Prunes: properties

First, let's talk about the benefits of this wonderful product. The fact is that not all plums are suitable for producing valuable dried fruit. The Russian fruit grower Kochanovsky loved to talk about a funny incident that happened to him in the city of Tours. He arrived there to get acquainted with prunes - the pride of France! And this city at the beginning of the last century was a center of tourism.

And every store had baskets of dried fruits on display.

There were colored labels right there. On them, a round plum of the Renclod green variety shone with yellow sides, so that tourists would know what prunes come from. Kochanovsky laughed heartily at the labels, which surprised the traders a lot; they seriously thought that the prunes were dried from green Renklod.

In fact, it is impossible to get prunes from yellow plums. It is better if the fruits are small, 30-40 g large ones are more difficult to dry, have a deep blue color to the point of blackness, with a thin bluish coating of wax, dense skin, it should not crack and small bones.

Most dried fruit varieties, of course, are recommended for the southern regions. And only two can produce prunes outside the subtropical Caucasus. This variety meets all the standard requirements for prunes: fruit weight 30-35 g, purple-brown color, sweet pulp, good taste.

The fruiting period begins 3-4 years after planting. Plums ripen from the second half of August to mid-September.

The variety is self-fertile and does not require pollinators.

And although we use the same products, the cooking method will be slightly different.

How to cook stuffed prunes

For this recipe for prunes with walnuts in sour cream, you need to chop the nuts again, but not too finely. Then fill each prune with crushed nuts. To do this, make a small cut on the side of each dried fruit and carefully place the crushed nuts there using a fork or your fingers. For one prune, depending on its size, 1-2 nuts will be enough.

Whip the sour cream with powdered sugar, as in the previous recipe, and then put half of the mousse into the bowls. How to make prunes

The benefits of any dried fruit, including prunes, become questionable if they are treated with various chemicals that improve the appearance of the delicacy and facilitate their long-term storage. There are many ways to recognize organic dried fruit, but the surest way is to cook it yourself. First of all, you need to decide which method you want to use to turn plums into prunes. After all, this simple process requires not only time and patience, but also the right equipment. The easiest and least expensive way is to dry the fruit in the sun. In favorable weather, it takes from 3 to 5 days, but you must be sure that during this entire period the air temperature will not fall below 30 degrees and the humidity will be relatively low. Agree, such conditions do not always exist in Russian latitudes. You will also need special wooden screens covered with gauze or mesh for air circulation and protection from insects. The safest option is a small convection oven with temperature control from 50°C or a special dehydrator-dryer. And the most common way is to dry the fruit in a conventional oven with ventilation. Whichever option you choose, you will need to pre-treat the fruit. Take strong, ripe plums, without dark spots, dents or wormholes. Boil water in a large saucepan, and at the same time prepare a container with water, but cold, with pieces of ice. Place the plums in boiling water for 1-2 minutes, remove them with a slotted spoon and place them in ice water. This process is called blanching. Dry the fruits on paper towels.

On an industrial scale, plums are treated with sulfur bisulfite before drying to avoid discoloration and give the fruit a glossy appearance. But at home it is much easier to achieve the same result by using a honey solution. Mix 1 part honey with 2 parts hot water, wait until the honey is completely dissolved and the syrup has cooled. Soak blanched plums in this solution overnight. The honey syrup should completely cover the fruit.

Using a convection oven or dehydrator, dry fruits according to instructions. Heat an ordinary oven to 50-55°C, then open the door slightly so that moisture from the fruit does not accumulate in the oven, and put a fan to ensure air circulation. Place the plums on a baking sheet in a single layer covered with baking parchment. Turn the fruits over every 30-60 minutes, dry the prunes for 8-12 hours.

To dry the fruits in the sun, place the plums on gauze trays and place them outdoors. Rotate screens every few hours. At night, remove dried fruits indoors.

Place the prepared prunes loosely in glass or transparent plastic jars and close with lids. Keep dried fruits sealed for 7-10 days. Shake the jars once a day. If you observe a lot of condensation on the walls of the jars, the fruits will have to be dried. If there is not much of it, then wait until the so-called “conditioning” occurs, when the wetter fruits give up excess moisture and the dry plums absorb it. After complete drying, transfer the prunes into containers or linen bags.
