There are many recipes for compotes for the winter at home; in fact, they can be roughly divided into only two groups: sterilized compotes and rolled compotes without sterilization. The approach to choosing a method is determined only by personal preferences. It’s easier for one to put all the ingredients in a jar and let it cook for half an hour - you get a natural assortment. Other housewives prefer recipes where you need to pour and roll.

With apples for the winter

Apples go very well with lingonberries in both drinks and jam. To make the compote tasty, choose sweet apples without sourness, better than winter varieties - they have a solid structure, they will not turn into mush in a jar. The value of the following recipe is that both the berries and the apples are not boiled and retain all the vitamins as much as possible.

Ingredients for 1 three-liter jar:

  • 1.5 apples (better than winter varieties).
  • Lingonberries - 2 or 3 cups.
  • Sugar – 1.5 cups.
  • Water – 3 liters.

  • lingonberries – 0.5 kg;
  • water – 2 l;
  • sugar – 1.5 tbsp;
  • lemon – 50 g.

Cooking method:

  • Rinse the berries. After the water has drained, place them in a sterilized jar.
  • Wash the lemon thoroughly and cut, without peeling, into thin slices. The seeds should be removed.
  • Place the lemon wedges on top of the lingonberries.
  • Boil water, add sugar, wait for it to dissolve and cook the syrup for 5 minutes.
  • Pour syrup over lingonberries and lemon.
  • Seal the jar with a metal lid, turn it over and cover with a blanket.
  • After 12 hours, the jar of compote can be put away for the winter. It is better to store compote in a cool place.

The drink according to this recipe is concentrated, with sourness and a pleasant bitterness. Before serving, it is advisable to dilute it with clean water.

There are many recipes for making lingonberry compote. They differ from each other in the ingredients they contain and in the methods of processing the berries. So, for example, to sweeten the lingonberry compote a little, the recipe is supplemented with sweet apples. To add vitamins, add cranberries and lemon to the drink.

Lingonberry compote recipe

The simplest recipe for lingonberry compote contains only water, sugar and berries. It may seem somewhat sour and tart due to the specific taste of the fruit, but it is very good for health, since the heat treatment time in it is reduced to a minimum. Required ingredients:

  • 250 g of fresh or frozen lingonberries;
  • 200 g granulated sugar;
  • 2 liters of water.

  • granulated sugar – 400 g;
  • water – 1.5 cups;
  • citric acid – 0.5 teaspoon.

Canning procedure:

  1. A syrup is prepared from sugar and water.
  2. The berries are dipped in boiling syrup and cooked for about 4 minutes.
  3. Boiled lingonberries are placed in clean jars.
  4. Add citric acid to sugar syrup and pour it into jars of berries.
  5. The jars are covered with lids and pasteurized for about 15 minutes, and then rolled up.

Compote with lingonberries and cranberries

Cranberry and lingonberry compote has a somewhat unusual taste; it will appeal to all lovers of sour things. In addition, it contains a lot of vitamins and other useful substances. For lingonberry-cranberry compote you will need the following products:

  • cranberries – 300 g;
  • the same amount of lingonberries;
  • granulated sugar – 4 tbsp. spoons;
  • water – one and a half liters;
  • lemon juice – 1 tbsp. spoon;
  • zest – 1 teaspoon.

First, prepare the berries. They are sorted, washed and sorted. Then pour water into the pan and bring it to a boil. Recipe with grapes

Apple compote with the addition of grapes turns out beautiful and tasty. It is recommended to choose dark varieties of grapes. To prepare a three-liter jar of compote you need:

  • 4-5 apples;
  • 1 bunch of grapes;
  • 2 liters of water;
  • 2 cups sugar.

We prepare the jars - wash and sterilize. Wash the fruit. Cut the apples into slices, removing the seeds. Place the slices in jars. Then add the grapes without removing the berries from the grapes. The jars should be filled halfway with fruit.

Prepare the syrup by boiling water with sugar. Pour hot syrup into jars. If there is a little lack of syrup, add boiling water to the jar. Cover the jars with boiled lids. Place the jars of compote in a container for sterilization and pour in warm water. Sterilize three-liter cylinders in boiling water for 15 minutes. After that, roll it up immediately.

Compote of apples and pears for the winter

For the drink, take pears that are not too soft and certainly not “like potatoes.” Even slightly unripe fruits are ideal. Personally, I like the combination of apples with Duchess pears, which just grow in my garden.

For a 3 liter jar you will need:

  • 1.2 kg. apples;
  • 300 gr. pears;
  • 200-250 gr. Sahara;
  • ½ tsp. citric acid (you can use the tip of a knife if you don’t like sourness);
  • 2 mint leaves.

Wash the fruits. We will preserve the apples whole, and cut the pears into halves.

Place apples in sterilized jars. We compact them a little and shake them so that they settle more evenly in the jar.

Place pear halves and mint leaves on top. Fill with boiling water and cover with sterilized lids.

Wrap in a towel and leave for 20 minutes so that the fruit warms up well. When the jars have cooled down and you can easily touch them with your hands, drain the water from them into a saucepan.

We see that there is a little less water in the jars, because the fruits have absorbed some of it. Therefore, you need to add an additional 100 ml of water to the pan for each jar. Add sugar and put the pan on the fire.

The syrup began to boil. Add a little citric acid to each jar, fill it with boiling syrup to the brim and roll it up.

Now we need to turn the jar over, wrap it well, and until it cools completely it will stand in this position.

Such preservation can be stored both in the basement and in the room.

Apple compote with chokeberry

You can prepare apple compote with the addition of chokeberry.

  • 400 gr. apples;
  • 300 gr. chokeberry;
  • 2.5 liters of water;
  • 300 gr. Sahara;
  • 0.25 teaspoon of citric acid.

Prepare jars and lids. We wash the jars well and sterilize them in any convenient way. Wash the lids and soak in boiling water for 5 minutes.

Wash the rowan berries and apples well. Pour the berries into jars, for each liter of volume you need 100g. berries Cut the apples into slices, removing the seed boxes.

Boil water and pour into jars in a thin stream. Cover with lids and leave for a quarter of an hour. Pour sugar into the pan according to the norm and add citric acid. Pour water from jars onto sugar. The rowan juice will turn it pink. Bring the syrup to a boil, simmer for a couple of minutes. Pour the boiling syrup into the jars and immediately seal the jars tightly. Cool under a fur coat.

Lingonberry compote with blueberries “Forest Girlfriends”

A drink in which the beneficial properties of lingonberries are enhanced by the powerful healing effects of blueberries. This wild berry contains a very strong antioxidant anthocyanin; it not only gives the fruit a dark color, but is also capable of intensively removing harmful substances from the body. In addition, blueberries have a beneficial effect on the digestive tract, having a bactericidal effect, inhibiting all putrefactive processes. However, the point is not only in the benefits of this duet: when we walk through the forest, we usually pick one or the other berry, the two berries mix in the mouth, this is the taste of the summer forest, which is what blueberry-lingonberry compote can preserve.

Ingredients:

  • Lingonberries – 0.3 – 0.4 kg
  • Blueberries - the same as lingonberries
  • Sugar – 3-4 tablespoons
  • Water – approximately 1.2 l
  • Lemon zest – 1 teaspoon
  • Lemon juice – 1 tablespoon

Cooking process:

  1. Sort through the berries, remove damaged and unripe fruits, rinse thoroughly and leave the berries in a colander so that the fruits dry well and all the water is gone;
  2. Make sugar syrup: pour 1.2 liters of water into an enamel container, stir in the amount of sand indicated in the recipe or according to your own taste, add lemon zest; Stir constantly until the water begins to boil and all the sugar has dissipated;
  3. Pour berries into syrup, cook for 5-7 minutes;
  4. Pour the hot drink into sterilized jars and roll up;
  5. Place the jars upside down, cover with something warm, let the jars cool and check the tightness of the seal.
