For the cold season, quince is simply a godsend; this fruit contains many useful substances, vitamins and microelements, fruit acids and pectins. Quince is used in the preparation of many different dishes, drinks and confectionery products in the culinary traditions of different peoples and countries. Quince can be boiled, stewed and baked.

Here are a few recipes with baked quince. This method of heat treatment, such as baking, is generally one of the most gentle and healthy ways of cooking.

Quince baked in the oven with honey and nuts

Ingredients:

  • quince fruit – 3-4 pcs.;
  • lemon – 1 pc.;
  • cloves – 8 inflorescences;
  • water – 1.5 cups;
  • fortified white wine (vermouth, muscat, sherry, quality port, Madeira) – 0.5 cups;
  • cinnamon (or vanilla, but not both);
  • sugar;
  • any ground nuts – 150-200 g;
  • natural non-liquid honey (or whipped cream).

Preparation

Wash the fruits thoroughly under running water and dry with a napkin. Cut each fruit in half lengthwise and remove the seed pods. Sprinkle quickly with lemon juice to prevent darkening. Place the quince halves in a baking dish (convex side up). Stick a clove inflorescence into each half. Add a mixture of wine and water to the mold, sprinkle with cinnamon and sugar.

How long to bake quince?

Bake the quince for 20-30 minutes at a temperature of 180 degrees C. Turn the halves over and bake for another 10-15 minutes. Cool slightly and remove the clove inflorescences. Place in portions and pour over the syrup formed during baking. You can put a little honey with nuts or with nuts in the cavity in each half of the fruit. This wonderful dessert can be served with white or rose wine, tea, rooibos, mate, hibiscus or cool sweet and sour compote.

You can prepare not only delicious desserts, but also meat baked with quince, for example, chicken or duck.

If you bake a whole duck or chicken carcass, simply stuff it with garlic, then stuff the carcass with thin slices of quince, sprinkled with lemon juice (you can add some spices: cloves, allspice peas, anise and coriander seeds, as well as aromatic fresh herbs, just not dill ). Bake at medium temperature until done, it can be easily determined by appearance. Baking time is at least 60-80 minutes.

You can do it differently and bake pieces of duck or chicken fillet with quince (not necessarily fillet, other pieces can also be used). Goose, turkey, rabbit, nutria, lamb, pork or veal are also suitable.

Sprinkle with spices. Bake in the oven for at least 40-60 minutes (duck, goose longer). Periodically sprinkle with a mixture of water and wine. Quince is a relative of the apple tree, but, unlike it, all varieties ripen in the fall, at approximately the same time: from late September to mid-October. The quality of the fruit depends on the soil in which the tree grows. On poor sandy soils, quince apples are medium-sized, thin and low-juiced; on clayey humified ones - large up to 700-800 g, juicy and very hard. But, whatever the quality of the fruit, quince baked in the oven is always tasty, and the variety of recipes allows you to prepare excellent dishes from any variety.

This is an excellent dessert and an independent dish prepared at home for a second breakfast or afternoon snack, an alternative to pastries and cream pies.

Methods for properly cutting quince for baking with honey:

  • halves;
  • a whole apple with or without a “lid”;
  • rings.

Technologies for slicing the product can be manual or using a combine. The dish can be served warm and cooled, “powdered” with powdered sugar or with a slice of lemon, marmalade and candied fruits.

Short description

Belongs to dicotyledonous flowering plants.
The natural habitat of the species is Japan; the plant is also widespread in Europe and China. Regarding botanical taxonomy, the species belongs to the genus Chaenomeles of the Rosaceae family. That is why Japanese quince is so similar in appearance to many economic Rosaceae that are popular in the garden.

Chaenomeles is a deciduous low shrub, the maximum height of which does not exceed 3 m. Young shoots have a bright color, which over time changes to brownish-black. The scaly-felt structure of the outer integument of mature branches changes to smooth and bare.

The leaves are small in size, obovate or spatulate in shape, tapering towards the base, with a serrated edge. Their length on average does not exceed 5 cm and width 3 cm.

During the flowering period, the shrub is covered with small ones. Their size in diameter does not exceed 4 cm, and the colors are predominantly bright pink or red-orange. The sepals and petals are ovoid in shape.

After flowering, apple-shaped green fruits, almost spherical in shape, appear on the bush, which after full ripening become a delicate yellow hue. The pulp of the fruit is edible, but very hard and dense with abundant inclusions of small brown seeds.

Benefits and calorie content of baked quince

The fruit is rich in potassium, calcium, phosphorus and is necessary for the normal functioning of the heart and musculoskeletal system. When baked, the elements are practically not destroyed, and therefore the product remains very healthy. Baked plant fibers that make up the quince apple normalize the functioning of the gastrointestinal tract. The low calorie content and fructose, which is part of the sugars of the fruit, make it possible to use it for diabetes.

The calorie content of an average quince is approximately 84 kcal. 100 g of product contains 0.5 g of protein, 0.4 g of fat and 9.9 g of sugars. 100 g of baked fruit with sugar contains 193 kcal. Replacing sugar with honey reduces calorie content to 119 kcal per 100 g of dish. Be sure to prepare quince this fall, baked in the oven or microwave, according to one of the suggested recipes, and enjoy the range of its flavors!

I’ll try to look for quince at the market and cook it the way Gayane cooks. In the meantime, I’ll share with you her culinary masterpiece.

Ingredients:

  • quince – 2 pcs;
  • honey – 3 tsp;
