Origin
It is almost impossible to trace the origin of such a simple dish as boar's knee. Nevertheless, it is generally accepted that it was born precisely in the 11th century. When choosing how to spend their leisure time, rich people most often chose hunting. This pastime ended with a ceremonial meal at which the hunted animals were tasted. One of the dishes of such a feast was boar's knee - the baked left limb of a killed boar, pickled the day before.
