  • Eggplants – 2 pcs.
  • Minced meat – 500 g
  • Hard cheese – 100 g
  • Onion – 1 pc.
  • Carrots = 1 piece
  • Bun – 1 slice
  • Milk – 3 tbsp.
  • Vegetable oil – 100 ml
  • Spices – 1 tsp.
  • Salt - 2 tsp.
  • Sesame – 1 tbsp. (not necessary)

Preparation:

1. Wash the “blue ones”, cut off the stalk. Cut into longitudinal, thin slices. Sprinkle with coarse salt. Using your palm, lightly rub the salt over the surface on both sides. We leave the “little blue” ones so that they release the juice and all the bitterness goes away. Then rinse under cold water and dry with a paper towel.

2. Heat a frying pan, pour a little vegetable oil and fry the plates on both sides. There is no need to fry too much. It is enough for the plates to become a little softer.

3. Now we begin to prepare delicious minced meat. To begin, sauté chopped carrots and chopped onions in the same frying pan. We will add the fried vegetables to the meat a little later.

4. Take 500 g of minced beef and pork. Add salt and ground black pepper to it, a little grated onion. Soak a slice of white bread in milk and add it to the filling. We also add our fried carrots and onions here.

5. Take a baking sheet and immediately start preparing the eggplants with filling. Place the well-mixed minced meat in portions with a tablespoon on one end of the plate, and cover it on top with the other half. The meat can be rolled into cutlets, then the product looks more neat.

6. The eggplants are almost ready for baking. All that remains is to sprinkle them with grated hard cheese and put them in the oven. Bake them at 180 degrees for 25 minutes.

In addition to cheese, the product can be sprinkled with sesame seeds. They add a nutty flavor to the dish. In addition, we should not forget that they are the richest source of calcium. The seeds contain 800 mg of this macronutrient. For comparison, milk contains 113 mg of calcium per 100 ml. So sesame will come in very handy in our “cutlets”.

Let's take for the recipe:

  • Eggplants – 500 g
  • Minced meat – 300 g
  • Tomatoes – 250 g
  • Onions – 150 g
  • Hard cheese – 100 g
  • Garlic – 3 cloves
  • Vegetable oil – 2-3 tbsp.
  • Paprika – 1 tsp.
  • Salt, pepper - to taste

Preparation:

1. Wash the fruits under running water. Cut off the ends that are not needed for eating. Cut in half lengthwise.

We make cross-shaped cuts in the flesh of the halves. Then scoop out all the pulp with a tablespoon and transfer it to a bowl. We will still need the pulp.

After removing the core, indentations appeared that resemble boats. We will fill them with minced meat, which we will prepare now.

2. But before that, let’s salt our boats so that they release the juice and all the bitterness goes away. Place the halves as shown in the photo to allow the liquid to drain.

3. Let's start preparing the minced meat. First of all, pour vegetable oil into a heated frying pan and fry the pre-chopped onions. Following this, squeeze out the garlic with a press and also add it to the frying pan.

4. When the onion becomes transparent, add the minced beef to the frying pan.

5. We will fry the meat and onions for 10 minutes, chopping pieces of minced meat with a spatula and stirring constantly.

6. Salt the filling to taste, add ground black pepper and 1 teaspoon of sweet paprika. After this, add chopped tomatoes and eggplant pulp to the frying. Fry for another 10 minutes until done.

7. While the minced meat is fried, let's return to our boats. Juice came out of them. Now they need to be washed in cold running water and dried a little with a paper towel.

Now we begin to fill the boats with the finished filling. Immediately place the products on a baking sheet greased with vegetable oil.

8. Preheat the oven to 180 degrees and place our workpiece in it for 30 minutes. Then take out the almost finished baked eggplants and sprinkle them with grated cheese.   • eggplants – 500 g;
  • tomatoes – 250 g;
  • beef or mixed minced meat – 250 g;
  • onion – 120 g;
  • coriander – 4 g;
  • cheese – 120 g;

  • garlic – 1 clove;
  • refined vegetable oil – 25 g;
  • pepper.

Cooking method

  • Prepare the eggplants by slicing them lengthwise and scooping out the seeds. Sprinkle with salt and leave for 15 minutes. Then rinse in cold water and pat dry with a napkin.
  • Chop the onion and garlic. Cut the tomatoes and the pulp removed from the eggplants into cubes.
  • Fry the minced meat in oil. Add onion and garlic, cook for 1-2 minutes. Add tomatoes and eggplant pulp. Fry until the vegetable juices evaporate. Sprinkle with spices. Stir. Remove from heat and cool until warm.
  • Fill the eggplants with minced meat. Place on a greased baking sheet. Sprinkle with grated cheese.
  • Bake in the oven for 35 minutes at 180°.

I’ll tell you a secret that this dish is very simple to prepare, but it makes an impression with its unusualness and interesting appearance. And of course, it is very tasty. Let's take for the recipe:

  • Eggplants – 5 pcs.
  • Chicken breast fillet – 2 pcs.
  • Tomatoes – 4 pcs.
  • Hard cheese – 150 g
  • Dried garlic – 2 tsp.
  • Khmeli-suneli seasoning – 1 tsp.
  • Dried basil – 1 tsp.
  • Salt, pepper (red, black) - to taste
  • Olive oil – 2 tbsp.

Preparation:

1. First, prepare the eggplants. Let's wash it and cut off the tail. Then we cut the fruit longitudinally into plates 8-10 mm wide. But we do not make the cut all the way, leaving about 1.5 cm intact on the side where the stalk was.

In other words, on one side the fruit remains intact, and the petals open easily. Many housewives do not cut off the stalk at all and all the plates are held on it.

2. Next we move on to chicken meat. Cut the breast into small pieces and leave on the table. We take a kitchen hammer and beat the meat to get thin plates. When beating, it is best to cover pieces of meat with cling film, otherwise small pieces may fly around and stain your entire table.

Now mix the prepared dry seasonings together, add a teaspoon of salt and sprinkle on our meat. Place the pieces in a bowl and let them marinate at least a little.

3. Lightly grease each eggplant plate with the same crushed seasoning. And the fun begins - between adjacent plates we place pieces of meat, then tomatoes, then cheese.

4. As the eggplants are filled with filling, the eggplant fan becomes more and more noticeable. Place the stuffed fruits on a baking sheet. If you have a non-stick mat, cover the bottom of the baking sheet with it. For those who don’t, grease the bottom with vegetable oil.

5. Now we sprinkle the workpiece with olive oil on top and sprinkle with sesame seeds to give a light nutty aroma to our dish. Place the baking sheet in an oven preheated to 170 degrees for 40 minutes.

4. Add the eggplant to the pan, stir, cover and cook, covered, until the eggplant is done. Stir occasionally to prevent the onion from burning.

5. About three minutes before the end of frying you need to add salt and pepper, you can add a pinch of sugar, which will make the taste of the dish richer.

It's always interesting to learn something new for yourself! I’ve never cooked eggplant with Turkish minced meat. It is especially interesting to learn about this first hand, i.e. from Turkish housewives. I'm lucky! I found a video where an elderly Turkish woman shows the entire process of preparing the dish. Simple, homely. The woman’s tired hands speak for themselves - apparently, the family is large and she feeds everyone nourishingly and tasty!   • Eggplants – 5 pcs (medium)
  • Minced beef – 250 g
  • Onions – 4 pcs.
  • Garlic – 2 cloves
  • Sweet pepper (green and red) – 250 g
  • Parsley – 30 g
  • Vegetable oil 100 ml
  • Salt, ground black pepper - to taste
  • Sugar – 1 tbsp. sugar without top
  • Tomato paste – 2-3 tbsp.

Preparation:

1. Let’s wash the “little blue ones.” We clean them in a special way - cut off one strip of skin and leave the other. With this cleaning, the fruits retain their shape well and do not fall apart at high temperatures during cooking.

What is very important is that we leave the tail from the stalk, removing excess greenery. And one more important detail! We make one deep cut along the entire fruit. Don’t ask why, you’ll soon find out for yourself.

2. Place the fruits in a bowl and fill with salt water. This way the fruits will release juice and all the bitterness will go away.

3. Next, generously grease the baking sheet with vegetable oil. In addition, we also grease the eggplants themselves with oil.

4. Place the fruits in an oven preheated to 180 degrees. Bake them for 30-40 minutes until they become soft and golden brown.

5. Now we will prepare the minced meat to make it more delicious. To do this, finely chop 4 onions and begin to fry them in vegetable oil until transparent.

6. Finely chop two cloves of garlic and cut the sweet pepper into slices. Yes, yes, this is not a hot chili pepper, but a kind of sweet pepper. If you don't have one, just use bell pepper. We also add these two components to the onion, mix and fry for another 3 minutes.

7. Now it’s time for the ground beef. Distribute it evenly over the frying pan, chopping the meat with a spoon. Fry it for 10 minutes. Add ground black pepper and salt to taste.

8. All that remains is to add finely chopped red bell pepper. This way the minced meat will look very beautiful. Another 3 minutes and ours is ready.

9. Meanwhile, the eggplants in the oven have browned and become soft. Using kitchen tools - a knife and a tablespoon, open the inside of the baked fruit. Use a spoon to crush the pulp so that there is more space for the minced meat.

10 Fill the baked fruits with minced meat. Decorate with tomato and pepper slices. All we have to do is dilute the tomato paste with water and pour over the eggplants before baking.

11. Dilute 2-3 tablespoons of tomato paste in 200 ml of water, add some salt, and add ground black pepper.

12. Fill the baking sheet with tomato and decorate the eggplants with chopped parsley. Place the pan in the oven at 180 degrees for 30 minutes.
