Quick cheese flatbreads
We present to you a recipe for cheese flatbreads, made in a frying pan in a matter of minutes. To create a dish you need to have:
- one tsp. Sahara;
- salt (0.5 tsp);
- soda (0.5 tsp);
- 250 ml (glass) kefir or unsweetened yogurt;
- 400 g flour;
- 250 g of hard cheese (you can take “Suluguni”, high-quality processed cheese, and so on).
Pour baking soda, sugar and salt into yogurt or kefir at room temperature. Stir and set aside for 10 minutes. If 8 minutes after this you put a frying pan on the fire, then the first product will be on it in 15 minutes.
While the dough is rising, make the cheese. Grate it on a fine grater. It is known that you can cook without oil in a Teflon-coated frying pan. In this case, you can grate the cheese on a coarse grater. These cheese pieces will melt in the flatbread and create original cheese holes. But if you cook in a simple frying pan, the oil will get very hot and the coarsely grated cheese will burn.
Do you use cream cheese? Freeze it in the freezer ahead of time to make it easy to grate. Add flour to liquid and knead into a soft dough. Pour the cheese into it and mix lightly.
Now divide the dough into three parts. From each, make a flatbread the size of the pan. Heat the oil, reduce the heat to medium and add the tortilla. Prick it with a fork so that large bubbles do not appear during frying and the product rises evenly.
Fry covered until browned on both sides. At the end of cooking, remove the lid and increase the heat. As a result, you will get a crispy crust. Place the product on a towel or paper napkin and remove excess fat. Cheese cakes are ready!
Cheese flatbreads in 5 minutes
If you want to pamper your household with something delicious, but you simply don’t have time for complex preparation, then bake cheese cakes. Kneading the dough will take about 5-10 minutes, but the bread can be served with tea, as a first or main course instead of bread, or just as a small snack.
To knead the dough, you need a small set of ingredients. If desired, additional ingredients can freely go there: greens, ham, vegetables, mushrooms, etc. There are various recipes for cheese cakes in 5 minutes:
- kefir based;
- with fresh or sour milk.
How to prepare cheese flatbreads in 5 minutes (recipe with photo)?
Kefir base for cheese cakes
Let's start with the simplest recipe for flatbreads without filling.
For the test you will need:
- 2 tbsp. flour;
- 1 tbsp. grated hard cheese;
- 1 tbsp. kefir;
- a pinch of salt;
- 0.5 tsp. sugar and the same amount of baking soda;
- vegetable oil for frying.
Preparation:
- To better dissolve the seasonings, first dilute salt, sugar and soda in kefir. Please note that the soda will react with the fermented milk product, the kefir will foam and “fizz”.
- Add shavings of hard cheese.
There are no special recommendations on the variety; it can be any cheese product available in your refrigerator, including a mixture of cheeses of different varieties (for a piquant taste). - The next and final ingredient is flour. Mix well.
- Bring the dough to a plastic mass that does not stick to your hands. Divide it into small portions. Then each piece should be rolled out to a thickness of several millimeters (the thickness of the cake depends on how crispy the cakes should be).
- The frying process is the simplest: place the pieces in a hot frying pan with oil and fry on both sides until cooked. It is recommended to keep the fire low and cook with a lid.
Fluffy milk-cheese flatbreads
Cheese cakes can be prepared without kefir, say, cheese cakes with milk. Here you can use fresh dairy product or sour milk that you have. The amount of lactic acid determines what other ingredients should be added to the dough to make the cakes fluffy and not rubbery.
Ingredients:
- 2 tbsp. flour;
- a pinch of salt;
- 2 tbsp. l. vegetable oil (in dough);
- 0.5 tbsp. fresh milk;
- 0.5 tbsp. finely grated hard cheese.
Fillings and flavorings
As we already mentioned, cheese cakes without kefir can be prepared with filling. This will add additional flavor to the dish. Most popular supplements:
- finely chopped or grated ham;
- smoked sausages;
- cottage cheese, feta cheese, suluguni, cheese mixtures;
- greens (including onions);
- finely chopped or grated boiled eggs;
- stewed sauerkraut;
- chopped, lightly sautéed mushrooms;
- grated, sautéed carrots;
- potato filling;
- fried meat, liver, liver mince.
In general, all those food leftovers that you have lying around in your refrigerator. Roll out portions of dough prepared according to one of the proposed recipes into shortcakes no more than 10 mm thick.
In the middle of the crust we put a portion of the filling, we don’t regret it. We fasten the ends of the dough (like pies) so that the filling does not leak out. Again, lightly pass with a rolling pin to give the semi-finished product a flatness.
Fry or bake as suggested earlier.
Some recommendations for filling
- Try to chop the filling ingredients as finely as possible so that the edges do not break through the dough when rolling out the filled flatbreads.
- It is desirable that the filling be dry, but not crumbly. Otherwise, crumbs may fall out when biting.
- It’s better to “degrease” fillings that have been fried on a paper towel - why do you need extra calories?!
- If you use ham that has already been sliced, then you can not chop it, but use it as a sheet layer.

First, lightly beat the eggs. Add sour cream and flour to them and beat everything until smooth. Grate the cheese, chop the herbs with a knife and combine it all with the whipped mass. Add salt to taste and stir so that the cheese is distributed throughout the entire volume.
Pour a little oil into a frying pan with a diameter of 26-28 cm and heat it. Then pour in the prepared mixture and fry on each side for 8 minutes. over medium heat. Turn the tortillas carefully as they may tear. This is best done with two spatulas.
Instructions
- In the evening, mix flour, salt, sugar, yeast. Add water, vegetable oil, egg. We knead a loose dough, put it in a bowl of sufficient volume, cover the bowl with cling film and leave it overnight in a cool place (for me this is usually a pantry - there is approximately the same cool air temperature at any time, I recommend that you find your place in your home by experience ).
- By morning the dough will rise and perhaps even fall a little - this is normal. Our goal is not to bake a luxurious bun, so this format suits us quite well. Gently place the dough on a floured work surface and use a bench scraper to divide it into 4 pieces. Fold each of them slightly, giving the shape of a circle. Place on a sheet of baking paper and stretch into a thin circle using your hands or a rolling pin. Leave for 15 minutes, covered with a towel.
- While the dough is proofing, grate the cheese and mix. Sprinkle it evenly over the flatbreads.
- Bake at 200 degrees for about 15 minutes each.
- Remove from the baking sheet. Cut into segments.

Flatbread with filling
Let's study another recipe for cheese cakes made with kefir, but with filling. To create a test you need to have:
- three glasses of flour;
- one tbsp. (250 ml) kefir;
- one tbsp. (150 g) hard cheese (grated);
- one tsp. Sahara.
To create the filling you will need the following components:
- 300 g mushrooms;
- 250 g cauliflower;
- one onion;
- a couple of eggs;
- 0.5 tsp. salt;
- cayenne pepper;
- vegetable oil
The main ingredient of the filling is the ringed cap mushroom. First, peel the mushrooms from the films, cut them and wash them. There is no need to soak them. Next, boil the cauliflower inflorescences and mushrooms and let the water drain. Now start preparing the filling. First, fry the mushrooms without oil until the water evaporates.
Next, pour oil into the mushrooms. Chop the onion and send it there. Fry a little. Finely chop the cabbage and add to the pan. Salt, pepper and fry until done. At the end of frying, break the eggs into the filling.
Start preparing the dough. Pour kefir into a bowl, add cheese, sugar and flour. Mix everything well. Knead the dough on the table and divide it into 8 parts. Next, divide each part into two and roll out with a rolling pin.
Place the filling on one rolled out sheet, cover with the second and seal the edges. Press the flatbread down and smooth it out with flour. Heat a frying pan and fry in vegetable oil until golden brown on each side for 2.5 minutes. While one flatbread is frying, make another. Serve cheese cakes with thick 20% sour cream.
Flatbread with cheese and herbs in a frying pan

- Beat 2 eggs into a deep bowl and add 2 tbsp. l. with a heap of sour cream, 50 g of milk, a pinch of salt. Stir the mixture until smooth.
- Sift 4 tbsp into a separate bowl. l. and 0.5 tsp. baking powder. Stir and add to egg mixture. Knead the dough. We need to get a pouring homogeneous mass that resembles sour cream.
Using the same recipe, you can prepare cheese cakes with kefir in a frying pan. Just add it instead of sour cream in the same amount.
- In a separate bowl, mix 3 tbsp. l. breadcrumbs and 1 tbsp. l. vegetable oil.
- Grate 150 g of hard cheese. Wash and chop a bunch of green onions.
- Heat a frying pan over heat, grease it with 1 tbsp. l. vegetable oil. Sprinkle with 2-3 pinches of breadcrumbs to form a thin layer. Pour the dough on top and spread in a thin layer over the entire bottom of the pan.
- Sprinkle half of the chopped onion on top, then half of the grated cheese and pour the dough on top. Sprinkle with breadcrumbs. Cook over medium heat until golden brown on both sides.

- cow butter.
So, add soda, sugar and salt to kefir. Stir well. Now add cheese, finely chopped meat (can be replaced with ham), chopped dill. Mix with flour and knead the dough. Divide it into equal koloboks (you get 10 pieces).

Flatbread with cheese in Abkhazian style in a frying pan
Incredibly delicious cheese flatbread in a frying pan comes out according to an Abkhazian recipe. In Abkhazia itself this dish is called “achash”.
The first step is to prepare the starter:
- 1 teaspoon of quick-acting yeast, a little sugar and flour are dissolved in a small volume of heated water;
- stir and leave for 20 minutes.
When the starter starts to bubble, you can start preparing the dough:
- 1 kilogram of flour is sifted in a heap directly into a bowl;
- a hole is made at the top;
- leaven is poured into the hole;
- everything is salted;
- 2 eggs are beaten;
- add 500 milliliters of full-fat kefir and 200 grams of melted butter in small portions;
- The dough is placed in the cold to mature.
In the meantime, the filling is being prepared: 800-900 grams of Adyghe cheese are crushed and added with salt if necessary. Identical balls are formed from the dough and separately from the cheese. The dough balls are rolled out and lumps of filling are placed on them. The edges are lifted up and pinched. Roll out again to a thickness of 1-3 centimeters.
Achash is fried covered in oil. The product turns out very lush.
With greens
A very good recipe with a photo of cheese cakes made in a frying pan with herbs. To create this dish you need to have:
- 100 g hard cheese;
- two eggs;
- a couple of tbsp. l. sour cream (high fat content);
- greens (to taste);
- salt (to taste);
- three tbsp. l. flour;
- vegetable oil (for frying).
Lightly beat the eggs and combine them with sour cream and flour. Mix everything well. Finely chop the greens and add to the mixture. Using a medium grater, grate the cheese and mix it with the mixture so that it is distributed evenly throughout the entire volume.
Heat a frying pan, pour a little oil into it and pour in the dough. Spread it in an even layer and fry over medium heat for 8 minutes on each side.
Use two spatulas to carefully turn the tortillas over to prevent them from tearing. Place the finished products on a plate and serve.
Flatbread in a frying pan without kefir
This dish can be prepared without sour milk, for example, with fresh milk. In fact, this is a classic recipe, so I decided to add a twist to this dish. Carefully read the step-by-step description of the recipe with delicious photos and you will succeed.
Ingredients for flatbreads with cheese and herbs:
- 400 grams of warm milk.
- ½ spoon of soda.
- 1 tablespoon egg.
- 1 spoon of white sugar.
- 1.5 spoons of table salt.
- A little bit of any herbs or green onions.
- 300 grams of cheese.

Pepper, salt, place the mixture in a mold greased with vegetable oil. Bake for 10 minutes in an oven preheated to 200°C. Sprinkle the finished dish with capers, drizzle with balsamic cream and serve with marinated salmon.
Cheese universal flatbreads
Recipes with photos of cheese cakes with kefir are presented in the article. How to make universal flatbreads? To create them you need to have;
- 120 g hard cheese;
- one and a half tbsp. flour;
- one tsp. baking powder;
- one tsp. mustard powder;
- one tsp. salt;
- 60 g cow butter;
- 0.5 tbsp. milk;
- flax seeds.
Grate the cheese on a fine grater. In a bowl, mix all dry ingredients: salt, flour, mustard powder, baking powder. Add chopped cow butter to them and grind everything into crumbs with your hands. Then add milk and grated cheese, knead into a soft dough.
Next, roll out the dough into a thin layer and cut out flat cakes with a glass. Place them on a baking tray lined with baking paper, brush with milk and sprinkle with flax seeds.

Cheese cakes on kefir with delicate filling in the oven
Let's prepare the following components:
- Hard cheese (can be Dutch or Russian) - about 400 g;
- Kefir - a glass;
- Butter – 50-60 g;
- Baking powder - a couple of tablespoons;
- Soda, salt - half a teaspoon each;
- Flour - approximately 250-300 g.
- For the filling you will need 200 g of cheese, herbs, a clove of garlic and black pepper.
First you need to prepare the cheese. We grate it.
Next, take a suitable container and add flour, salt, baking powder and a piece of butter. The butter needs to be chopped a little with a knife or kneaded thoroughly with a fork. After this, add the shredded cheese and mix vigorously.
In parallel with preparation, you must remember to turn on the oven. We set the temperature to 200ºС.
After this, pour in a glass of kefir and mix thoroughly again. Knead the dough, which we then divide into 5-6 parts and roll out.
Quickly prepare the filling: mix the chopped cheese, herbs and garlic and place about one or two spoons on each pancake. Seal the edges and place the cakes on a baking sheet. After 20 minutes, take out the baking sheet and delight your loved ones with a tasty and simple dish.
With red onion and pear
To create this dish you need to have:
- 500 g puff pastry (ready-made or store-bought);
- three pears;
- four heads of red onion;
- 50 g blue cheese;
- 200 g Mozzarella cheese;
- 250 g Dutch cheese;
- vegetable oil;
- pepper, salt, honey.
Thaw the puff pastry. Peel the onion, cut into thin rings and fry in vegetable oil until tender. Season it with pepper, salt, and add a little honey. You should end up with fried, lightly caramelized onions. Cool it down.
Now peel and slice the pears and crumble the blue cheese. Roll out the dough. Cut out cakes from the dough (you should get 14 pieces), place them in molds moistened with cold water. Next, add red fried onion and sprinkle with Dorblu cheese.
Now add the pear pieces. Cover them first with a slice of Mozzarella cheese, and then with Oltermani. Bake until done in an oven preheated to 190°C. It must melt, but retain its shape. The result is a soft cheese cap. The combination of tender pear, cheeses and caramelized onions is very original and stylish. Eat for your health!
