For the dish I used frozen halibut fillets without skin. The fillet is covered with an icy “glaze,” and to get rid of it, I took the fish out of the freezer in advance. And to speed up the process of thawing the fish from the ice, you can put it in a bowl and fill it with water. The ice will quickly leave the fillet and you can begin the marinating process.

So, the fish has completely defrosted, and you will have to work with it carefully, I would even say gently. The fact is that when the ice crust completely comes off the fillet, the fish may break.

Gently wash the halibut fillet and pat dry with a paper towel.

Cut the fish into pieces. My fillet was quite large, so I ended up with 3 pieces. If the fillet is small, you can cut it in half or leave it whole if the size is very small.

I recommend marinating fish with a minimum set of spices and seasonings. Ideally, this is salt, pepper and lemon juice. Halibut is a very tender and fatty fish; there is no point in filling its taste with unnecessary herbs. It’s better to add onions and carrots or make sour cream filling.

I'll show you two ways to cook halibut fillets in the oven. This is halibut fillet with vegetables in a parchment envelope and fish in sour cream filling and, by the way, also with vegetables.

Cut a large onion or two medium ones into thin rings. To do this, I used a special grater, the rings turned out to be very thin, which would not be possible with a knife. I grated the carrots the same way, as thinly as possible. Why do you need to make such a cut? Yes, because the fish cooks quickly, 20 minutes - and it’s ready, but the vegetables may not be ready yet, so I recommend that you make the slices as thin as possible.

While we are cutting vegetables, our fish pieces are soaked in salt, pepper and lemon juice.

Cut out a square measuring 40 by 40 cm from parchment paper. Place vegetables on one part of it, sprinkle with a little salt, and maybe pepper.

Place the halibut fillet on the vegetables.

Cover with vegetables and arrange pieces of butter. Why creamy and not vegetable and olive? It’s just that with this oil, fish and vegetables will melt in your mouth, and the taste will be creamier. Of course, if desired, butter can be replaced with vegetable oil, just a little, just sprinkle it on the fish.

Cover the fish and vegetable filling with the free part of the parchment and roll the edges into a tube.

Then twist the remaining free edge, making a tightly closed envelope.

These envelopes are very convenient to make before guests arrive. Roll it up, put it in the refrigerator, and when guests are on the doorstep, quickly put the halibut fillet in the oven, 20 minutes - and the treat is ready.

Grease a ceramic dish (glass is also suitable) with a piece of butter, place the vegetables on the bottom, and place the halibut fillet on them. Fill with filling.

Cover the pan with foil and place in the oven along with the envelopes.

The cooking time for both dishes is the same - 20 minutes, and the temperature is the same - 180 degrees. You should not open the envelopes while stewing, but you can remove the foil from the pan 5 minutes before the end of cooking.

  • Mix butter and olive oil in a saucepan, add green onions, dill and garlic. The whole composition needs to be heated a little.

  • chopped vegetables are laid out in a thick layer on top of the fish and covered with foil;
  • the mold with all the ingredients goes into the oven for a quarter of an hour;
  • It is recommended to decorate the finished dish with herbs, lemon and serve on portioned plates.

Potatoes are an almost constant ingredient in the preparation of various dishes. With its help, you get a very satisfying and tasty dish. The presence of cheese allows you to give any product a tenderness and creamy taste.

If you want to bake halibut in sour cream, there are also different recipes for this. One way to cook halibut in sour cream sauce in the oven, recipe with photo:

  1. Clean and cut the fish into traditional pieces. At the same time, fry each of them a little on the stove in vegetable oil (although you don’t have to do this if you wish).
  2. Chop the onion into half rings and place along with the fish fillet on a baking sheet. Then fry the flour in a frying pan and add sour cream and spices. In this case, it is imperative to stir the contents so that lumps do not form. When the sauce is ready, pour half of it over the fish.
  3. Grate the cheese on top and bake in the oven at 180°C for about 25 minutes. Serve the finished dish with the remaining sour cream sauce and herbs.

Amount of ingredients for this recipe:

  • 1 kg of fish,
  • 2 pcs. Luke,
  • 5 tbsp. l. sour cream,
  • 5 tbsp. flour,
  • butter 70 g,
  • hard cheese 150 g.

Now you know the basic recipes for cooking halibut in the oven.

For the dish I used frozen halibut fillets without skin. The fillet is covered with an icy “glaze,” and to get rid of it, I took the fish out of the freezer in advance. And to speed up the process of thawing the fish from the ice, you can put it in a bowl and fill it with water. The ice will quickly leave the fillet and you can begin the marinating process.

So, the fish has completely defrosted, and you will have to work with it carefully, I would even say gently. The fact is that when the ice crust completely comes off the fillet, the fish may break.

Gently wash the halibut fillet and pat dry with a paper towel.

Cut the fish into pieces. My fillet was quite large, so I ended up with 3 pieces. If the fillet is small, you can cut it in half or leave it whole if the size is very small.

I recommend marinating fish with a minimum set of spices and seasonings. Ideally, this is salt, pepper and lemon juice. Halibut is a very tender and fatty fish; there is no point in filling its taste with unnecessary herbs. It’s better to add onions and carrots or make sour cream filling.

I'll show you two ways to cook halibut fillets in the oven. This is halibut fillet with vegetables in a parchment envelope and fish in sour cream filling and, by the way, also with vegetables.

Cut a large onion or two medium ones into thin rings. To do this, I used a special grater, the rings turned out to be very thin, which would not be possible with a knife. I grated the carrots the same way, as thinly as possible. Why do you need to make such a cut? Yes, because the fish cooks quickly, 20 minutes - and it’s ready, but the vegetables may not be ready yet, so I recommend that you make the slices as thin as possible.

While we are cutting vegetables, our fish pieces are soaked in salt, pepper and lemon juice.

Cut out a square measuring 40 by 40 cm from parchment paper. Place vegetables on one part of it, sprinkle with a little salt, and maybe pepper.

Place the halibut fillet on the vegetables.

Cover with vegetables and arrange pieces of butter. Why creamy and not vegetable and olive? It’s just that with this oil, fish and vegetables will melt in your mouth, and the taste will be creamier. Of course, if desired, butter can be replaced with vegetable oil, just a little, just sprinkle it on the fish.

Cover the fish and vegetable filling with the free part of the parchment and roll the edges into a tube.

Then twist the remaining free edge, making a tightly closed envelope.

These envelopes are very convenient to make before guests arrive. Roll it up, put it in the refrigerator, and when guests are on the doorstep, quickly put the halibut fillet in the oven, 20 minutes - and the treat is ready.

Grease a ceramic dish (glass is also suitable) with a piece of butter, place the vegetables on the bottom, and place the halibut fillet on them. Fill with filling.

Cover the pan with foil and place in the oven along with the envelopes.

The cooking time for both dishes is the same - 20 minutes, and the temperature is the same - 180 degrees. You should not open the envelopes while stewing, but you can remove the foil from the pan 5 minutes before the end of cooking.

Having tried halibut, the recipes for which are simple and varied, you will want to repeat such a meal more than once. Tender, juicy, moderately fatty meat will be an ideal basis for creating all kinds of everyday and festive culinary creations.
