15. The last layer is tomatoes (they, like onions, will also give a lot of juice).

If the minced meat is weak or very fatty, then you don’t need to add mayonnaise to the filling; season it only with spices.

For this simple recipe you will need:

  • 2-3 medium sized eggplants
  • salt
  • spices or herbs to your taste
  • 40-50 gr. cheese (optional)

Preparation:

2. Before cooking, you need to get rid of bitterness. To do this, place the chopped eggplants on paper towels and salt them on top. Leave for 15-20 minutes. Then wipe or rinse off the salt, this will remove excess juice and bitterness.

3. Set the oven to preheat at 200 degrees. At this time, we begin to place the eggplants on a baking sheet or in a baking dish. Grease all the slices with oil on top to prevent them from burning. Then sprinkle spices on top.

4. Place in the oven and cook for 20 minutes until done. The vegetables should be soft and the edges should be brown and crisp. 5 minutes before readiness, you can sprinkle with grated cheese.

Option 4: Eggplants in the oven with minced meat, tomatoes in circles

For this dish, you can again choose minced meat to your taste, but it should not have a weak consistency. Twisted beef, pork, or a mixture of both are excellent. We choose tomatoes and eggplants of approximately the same diameter so that we get neat circles.

  • 3 eggplants;

This amount of food will be enough for about 3-4 full servings. As a result, the dish turns out to be quite satisfying, it can be used as a second dish: the meat here is immediately cooked with a side dish.

Now it's time to remember the step-by-step recipe for preparing our dish.

  1. First of all, take care of the minced meat. Use chilled minced meat. If you still had to buy frozen, it is recommended to defrost it naturally, at room temperature. If you heat it in the oven, the taste of the final dish will not be as rich. A good solution is to supplement the minced meat with two chicken eggs yourself.
  2. Mix the minced meat thoroughly, add spices and salt. As a result, the mass should be homogeneous.
  3. Start preparing the eggplants. They need to be thoroughly washed and peeled.
  4. Cut the eggplants lengthwise to create identical, beautiful boats. Remove the centers from them and chop them finely.
  5. Rub the eggplants with spices, but not too much.
  6. Take the bow. It also needs to be washed, peeled and peeled.
  7. Cut the onion into medium-thick rings.
  8. Take the cheese. It needs to be grated, preferably using a medium or large grater.
  9. Now you need to take foil and line the baking dish with it.
  10. Place half the onion in the boats.
  11. The second layer is to lay out all the minced meat you have.

  • 2 eggplants;
  • 180 g minced meat;
  • 1 tbsp. l. adjika;
  • 2 tablespoons of oil;
  • 1 clove of garlic;
  • 4 sprigs of parsley;
  • 140 g cheese.

How to cook

Grate the garlic and combine with minced meat. Add a few sprigs of parsley, salt and spicy adjika, mix well, this will be the filling for the circles, set it aside.

For this dish, we do not cut the eggplants thinly; we cut them into centimeter-sized circles. Lightly sprinkle with salt, place on a baking sheet and grease with oil. It is convenient to use a silicone brush. Bake for 10 minutes at 200 degrees.

Remove the eggplants and cover each circle with a thin layer of meat filling. We try to distribute all the minced meat evenly. Then grate the cheese and put it on top. You can simply cut it into thin slices.

Return the eggplants with minced meat to the oven for another 15-20 minutes. Cook at the same temperature, then carefully transfer to a dish and serve with herbs, fresh vegetables, and boiled rice.

You can first lightly fry the eggplants in a frying pan or boil them in boiling water for a minute, and then place them on a baking sheet, add the minced meat and bake. Do not forget to soak the pieces if the vegetable is bitter.

Recipe for eggplants in the oven with tomatoes, cheese and mushrooms

A great recipe that has Slovak roots. For this dish you will need:

  • 2 eggplants,
  • 4 or 5 tomatoes,
  • 3 cloves garlic (finely chopped)
  • Brie/Camembert or other soft cheese,
  • champignons - 200 gr.,
  • some breadcrumbs
  • 40-50 gr. hard grated cheese

Preparation:

1. First, wash the eggplants, cut off the tails and cut them into rings. Remove the bitterness by sprinkling them with salt. Leave for 15-20 minutes, then rinse.

2. Chop the remaining products. While the eggplants are resting, prepare a baking dish. It is better to take a uniform with high sides. Coat the pan with olive oil and sprinkle the bottom with breadcrumbs. The crackers will absorb some of the moisture during baking. Set the oven to preheat at 200 degrees.

3. We begin to put all the ingredients into the mold. Place half the eggplants on the bottom, half the tomatoes as a second layer, then all the garlic, place all the soft cheese on top of the garlic (it needs to be cut into pieces). Then we make another layer of eggplants, followed by tomatoes, and mushrooms on top.

4.Bake all this beauty in the oven for 45 minutes. After 45 minutes, sprinkle the top of the dish with grated hard cheese. Leave for another 10 minutes. And you're done! Bon appetit!

  • 5 eggplants;
  • 200 g champignons;
  • 350 g minced meat;
  • 50 ml oil;
  • 4 cloves of garlic;
  • 160 g sour cream;
  • 200 g cheese;

How to cook

We make boats. To do this, cut all the eggplants into two parts, scoop out the pulp and seeds with a spoon, leaving the skin and about half a centimeter of the vegetable. Immediately cut the pulp into pieces. Grease the inside of the eggplants with vegetable oil and place in the oven for ten minutes.

Cut the onion and champignons into small cubes and pour them into a frying pan, pour into it the oil that remains after coating the eggplants.

Fry the mushrooms for about five minutes, add the minced meat, and after another three minutes the chopped eggplant pulp. Cook for five minutes, add garlic, one spoon of sour cream, stir, add salt.

Fill the eggplant boats with the prepared filling. Use the back of a spoon to compact it a little so that nothing should fall out. Then generously grease with sour cream, bake for half an hour, excess moisture should boil away and the minced meat should brown slightly.

Grate the cheese coarsely. Remove the stuffed boats, sprinkle and bake for another five minutes. If desired, keep the eggplants longer until the cheese browns.

You don’t have to add the scooped out eggplant pulp to the filling, use minced meat with mushrooms, and add the vegetable to stews, caviar, or other dishes.

How to cook “Minced meat with eggplant and tomatoes”

Wash the eggplants and cut them in half, removing the pulp with a knife. Sprinkle the eggplants with salt and let them sit for 20 minutes.

Cut the pulp into cubes and fry in vegetable oil. Then transfer to a separate container.
