  • pea flakes – 1 tbsp. spoon;
  • purified water – 120 ml;
  • refined vegetable oil – 190 ml;
  • lemon juice – 20-30 ml;
  • mustard – 20-30 g;
  • granulated sugar – 15-20 g;
  • freshly ground black pepper – 1 pinch;
  • table salt – 10 g.

Preparation

First, mix the pea flakes with water and set to cook on the stove. As a result, we should get well-boiled pea mush. Instead of cereal, you can use split peas and pea flour. Only the cooking time in this case will increase or decrease accordingly. If using dry split peas, they should be soaked overnight to reduce the cooking time.

Next, we continue preparing homemade lean mayonnaise according to this recipe in a blender. Transfer the pea mass into a bowl and beat until the texture is completely homogeneous. First of all, to prepare lean mayonnaise, mix starch with a small portion of broth, and then combine with the remaining broth and heat until boiling and thickening, stirring. After this, add salt, granulated sugar, mustard and lemon juice to the resulting vegetable jelly and mix thoroughly until all the crystals are dissolved and a homogeneous mixture is obtained.

At the next stage, we will need a blender or, as a last resort, a mixer. Add vegetable oil without aroma into the cooled spicy mixture in a thin stream and continuously break the mass. The more oil is added, the thicker and fattier the lean mayonnaise we will get at the end.

Mayonnaise made with mustard and flour

To prepare this mayonnaise, you will need 500 ml. water, 6 tbsp. flour, 2 tsp. salt, 1 tbsp. sugar, 50 grams of mustard powder, 3 ml. citric acid or juice (quarter tsp), 50 grams of sour cream, 100 grams of sunflower oil, ground black pepper. The sauce is prepared in a few simple steps:

  1. Pour cold water into the pan, pour flour into it. Mix the composition so that a homogeneous mass without lumps is formed - if desired, you can use a mixer or blender. Once the mixture reaches the desired consistency, place the pan over low heat. Stir the mixture until the flour becomes thick. Remove the pan from the stove and let the mixture cool completely;
  2. Add sour cream, citric acid (dissolved in 50 ml of warm water), sugar, salt, a pinch of ground pepper and mustard powder to the mixture. Mix the ingredients using a blender;
  3. Beat the mayonnaise for at least 5 minutes. As you mix the ingredients, pour in the vegetable oil in a thin stream. Add turmeric, asafoetida or finely chopped garlic to taste.

Store the sauce in the refrigerator for 3-4 days.

Homemade mayonnaise based on corn sticks

To prepare this mayonnaise you will need 100 grams of unsweetened corn sticks, 150 grams of sunflower or olive oil, 4 teaspoons of sweet mustard, 4 tablespoons of lemon juice, 100 ml. cold water and pepper (optional). Flourless mayonnaise is prepared according to the following recipe:

Ingredients:

  • 100 ml vegetable oil
  • 2 pcs. juicy green apples
  • 1 tbsp. l. ready table mustard
