For a simple homemade apple cider vinegar recipe, you need to choose ripe and sweet apples.

Preparation:

  1. Wash the apples and cut into large pieces. Leave it outdoors.

  2. After a short time, squeeze out the juice from the darkened pieces.

  3. Place the resulting liquid in a glass container and put a medical glove with a puncture in one finger on top of the neck. It should remain in a warm, dark place in this state for up to 6 days.

  4. Once the glove is well inflated, it is time to drain the fermenting apple cider vinegar from the juice into a wide bowl, after which the fermentation rate is increased. This dish should be covered with a loose towel and sent to a dark place with a temperature of +27 degrees for 2 months.

  5. When a thick sediment appears, the apple mass is filtered through cheesecloth and packaged in bottles. Store later in a cool place.

During fermentation, a film of acetic acid bacteria forms on the surface of the apple mass, which does not need to be removed. This is what makes it possible to create such a product.

The first thing you need to pay attention to is the composition. There should be no other ingredients except apple cider vinegar itself, obtained through the activity of aerobic acetic acid bacteria. If the composition is “enriched” with something else, then the vinegar is not natural, but synthetic and should not be treated or used for cosmetic purposes. It can only be used in dishes. But it should be diluted more with water, since industrial vinegar has a higher percentage of acidity (9% versus 4-5% natural). First Apple Cider Vinegar Recipe

Well-ripe apples of any variety are collected (they are also called “carrion”). If you have your own dacha, then this is very good, since apples grown with your own hands, as a rule, are not treated with harmful chemicals. The apples are washed, cut into small pieces and pureed. It is better to immediately transfer this entire mass into a special enamel pan, where sugar is added - 50 grams per kilogram of applesauce. If the apples are too sour, then the amount of granulated sugar can be increased to one hundred grams per 1 kg. The mixture should be filled with hot but not boiling water (about 70 degrees). After the apple mass is filled with 3-4 centimeters of water, the pan is placed in a dark, warm place.

From time to time (at least 2 times a day), the mass must be mixed. This way it won't dry out on top. Everything is left for a couple of weeks, after which the liquid is filtered through cheesecloth (it is better to fold it in several layers) and poured into large jars in which it will begin to ferment. It is necessary to remember that the liquid in the jar should not reach the neck - there should be at least 7-8 cm left to the top. This is due to the fact that the liquid will begin to rise as it ferments. The jars are left for another two weeks, after which you get excellent apple cider vinegar prepared at home.

Second Apple Cider Vinegar Recipe

To prepare this natural apple cider vinegar, you need to coarsely chop unpeeled sweet apples and leave them for half an hour so that they darken. They darken due to the oxidation process of iron, which these fruits are so rich in. Then the juice is squeezed out of them, which is poured into a glass container. After this, the neck of the jar or other container is sealed with a rubber glove. It is also advisable to wrap the neck with additional adhesive tape or tape to limit the access of air. This container must be placed in a warm (at least 26 C) and dark place and left there for up to 6 weeks.

The rubber glove will begin to inflate over time and should be removed when fully inflated. At this stage, a film of yeast-like fungi forms on the surface of the apple cider vinegar, which is also called the “vinegar mother”. The vinegar along with the film should be poured into a wide wooden (or earthenware) bowl, covered with a cloth and left to ferment again for 6-8 weeks. Remembering that the liquid will increase in volume during fermentation, you need to leave a space of 7-9 cm for it on top, otherwise it will overflow. As for the film, you should never throw it away - its medicinal properties are even higher than those of apple cider vinegar and without it the fermentation process will slow down.

As soon as the liquid stops bubbling and is cleared of turbidity, we can say that fermentation is complete. Therefore, vinegar is filtered through gauze cloth and bottled. It is stored in a dark place at a temperature of six to fifteen degrees. Beneficial properties are maintained throughout the year. Apple cider vinegar without yeast


Due to the lack of yeast at home or simply unwillingness to use it, a recipe for making apple cider vinegar at home without yeast is provided. To obtain the desired product, the apples must be thoroughly chopped and a lot of sugar should be added.

Preparation:

  1. Cut the apples into small pieces and place them in a saucepan or basin. Pour boiled cooled water on top so that it completely covers the fruit slices.

For five liters of the resulting mass, add one liter of water and honey. Place the apple mixture, honey and water in a large glass or enamel container and stir. Cover with gauze and leave for 20-22 days, stirring from time to time.
