili pepper – 3 pcs.
  3. Bell pepper – 1.2 kg.
  4. Walnuts – 140 g.
  5. Paprika, coriander, suneli hops - 1 tsp each.
  6. A bunch of cilantro.
  7. Horseradish – 30 g.
  8. Salt - two tsp.
  9. Vegetable oil.

Cut large tomatoes and peppers into pieces, and chili peppers into rings. Mix the chopped vegetables and place in a saucepan.

Fry the peeled nuts in a hot frying pan, remembering to stir them. Next, leave them to cool and then remove the skin. Add chopped nuts to vegetables.

Now you can start preparing the seasonings. Mix paprika, suneli hops, cumin and coriander. We take a teaspoon of each type of spice. Fry the resulting mixture in a frying pan for two minutes.

Peel the horseradish root, chop it and transfer it to the preparation. Grind the prepared vegetable mass in a meat grinder. You can also use a blender. True, the consistency of adjika in this case will be different.

Pour the vegetable mixture into a saucepan, which we place on the fire. Add vegetable oil, chopped cilantro, salt and sugar. Boil the mixture for about 30 minutes. Then pour the sauce into clean jars and seal them. So delicious adjika without garlic is ready. In winter, this sauce can be served with any dish.

Adjika from tomatoes for the winter without cooking with horseradish and acetylsalicylic acid

List of required ingredients for 4 liters:

  • Tomatoes – 3 kg;
  • Bell pepper – 1 kg;
  • Hot pepper – 1-2 pcs;
  • Garlic – 4 large heads;
  • Horseradish root – 100 g;
  • Salt – 1.5 tbsp;
  • Aspirin tablets - 3 pcs per 1 liter of adjika.

How to prepare adjika from tomatoes without cooking:

1. Wash the tomatoes thoroughly, cut off the stem and cut into 2 or 4 parts.

2. Wash the bell and hot peppers and cut off the stem. Remove the seeds from bell peppers and leave the seeds on from hot peppers. Cut the pepper into 4 parts.

  1. Tomatoes – 2.3 kg.
  2. Sweet pepper – 1.2 kg.
  3. Sugar – 3 tbsp. l.
  4. Hot pepper – 180 g.
  5. Salt - 0.5 cup.

Fresh tomatoes must be immersed in boiling water for a few minutes. This simple processing method will quickly get rid of the skin. Large fruits can be cut into pieces. The pepper is also cut into pieces and the seeds and stalk are removed.

Grind the prepared vegetables in a meat grinder, not forgetting to add hot pepper. If too much liquid has been released during the chopping process, it must be drained. Add salt and sugar to the resulting mass. The preparation is placed in the refrigerator for a day. You can also add herbs and spices. The finished sauce is poured into jars, closed and stored in the refrigerator. If you plan to store adjika without garlic for a long time for the winter, then you need to sterilize the jars with the sauce. And only after this the workpiece is placed in the pantry.

  • Salt – 2.5 tbsp;
  • Sugar – 200 gr;
  • Table vinegar 9% -200 ml.

How to prepare adjika for the winter with vinegar without cooking:

1. Wash the tomatoes, remove the stem and cut into 2-4 parts.

2. Wash the bell pepper well, remove the stalk and seeds and cut into 4 parts.

3. Wash the hot pepper, cut off the stem, and leave the seeds, so the adjika will turn out more spicy. If you want the opposite effect, remove the seeds.

4. Peel the garlic and pass it through a meat grinder. Next we add hot peppers, then bell peppers and tomatoes. We don't need the juice that will remain in the bowl from under the tomatoes.

5. Now, add salt, sugar and vinegar. mix everything well and leave in the pan for 2-2.5 hours. The mixture needs to be stirred periodically.

6. Sterilize the jars and lids in a convenient way and let them cool. Then, pour the finished adjika and twist it.

Spicy adjika with hot pepper and garlic

Homemade spicy adjika with hot pepper and garlic can be stored for a short time in the refrigerator and for a whole year in a cool place in rolled up jars.

Ingredients:

  • hot pepper - 500 g;
  • garlic - 300 g;
  • tomatoes - 900 g;
  • bell pepper - 900 g;
  • greens (dill) - 1 bunch;
  • salt - 2 tbsp. spoons;
  • sugar - 3-4 tbsp. spoon;
  • table vinegar 9% - 2-3 tbsp. spoons;
  • spices to taste (ground black pepper, khmeli-suneli).

Cooking method

For preservation, select healthy fruits, wash and peel them. Cut off only the tails of the peppers. The seeds will add more pungency to adjika.

Grind all the vegetables in a meat grinder or chop in a blender. Mix well and cook for 40 minutes, maintaining a low simmer. Be sure to cover with a lid and stir occasionally with a spoon.

Adjika from tomatoes with apples for the winter

List of required ingredients for 3 liters:

  • Tomatoes – 1.5 kg;
  • Bell pepper – 1 kg;
  • Hot pepper – 2-3 pcs;
  • Apples (sour) – 3 pcs;
  • Garlic – 3 cloves;
  • Salt – 2 tbsp;
  • Table vinegar 9% – 50 ml;
  • Vegetable oil – 100 ml;
  • Black peppercorns (ground) 0.5 tsp – ;
  • Ground coriander – 0.5 tsp

How to prepare adjika from tomatoes and apples:

1. Wash the tomatoes well, cut off the stem and cut into 2-4 parts.

2. Wash the bell pepper, remove seeds and stems, cut into 4 parts.

3. We wash the hot pepper, and also cut off the stalk and remove the seeds. If you want spicier adjika, leave the seeds.

4. Wash the apples, cut off the skin and remove the core. Cut the apples into small pieces.

Every housewife strives to prepare preparations for the winter. Adjika without garlic from tomatoes is a good addition to numerous dishes. A delicious sauce can be made with the addition of eggplant.

Ingredients:

  2. Tomatoes – 2.3 kg.
