Maslenitsa is a cheerful farewell to winter and a welcome to the long-awaited spring. But, of course, Maslenitsa is loved and revered most of all because of the pancakes, which can and should be eaten with pleasure throughout the entire Maslenitsa week. And so that you don’t feel remorse for every tenth (or even twentieth!) pancake you eat in a week, we have prepared delicious and healthy recipes for you - gluten-free, refined sugar-free and dairy-free. As a bonus, we offer natural sweet sauces for pancakes.
Vegan pancakes with mineral water
Ingredients:
- 1 tbsp. plant milk
- 1 tbsp. sparkling water
- 1.5-2 tbsp. wholemeal spelled flour
- 3 vegan eggs
- 2 tbsp. coconut sugar
- 2 pinches pink Himalayan salt
- 1 tsp soda slaked with lemon juice
Recipe:
- For vegan eggs, grind 3 tbsp in a coffee grinder. flax seeds and soak them in 6 tbsp. water.
- Mix milk, water, sugar and salt.
- Add flour in several stages, constantly stirring the dough.
- At the end, add the vegan eggs and mix everything.
- Bake in a heated frying pan. Grease the finished pancakes with ghee.
Pancakes for Maslenitsa
Russian pancakes are one of the oldest dishes. Our ancestors began preparing this dish more than 10 centuries ago. Until now, we cannot imagine Maslenitsa without delicious hot pancakes with all sorts of delicious fillings.
In Rus', classic Maslenitsa pancakes were prepared with yeast. Each housewife had her own delicious secret recipe, which was passed down from generation to generation. After all, pancakes had to be eaten throughout the holiday week, alternating them with other dishes. Many modern housewives still keep the recipes for wheat, buckwheat, oat, and corn pancakes from their great-grandmothers.
But how can those who suffer from gluten intolerance make delicious pancakes for Maslenitsa? A recipe with photos based on rice flour will help you prepare gluten-free pancakes.
Gluten free thin pancakes
Ingredients:
- 300 ml plant milk (coconut or soy)
- 1 egg
- 75 g gluten-free flour mixture (e.g. Garnets)
- 1 tbsp. coconut sugar
- A pinch of salt
Recipe:
- Sift the flour mixture into a wide bowl, add salt and sugar.
- Add egg, mix.
- Add milk in portions and mix everything. Leave the dough for 5-10 minutes.
- Bake in a greased frying pan over medium heat.
