How to cook:

Beat the eggs into the kefir, then add salt, sugar, vanilla sugar and soda. Stir. Add flour and then pour in vegetable oil. Knead into a thick dough, adding a little more flour if necessary. Let the dough sit. After an hour, you can start baking pancakes. Fry the pancakes on both sides until they have a beautiful golden color. Beat sour cream with sugar and a bag of vanilla sugar. Grease each pancake with sour cream and stack on top of each other to form a cake. Spread several pancakes with jam and place them between pancakes with sour cream. 1. To prepare the pancake dough, we sift the flour through a sieve. Add two eggs and two yolks to the sifted flour; from the remaining white we can make, for example, homemade meringue or marshmallows. Add salt. Melt the butter and pour it into the flour along with the milk. Mix everything with a mixer until the lumps are completely dissolved. To prevent the flour from scattering, start mixing it with the mixer turned off, and when the flour absorbs moisture, turn it on and continue mixing at medium speed. The dough for thin pancakes is ready.

How to fry pancakes

2. Heat well a special pan for pancakes or a cast iron frying pan. The better it is heated, the more small holes there will be on the pancakes. When the frying pan is well heated, grease it with lard using a fork. Using a small ladle, pour in the dough and spread it evenly over the entire surface, turning the pan clockwise. Fry our first pancake until golden brown on one side. Carefully turn the pancake over with a spatula, or toss it if you know how to do this. Fry our pancake on the other side. This volume of dough will yield approximately 16 pancakes (I got 18 this time). Stack them as you cook.

3. First, prepare the fruit. Oranges are suitable both sweet and sour. Extra sourness in this recipe won’t hurt, but will be very helpful.

Wash and wipe one large orange or 2 small ones. Grate the orange zest on a fine grater. It will add a slight bitterness and amazing aroma to our pancake cake. We do not spare the zest, we rub the entire top layer of the orange peel, but we do not reach the white fibers.

4. Divide the orange into slices and cut each slice into small pieces.

Thin pieces are better for filling, and thick pieces for decoration.

6. And all we have to do is cut the banana using the same method: for filling and decoration.

For the cream, mix heavy sour cream and powdered sugar in a deep bowl. With the mixer turned off, mix so that the powder does not fly around the kitchen. After it is mixed, turn on the mixer and start beating. The main thing is not to overdo it, otherwise you will end up with butter instead of cream.

8. We begin to form a sweet pancake cake. Place the first pancake on a plate or cake stand and place a heaping tablespoon of cream on it. Spread a thin layer of cream over the pancake. We repeat 2 more times, placing the pancakes on top of each other and covering them with cream.

9. Approximately every 3rd pancake, place fruit or grated orange zest. Finely chopped orange will go first.

10. Place 3 pancakes again, greasing each one with cream. Sprinkle orange zest on top of the 3rd pancake.

11. And again 3 pancakes, and put finely chopped kiwi on top of the sour cream.

12. Again lay out 3 layers of pancakes with sour cream and a layer of orange.

13. The last one will be a banana. And behind it we lay out the remaining pancakes.

Break an egg into a bowl, add sugar and vanilla to taste, beat a little with a whisk. Then add sour cream and sifted flour to it. You will need two heaped spoons. Stir and place on low heat or in a water bath. Heat, stirring until creamy. Cover with film and cool.

Advice! For those who do not prefer rich cream, you can use half the amount of oil.

Soften the butter at room temperature and add it to the cream in portions, continuously whisking the mixture with a mixer.

  • Water – 250 ml.

  • Cocoa – 2 tbsp. l.
  • Flour – 2 tbsp.

For cream

:

  • Sugar – 100 gr.
  • Flour – 3 tbsp. l.
  • Milk 1% – 300 ml.
  • Butter – 180 gr.
  • Vanillin – 8 gr.
  • White chocolate

Beat the egg and sugar, add vanillin, sifted flour, add milk little by little, stir with a whisk and put the mixture on low heat, stirring continuously until thickened and set aside. Beat the butter separately. Add the cream in portions, continuing to beat, and the chocolate, melted in a water bath. Cool.

For pancakes, beat the yolks with sugar, throw in a pinch of salt, pour in a glass of milk, then add flour, baking powder, starch, cocoa, mix, pour in the rest of the milk, butter, then water and whipped whites.

Advice! Cocoa, so that there are no lumps, just like flour, must be sifted.

Bake pancakes after 30 minutes. Heat the frying pan, grease and pour in the dough, spread over the entire surface, bake the pancake on one side and the other, then the rest.
