At the request of Tatyana, a reader of the site “Let's cook with love!”, I am pleased to share with you the recipe for “Nuts” cookies with condensed milk , which I converted from non-vegetarian, that is, this option is prepared without eggs. I think many people associate these nuts with childhood, because in Soviet times they were a favorite treat for children.

Despite the absence of eggs in the dough, the cookies turn out simply wonderful - not hard, crispy and very tasty. I make the filling for it from boiled condensed milk, butter and walnuts. You can fill the nuts with just boiled condensed milk, but then you need to make less dough, because one jar of milk is not enough for so many shells.

You need to bake these cookies in a special frying pan (I think many people still have it from Soviet times) on the stove or in an electric nut maker.

How to make choux pastry for nuts

Without having a baking dish for nuts among your kitchen utensils, you can indulge your homemade sweet tooth with sweets made from choux pastry. In this case, the products are formed with an ordinary teaspoon dipped in water.

For a serving of 30 nuts for the choux pastry you will need:

  • 180 ml water;
  • 100 g butter;
  • 2 g salt;
  • 200 g flour;
  • 5 large eggs.

Dough kneading algorithm:

  1. Cut the butter into small cubes, place in a saucepan with a thick bottom and walls, add salt and add water. After this, place the vessel on the fire and bring its contents to a boil.
  2. Add sifted flour into the actively bubbling liquid in one go. Continuously stirring everything, brew the dough until it comes together and a thin film of flour appears on the walls of the container.
  3. Allow the brewed base to cool to 60 degrees, then stir in the chicken eggs one at a time. After this, you can begin to shape and bake the nuts. The oven temperature should be 220 degrees, and the duration of heat treatment should be 30-35 minutes.

The finished nuts are filled with cream from a pastry syringe through a puncture, dipped in hot sugar fudge and rolled in chopped nuts. As a filling, you can take boiled condensed milk or any other type of cream.

Composition of ingredients

To prepare the dough you need to use the following components:

  • butter – 100 g;
  • eggs – 2 pcs.;
  • sugar – 35 g;
  • soda – 3 g;
  • sour cream – 25 ml;
  • starch – 100 g;
  • flour – 350-370 g.

The cream should be prepared from the following products:

  • milk – 250 ml;
  • eggs – 2 pcs.;
  • granulated sugar – 100 g;
  • flour – 20 g;
  • butter – 55 g;
  • vanillin – 1 pack.

Step-by-step cooking process

Recipe:

  1. First, you need to grind the sugar and eggs in a deep bowl until it turns white. Then add softened butter, sour cream, starch, flour and soda. Using a blender, you can knead a homogeneous thick dough from these components.
  2. Before baking the dough pieces, grease the pan with vegetable oil. Small pieces of dough should be formed into balls and placed in the holes on the hazelnut. Then it’s time to cover the flour blanks with the second part of the mold and press tightly. It is recommended to bake the nut halves over medium heat for 5-7 minutes, turning the pan over.

  3. Place the finished flour shells out of the mold and trim the excess dough around the edges with kitchen scissors, if necessary.
  4. To make custard, you need to combine sugar with eggs, flour and vanilla. Then you need to pour cold milk into this mass and whisk everything until smooth.
  5. Place the bowl with the cream mixture on low heat and bring to a boil, stirring constantly. Then cool the cream and add 50 g of butter into it.

With the cooled cream, it’s time to fill the halves of the shells and form the nuts.

What can I add?

Butter in this recipe can be replaced with margarine; this will not affect the taste of the dessert. If it is not available in the kitchen, sour cream can be replaced with mayonnaise.

How to serve a dish

Nut cookies with custard are usually served at the table, both on holidays and on ordinary days. To do this, the dessert should be placed separately in a beautiful vase or in company with other types of baked goods.

Recipe for electric hazelnut

For a nut shell operating from an electrical network, you can use batter, filling the recesses for nut shells with it to about 2/3 of their volume.

To make a liquid batch, you must prepare:

  • 200 g soft butter;
  • 200 g granulated sugar;
  • 5 eggs;
  • 3.5 g salt;
  • 130-150 g flour.

Sequence of actions:

  1. Beat soft butter with sugar for several minutes. Then reduce the speed of the whisk to the minimum, and one by one mix the chicken eggs into the butter mixture.
  2. Salt the flour and mix with the liquid ingredients of the dough. You can also do this with a mixer at minimum speed. The resulting dough must be allowed to stand for 20 minutes, then you can immediately begin baking.

The nuts according to this recipe turn out very tasty and crunchy, but after they are filled with cream and allowed to sit for a while, they become much softer and more tender. To prevent the cookies from becoming too soft, you do not need to use too liquid cream. The ideal option is boiled condensed milk with butter.
