After this, you need to knead the dough, add baking soda, slaked with lemon juice.

In order for the base to acquire the desired consistency, it is advisable to completely roll it into a ball, place it in a bowl and leave it in a warm place for about sixty to seventy minutes. And at this time you can start preparing the filling.

  3. Mix everything with sour cream. If the sour cream is runny, you can strain it through a sieve or beat it with one packet of a special thickener for cream/sour cream.

We prepare the filling for Tatar “Smetannik” No. 2 in almost the same way:

  1. Beat sour cream, eggs and sugar with a blender/mixer for about 5 minutes until the sugar is completely dissolved.
  2. You can add vanilla and cinnamon if you wish.
  1. For Smetannik, use a round mold with sides.
  2. Roll out the risen dough into a thin layer, which will be 2-3 centimeters larger in diameter than the mold.
  3. Grease the mold with butter, carefully lay out the dough, forming sides.
  4. Pour the filling into the center and slightly fold the sides inward.
  5. The cake is baked in an oven preheated at 200 degrees for about half an hour. The dough bakes faster, watch when the filling hardens.

Simple and delicious sour cream with cottage cheese

  • Milk – 5 tbsp. l.
  • Cottage cheese – 135 gr.
  • Sugar – 65 gr.
  • Baking powder – 10 gr.
  • Cherry – 200 gr.
  • Flour – 200 gr.
  • Sour cream – 300 gr.
  • Starch – 20 gr.
  • Egg – 3 pcs.
  • Sugar – 70 gr.
  • Vanillin – 2 g.

Recipe #2

  1. Use ready-made puff pastry. Defrost it, but not completely.
  2. Roll out into a circle slightly larger than the diameter of the baking dish.
  3. Place in an oiled mold and make the sides slightly higher than the mold (at least 3 centimeters).
  4. Pour in the sour cream filling. Pour into the center so that it spreads towards the sides of the cake.
  5. Smooth the surface with a spatula. To prevent the filling from sticking to the spatula, moisten it with water before using.
  6. Bake the Smetannik pie at 180 degrees for about 15 minutes. Then, when the filling on top is already slightly browned, cover the product with foil and bake for another 20 minutes. The filling should increase in volume, cover with a thick crust and brown well.
  7. To decorate Smetannika, use non-watery berries or fruits. Hard pears, strawberries, raspberries, blackberries, and peaches are best suited. Cut the sweet fruits and place them in the still unset filling 5–10 minutes before the end of cooking, as if drowning them a little. Sour berries can be lightly sprinkled with sugar, allowed to drain excess juice and placed on a fully prepared dessert.

“Smetannik” with the addition of raisins is prepared a little differently. Mix the dough from the following products:

  1. Dry yeast – 7 grams.
  2. One glass of milk.
  3. Ghee butter – 70 grams.
  4. Sugar - 45 grams.
  5. Zest of half a lemon.
  6. Flour – 420 grams.
  7. A little salt.
  1. Sugar – 80 grams.
  2. Sour cream - half a liter.
  3. Eggs – 4 pieces.
  4. Light raisins – 70 grams.
  5. Vanilla – 2 packs.

Cooking process:

  1. Dissolve the yeast in slightly warmed milk.
  2. Combine dry ingredients: salt, flour, sugar. Combine both mixtures and stir.
  3. Pour in the melted butter and grated lemon zest.
  4. Knead the dough. It turns out elastic, viscous, slightly sticky. Leave it for an hour or an hour and a half in a warm place, covered with a towel.
  5. Then place the ball of dough in the refrigerator for 9 hours.
  6. Three hours before you start baking Smetannik, remove the dough from the cold and let it warm up.
  1. Pour boiling water over the raisins and let them swell for half an hour. Then strain it and place it on a towel to dry.
  2. Beat sugar with eggs, add sour cream and raisins, mix.
  3. Roll out the dough, place in a greased pan and form small sides.
  4. Pour in the filling and sprinkle powdered sugar on top until it turns nicely golden.
  5. Bake for half an hour at 180 degrees.
  6. The filling must harden well before serving, so place the finished pie in the refrigerator for several hours.

Recipe #4

“Smetannik” with poppy seeds is also very tasty. The set of products is almost the same as in previous recipes.

  1. 180 grams of butter or milk margarine.
  2. One glass of flour.
  3. Sour cream or full-fat kefir - 5 tablespoons.
  4. Sugar – 5 tablespoons.
  5. A teaspoon of baking powder (can be replaced with soda).
  1. 7 tablespoons of dry poppy seeds.
  2. Semolina – 2 tablespoons.
  3. A glass of milk.
  4. Sugar – 5–6 tablespoons.
  1. Half a glass of granulated sugar or powder.
  2. Sour cream – 400 milliliters.

Cooking process

Prepare poppy “Smetannik” in Tatar style:

  1. Do not melt the margarine, just grate it.
  2. Mix with flour and baking powder.
  3. Add sugar and sour cream (kefir). Knead a thick dough.
  4. For the filling, mix poppy seeds with semolina, add sugar and pour in warm milk.
  5. Boil until thick.

Ingredients:

  • Sour cream - 1 glass
  • flour - 1 cup
  • sugar - 1 cup
  • eggs - 2 pcs
  • fresh or frozen berries - 300 gr
