A national Russian holiday is approaching - Maslenitsa. And we will see off winter and welcome spring. And we will greet her with delicious, buttery, delicate pancakes. Among the Slavs, the pancake symbolizes the sun. And we treat each other to such delicious sunshine so that spring will come sooner.
Classic pancake dough is usually made with milk. But kefir pancakes are no less popular in Russia and throughout the post-Soviet space. Flour is used more often than premium wheat flour. But there are recipes for dough made from buckwheat and corn flour.
The most delicious way to cook, of course, is stuffed pancakes. A wide variety of fillings are wrapped in pancakes. Cottage cheese, feta cheese, minced meat, fried mushrooms, red and black caviar are used for this. Or sweet, berry fillings with lingonberries, blueberries, cherries. Even the youngest members of the family can put the filling in the middle of the pancake and roll it up. We have already learned how to cook even pancake cakes.
We don't get tired of pancakes because they are baked from different doughs and served in different ways. Unsweetened - with sour cream, butter, caviar. Or sweet ones - with jam, jam or condensed milk. This is a dish that we are ready to eat every day. And on Maslenitsa there is simply no housewife who would not cook several varieties of this festive treat for her family and guests.

Thin kefir pancakes with holes - the right recipe
Here is a classic, repeatedly proven version of kneading dough. Holes are guaranteed for you if you use it. The taste of pancakes is neutral, suitable for sweet or meat filling.
Take:
- Kefir – 500 ml.
- Eggs – 3 pcs.
- Granulated sugar - 1.5 tablespoons.
- Soda, salt - 0.5 small spoons each.
- Flour – 2 cups.
- Sunflower oil – 2 tablespoons.
How to bake:
- Break the eggs into a deep container and stir. Add salt and sweetness, beat until foamy with a whisk or use a blender.
- Pour in 2/3 of the fermented milk drink. You can pour it all, but in a thicker mass it will be easier to break up the lumps. Stir the contents of the bowl until smooth.
- Mix flour with soda, start adding in parts, mixing well.
- Pour in the remaining kefir and continue kneading the dough. Be sure to let it sit for a quarter of an hour.
- At this stage, many housewives add sunflower oil so as not to grease the pan in the future. Add it, beat the mixture thoroughly again and start baking.
- Pour a portion of the dough onto the oiled frying pan, turning it at the same time so that it spreads over its entire diameter. Adjust the heat so that the pancakes have time to cook through without burning. Fry the underside for a minute until golden brown.
- Flip the pancake and bake for about 35-40 seconds more.
Kefir custard pancakes
This option for preparing pancake dough is also very tasty. The finished pancakes turn out to be very tender and tasty; you can also wrap them with different fillings or eat them just like that with tea or coffee.
Required ingredients:
- ten tablespoons of flour;
- three eggs;
- one teaspoon of baking soda;
- salt to taste;
- sugar to taste;
- fifty milliliters of vegetable oil;
- half a liter of kefir;
- three hundred milliliters of water.
Let's start preparing pancakes by beating eggs with salt and sugar.
After this, pour the kefir into a bowl and add soda to it, being sure to put it out. Pour the beaten eggs into the kefir.
Now you should sift the flour and put it in the kefir-egg liquid. Whisk everything so that there are no lumps.
To make the pancakes as fluffy and soft as possible, do not add any other liquid (water, milk) to the kefir dough.
Now you should pour boiling water into the dough. You need to pour it in carefully, not forgetting to stir the dough. After this, add vegetable oil to it. Mix everything well again.
Now you should fry the pancakes. The pan for them should be hot, the dough should be distributed completely over it. They should brown on both sides, for which the pancakes need to be turned over.

If you want to hear a lot of compliments, make pancakes from kefir with milk. Tender, sweet, porous, they will not leave even the pickiest ones indifferent.
Required:
- Milk – 250 ml.
- Kefir – 500 ml.
- Baking soda - teaspoon.
- Flour – 2 cups.
- Sugar – 2-3 large spoons.
- Eggs - a couple.
- Oil – 2 tablespoons.
- Vanillin is a standard sachet.
- Salt - to taste.
Preparation:
- Warm the fermented milk drink a little, add soda. Wait a few minutes for it to foam up and start working.
- Add salt, sweetness, eggs, vanilla sugar. Knead the mixture thoroughly until smooth.
- Slowly add flour while continuing to knead the dough.
- Boil the milk, continuously stirring the dough, pour in a thin stream.
- Immediately pour in the oil and use the blender again.
- For the first baking, coat the pan with oil, pour in the dough, and bake the pancakes.
Kefir and milk dough recipe
You can brew the dough not only with boiling water, but also with milk. Only we don’t boil it, but bring it to a boil and immediately combine it with the main mass, constantly whisking so that it brews equally everywhere.
Ingredients:
- 500 ml kefir
- 2 eggs
- A glass of milk
- 1.5 cups flour
- 1 tsp soda
- 0.5 tsp salt
- 1 tbsp. granulated sugar
- 2 tbsp. vegetable oil
Heat kefir on the stove. Add two eggs to the warm kefir and immediately whisk quickly.
Now add all the bulk ingredients: salt, sugar, soda. The mass will increase in volume.
Add flour, whisking.
Bring the milk to a boil and pour it into the total mass in a thin stream, thus making a choux pastry.
Now add vegetable oil.

Custard thin pancakes in boiling water with kefir
Real lace pancakes, and they are so elastic that any filling will not fall out - they will hold on. You will learn how to bake thick pancakes
Required:
- Eggs – 2 pcs.
- Kefir – 350 ml.
- Sunflower oil – 3 large spoons.
- Flour – 250 gr.
- Boiling water – 350 ml.
- Granulated sugar - 2 large spoons.
- Baking soda – 0.5 teaspoon.
- Salt - to taste.
Step by step recipe:
Warm up the fermented milk drink a little, up to 40 o C. Add baking soda and stir.
Leave it on the table for 5-6 minutes, it will bubble right before your eyes. The soda will be quenched by kefir and will start working actively.
Add two eggs, salt and sugar. Whisk the mixture thoroughly again until smooth.
Add flour. If you work with a whisk, I advise you to add it in two steps to make the lumps easier to break up.
Boil water, pour in a thin stream into the bowl of dough, while vigorously stirring the contents.
The oil is poured in last. Stir the mixture again.
The batch will turn out to be quite liquid, easily flowing from the ladle.
Heat a frying pan, coat with oil. Pour in a ladleful of batter while rotating the pan so that it spreads evenly. Fry the pancake for about a minute on the underside. You see, a lot of beautiful holes immediately appeared.
Then turn over and fry the second side until golden brown.
Cooking with kefir with the addition of boiling water
Each recipe has its own little nuances, but do you know how to make the pancakes not so greasy? It turns out that you definitely need to add water to kefir, and it is best to take kefir that is not very fatty.
The next condition, which is also important, is the correct ratio of products, here you will not have any problems because the list of ingredients will be presented further. Well, one more thing is a frying pan, as I already said, it’s best to take a cast iron one, then you will definitely be satisfied.
We will need:
- Flour - 1 tbsp.
- Eggs - 2 pcs.
- Salt - ½ tsp
- Soda - ½ tsp
- Sugar - 2 tbsp. l
- Boiling water - 1 tbsp.
- Kefir - 1 tbsp.
- Vegetable oil - 2 tbsp. l
Cooking method:
1. Start by sifting the flour, then add half a teaspoon of soda and sugar to the flour. Stir these dry ingredients.
2. Then in another bowl, beat two eggs with salt with a mixer, it will be faster. After the salt has dissolved, pour in one glass of boiling water and pour it in a thin stream, stirring with the whisk of a mixer. Next, pour in one glass of kefir, the mass will turn out fluffy.
3. Now all that remains is to add the flour and also stir so that no lumps form. Finally, pour in the vegetable oil and stir. Let the dough sit and brew for about 15 minutes.
4. Bake pancakes in a hot frying pan, greasing it with vegetable oil in advance. Use a silicone spatula to turn over to avoid burning your hands.
5. Tender pancakes are ready, serve them with honey or jam. Bon appetit!
Thin kefir pancakes with holes (with vodka)
Make pancakes from this dough and you will get real lace.
We take:
- Kefir – 500 ml.
- Sugar – 3 large spoons.
- Soda - a teaspoon.
- Vodka – 2 large spoons.
- Flour – 350 gr.
- Water – 100 ml.
- Salt – a pinch.
- Sunflower oil – 2 tablespoons.
- Butter for coating.
Bake:
- Combine eggs, salt, granulated sugar, and kefir in a bowl. Pour in the vodka, stir the mixture thoroughly, waiting for the sugar crystals to dissolve.
- Add sifted flour mixed with baking soda. Continue kneading the dough until there are no lumps left.
- Pour in the oil and stir. Cover with cling film and leave to rest for a quarter of an hour.
- To bake the first length, oil the surface of the pan. This will not be needed further, since it is already included in the test.
- Bake the pancakes, stack them on a plate, put a piece of butter on each pancake.
How to bake thin pancakes with kefir without eggs - the best recipe
The presence or absence of eggs in the recipe will not affect the appearance of holes. Therefore, if for some reason you are forced to refuse them, this is not a reason to remain without pancakes on Maslenitsa.
Ingredients:
- Kefir – 0.5 liters.
- Flour – 250 gr.
- Sunflower oil – 3 large spoons.
- Sugar - the same amount.
- Baking soda - teaspoon.
- Boiling water – 200 ml.
- Salt - to taste.
Cooking:
- Knead the dough from the ingredients listed in the recipe. Add kefir, salt, sugar and flour alternately.
- Then boil water, add soda to it, quickly pour it into the mixture, stirring it at the same time.
- Pour in the butter, stir the dough again and start baking the pancakes.
Kefir pancakes for snack
It’s very easy to make a delicious and original snack from pancakes. It is perfect for guests, and can also be an option that can diversify your home table.
Ingredients needed for pancakes:
- 300 ml 2.5% kefir;
- one egg;
- 50 grams of fresh spinach;
- 1/3 glass of water;
- one teaspoon of sugar;
- 1/3 teaspoon of soda;
- one tablespoon of vegetable oil;
- six tablespoons of flour.
Required ingredients for filling:
- three sausages;
- 12 cherry tomatoes;
- two tablespoons of 20% sour cream;
- three cloves of garlic;
- one bunch of dill;
- vegetable oil to taste.
Let's prepare the dough for pancakes. First you need to wash the spinach and dry it. Then put it in a blender, add kefir and grind everything.
Then add salt, egg, flour, sugar and vegetable oil to the blender. Grind everything thoroughly.

Now let's prepare the sausages. They need to be fried in vegetable oil so that their sides become golden.

Many housewives want to have the correct pancake recipe, designed for a liter of fermented milk drink.
You will need:
- Kefir – 1 liter.
- Soda – ½ teaspoon.
- Flour – 260 gr.
- Eggs - a couple.
- Vegetable oil – 2 tablespoons.
- Sugar – 2 teaspoons.
How to bake:
- Combine all the products specified in the recipe in a deep bowl. Add flour in small portions to make it easier to achieve uniformity.
- Let the dough sit for 15-20 minutes to allow the gluten in the flour to combine with the rest of the ingredients.
- Bake the pancakes in a preheated frying pan on both sides until nicely browned.
Yeast thin pancakes with kefir
At first glance, the recipe contradicts itself, since everyone knows that pancakes with yeast always turn out fluffy. I suggest you try it and you will see that this is not always the case.
Take:
- Kefir – liter.
- Eggs - a couple.
- Flour – 400 gr.
- Live yeast – 25 gr.
- Vanillin is a standard sachet.
- Sugar – 2 large spoons.
- Salt – a pinch.
- Vegetable oil – 50 ml.
Preparation:
- Warm a little kefir drink on the stove (up to 40 o C, no more), mash the yeast, throw it into a bowl. Stir, let stand for 10 minutes.
- Pour in the rest of the kefir, add sugar and salt. Mix the mixture well.
- Beat in the eggs and add the vanilla. Start adding flour, breaking up any lumps each time. When the flour runs out, your dough will have the consistency of thick sour cream.
- Cover the bowl with cling film and place in a warm place – the yeast will begin its work.
- After 15 minutes, pour in the sunflower oil and stir the dough one last time.
- Cook the pancakes on both sides, greasing the pan the first time. You won't need to do this further.
Sweet thin pancakes with kefir and mineral water - a proven recipe
If you knead the dough by adding mineral water to kefir, you are guaranteed a large number of holes. Gas bubbles will contribute to this, making the dough porous.
You will need:
- Kefir – 1 liter.
- Sparkling water – 300 ml.
- Flour - 2 cups (with a small slide).
- Eggs – 6 pcs.
- Baking soda – ½ teaspoon.
- Sugar – up to 5-6 tablespoons (optional).
- Sunflower oil, salt.
How to bake:
- Beat eggs into a bowl, add granulated sugar. Use a mixer to beat until light foam forms.
- Pour in mineral water and fermented milk drink. Spit out the contents.
- Add baking soda to the flour, sift and mix the dry ingredients. Gradually add to kefir mixture. Add in small portions, carefully breaking up any lumps in each portion.
- When the flour runs out, start baking immediately so that the gas bubbles do not have time to evaporate.

Ingredients:
- 1 cup - oatmeal
- 3 tbsp. spoons - oatmeal
- 2 glasses - kefir
- 100 ml - boiling water
- 1/3 teaspoon - soda
- 1 egg
- 1 tbsp. spoon - sugar
- a pinch of salt
- liquid honey
- vegetable oil for frying
Preparation
- Pour oatmeal and baking soda into a bowl, pour in kefir and boiling water, stir and leave for 30 minutes at room temperature.
- Add oatmeal, egg, sugar and salt to the oatmeal-kefir mixture and mix well.
- Heat vegetable oil in a frying pan. Spread out the dough using a ladle.
- Fry the pancakes on each side for 2 - 3 minutes.
- Place the finished pancakes in a stack.

Chocolate pancakes made from kefir dough with filling
These are pancake rolls, but they can be served as pancakes rather than sliced.
Take for dough:
- Kefir – 0.5 liters.
- Egg.
- Granulated sugar - a large spoon.
- Cocoa powder - a small spoon.
- Flour - how much it will take.
- Salt – a pinch.
For filling:
- Bananas – 2-4 pcs.
- Dark chocolate - bar.
- Powdered sugar.
Preparation:
- Knead the dough from the listed ingredients. Add enough flour until the mixture becomes the consistency of sour cream.

Ingredients:
- 500 ml kefir
- 250 g milk
- 300 g flour
- 0.5 tsp soda
- 1 tbsp. granulated sugar
- 2 tbsp. vegetable oil
- 0.5 tsp salt
We heat the kefir to 70 degrees and add soda to it so that the mass foams and the soda is well quenched.
Now add a spoonful of sugar and salt.
Mix the liquid base with flour. To prevent lumps from appearing, first pour a little liquid mass into the flour, then everything else.
Now heat the milk or pour it in a small stream into a common bowl.
Pour sunflower oil into the finished mixture.
