Buckwheat noodles with chicken and vegetables. How to cook buckwheat noodles with chicken and vegetables

Today, I want to offer a recipe for one of the traditional dishes of Japanese cuisine - soba with vegetables and chicken. Soba is noodles made from buckwheat flour. In Japan, the word “Soba” is used to describe different types of thin noodles, so to clarify, buckwheat is called “nihonsoba.”

Asians love combining buckwheat noodles with different foods, such as mushrooms, vegetables, legumes, meat or seafood. My family also loves oriental dishes. Most often, I cook buckwheat noodles in combination with tender chicken breast, champignons, bell peppers, carrots and onions. The product range is very popular and affordable.

And the end result is a very light, bright and tasty dish - soba noodles with chicken and vegetables!

Ingredients:

  • 100 g buckwheat noodles;
  • 200 g chicken breast;
  • 1 bell pepper;
  • 150 g champignons;
  • 1 onion;
  • 1 carrot;
  • salt, pepper - to taste;
  • 50 g soy sauce;
  • 1 tbsp. l. rice vinegar.

1. Wash the chicken breast in running water, dry it with paper towels and cut into small slices.

2. Fry the meat for 3-4 minutes in a hot frying pan with vegetable oil until golden brown. Season with spices.

3. All vegetables: carrots, onions and bell peppers, washed, peeled and cut into thin strips.

4. Place carrots and onions in the frying pan with the meat. Mix. Cook over medium heat for 2-3 minutes.

  1. For a good tasty dish, you need to choose high-quality buckwheat soba noodles. If soba was made only from buckwheat, it would fall apart very quickly. That's why the noodles contain wheat flour. And in some regions of China and Japan, seaweed and green tea are added to soba. But it’s worth paying attention that good quality noodles should contain more than 30% buckwheat flour.
  2. You should be careful with salt. Chicken with vegetables should not be thoroughly salted, since the dish comes with a dressing that includes soy sauce. And it itself is very salty.
  3. Instead of champignons, you can take shiitake mushrooms, which will fit very harmoniously into a dish like soba with mushrooms.
  4. A good addition to vegetables would be green beans (you can use frozen) and celery. And if you like it spicy, then half a chili pepper will make your dish fiery.
  5. Any long noodles boiled in a saucepan run the risk of turning into one sticky lump. To prevent this from happening, there is one little trick. Just add a little vegetable oil to a pan of boiling water and follow the time indicated on the package.

The recipe for soba noodles with chicken is not at all complicated, but you will definitely be able to diversify your menu and pamper your household!

Japanese national cuisine is becoming increasingly popular here too. This is not surprising, because the inhabitants of the Land of the Rising Sun are distinguished by their health, longevity and look good even in old age.

All this is the result of a healthy diet. One of the traditional dishes of their cuisine is buckwheat noodles, which appeared on the Russian market not so long ago, but has already gained popularity among consumers. In Japanese this dish is called "soba".

Buckwheat noodles

Buckwheat noodles are a traditional Japanese dish. Over the course of several years, this dish has gained immense popularity among fans of proper nutrition. Buckwheat noodles are combined with vegetables, seafood, and various sauces. Being a low-calorie dietary product, it often becomes a permanent element of the weight loss menu.

A traditional dish

Japanese housewives consider only a product prepared on their own to be real buckwheat noodles.

Those types that are sold in the store may contain additional components that do not correspond to the traditional recipe. The “correct” product contains only buckwheat and rice flour in a 2:1 ratio and a little water.

The dough is rolled out into a thin layer and cut into strips with a sharp knife. The result is traditional noodles or soba, as the Japanese call it.

The product can be prepared for future use. The cut strips are dried, placed in a linen bag and put away in a dry place where cereals and groceries are stored.

If it is not possible to prepare large quantities of soba at home, when purchasing in a supermarket, you must carefully study the composition before purchasing.

The absence of sugar, dyes and preservatives is a must. In addition, some manufacturers, in order to reduce the cost of the product, add wheat flour to the dough.

Obviously, such a dish cannot be considered healthy and cannot be used in a healthy diet.

Externally, regular buckwheat noodles resemble the usual spaghetti and vermicelli, differing only in color. Soba has a darker hue, similar to ground buckwheat. The price of the product differs significantly from regular pasta. Too low a price should alert you and become a reason to once again thoroughly familiarize yourself with the composition on the label.

Beneficial features

Soba is very easy to prepare and behaves well both on the stove and when processed in a slow cooker or microwave. For a modern housewife, this is an indispensable product when you need to have time to prepare a tasty and healthy dinner for your family. But the most important benefit is that it retains all the unique properties of buckwheat.

Dishes from this product contain:

  • Minimum amount of fat and calories;
  • Antioxidants that support the condition of blood vessels, speed up metabolism, help the body recover from stress, and replenish iron deficiency;
  • Vitamin B1, which protects the body from overload, has a positive effect on metabolic processes, supports the nervous system, and maintains heart health;
  • Diheme iron, which helps avoid anemia, which is especially necessary in childhood and during pregnancy, as well as in the older generation.

Such noodles are digested much faster than dishes made from regular cereals. It is also recommended to be included in the diet of athletes to quickly restore energy. This is an indispensable thing for those who adhere to the principles of proper nutrition. By including soba dishes in your menu several times a week, you don’t have to worry about your figure and extra pounds.

For weight loss

One serving of the finished dish contains no more than 150 calories. Soba can be safely included in the list of foods for weight loss. Although some are of the opinion that carbohydrates cannot help get rid of extra pounds. This is argued as follows:

  • Carbohydrates slow down metabolism and prevent fat burning;
  • Buckwheat noodles are quickly digested and cannot relieve hunger for a long time.

In fact, such statements have no basis. The body needs the right carbohydrates to maintain thyroid function. And malfunctions in its functioning, in turn, significantly slow down metabolism and prevent weight loss even with a calorie deficit. Substances contained in buckwheat have a positive effect on hormonal balance.

If you follow the serving size and prepare it correctly, soba is very useful for weight loss. Of course, noodles by themselves will not burn fat. But not a single product has this property.

Another important quality of the product is the absence of contraindications. It is recommended to be used at any age. Buckwheat flour does not cause allergies. In rare cases, due to increased “stickiness”, it can slow down intestinal function. Therefore, those who suffer from constipation need to include in their diet those foods that compensate for this property.

Recipes

The noodles are boiled in the usual way. Pour water into a container with a volume 4 times greater than the amount of dry product, bring it to a boil and lower the bunch according to the spaghetti principle.

During cooking, you can add a little salt, soy sauce or Japanese vinegar. You can do without spices at this stage, and add seasonings during further preparation.

The finished boiled soba is placed in a colander, allowed to drain a little and dry.

There is one easy way that will help you measure the amount of noodles per serving without any extra effort. To do this, take a bunch of pasta and see how much fits into the neck of a half-liter plastic bottle. This indicator is, of course, conditional. For those who adhere to a diet, the serving size can be taken a little less. But on average, you can focus on this method.

With vegetables and chicken

To prepare the dish you will need:

  • Bell pepper;
  • Bulb;
  • Several stalks of green asparagus;
  • Pickled ginger;
  • 400 g chicken fillet;
  • Buckwheat noodles.
