Recipe for cottage cheese soufflé in the oven. Calorie, chemical composition and nutritional value.

step by step recipe with photos

The vanilla smell of curd soufflé in the oven lifts the mood of everyone at home, as it promises an unusual family tea party. This type of baking is relatively rarely prepared, as it requires certain efforts from the housewife. The main component - the egg with sugar - must be beaten until white, because it is this that ensures the porosity of the baked goods. The flour mixture is brought to the consistency of sour cream.

Finely grated aromatic banana adds flavor, being the ideal flavoring agent for a delicate soufflé with an airy consistency. It gains a lot of volume in the oven, but can quickly lose it as it cools.

The cottage cheese will need to be paste-like. You can beat the grainy cottage cheese with a blender. Instead of raisins and apples, you can add berries to the soufflé. I tried cooking with frozen cherries, raspberries, and strawberries, placing them on top of the curd mass already in the molds.

Add yolks, sugar, vanilla sugar, salt to the cottage cheese. Mix.

Add washed and dried raisins, flour, starch. Knead the mass well.

Beat the whites into a strong foam.

Add to the curd mass, mix carefully with a spatula so that the whites do not fall off.

Recipe 3: Curd soufflé in a double boiler

The healthiest dishes are steamed. But many people think that their advantages are limited to this quality. In fact, you can cook a very tasty treat in a double boiler, for example this curd soufflé.

Required ingredients:

  • 5 eggs;
  • Half a kilo of cottage cheese;
  • 6 spoons of sugar;
  • 4 spoons of semolina.

Cooking method:

Separate the whites from the yolks. Grind the cottage cheese thoroughly with two tablespoons of sugar and yolks. Add semolina to the mixture and beat all ingredients until smooth. Beat the whites with four tablespoons of sugar until thick foam forms. Add the whipped whites into the curd mixture. Fill the steamer pan with the mixture and set it to cook for half an hour. This delicacy can be given even to small children.

Exceptionally tasty and healthy dessert

Even those who do not particularly like this fermented milk product in its natural form do not refuse cottage cheese baking. And the cottage cheese soufflé (photo) is an absolutely exceptional dish. Amazingly tender and airy, easy to prepare, giving unlimited opportunities to experiment with different flavorings.

The fact that cottage cheese is very beneficial for the body is known to everyone, without exception: this dietary product is perhaps the best source of calcium, and is easily absorbed by the body. It is good for the intestines, liver, stomach, kidneys; indispensable for problems with the heart, vascular system or lungs.

So why not take advantage of the healing properties of fermented milk product, while getting maximum pleasure from the taste. Moreover, curd soufflé easily allows you to do this.

How to properly prepare a soufflé

In principle, the process of creating this delicacy is not at all complicated. And yet, before you start looking for some interesting recipe, it won’t hurt to familiarize yourself with some of the intricacies of preparing this dessert.

Traditionally, the soufflé is baked in porcelain molds (photo) in the oven. Although you can use a microwave, a slow cooker, and even a double boiler.

During baking, the product increases greatly in volume. To make it easier for the dough to “climb” upward when baking, the smooth walls of the molds should be pre-treated: coat them with butter and sprinkle with granulated sugar. The bottom is not processed.

And the finishing touch: when the dough is already poured into the mold, its “collar” needs to be cleaned of soufflé and sugar by running your finger or a paper napkin over it. This simple procedure is performed to ensure that the dessert rises beautifully evenly when baking (photo).

Soufflé with semolina and cottage cheese

Traditionally, curd soufflé is baked in the oven. The temperature required for this is quite high - 200 degrees. From the amount of products this recipe offers, you can prepare exactly six servings of the curd delicacy:

  • cottage cheese (soft, grain-free, 9% fat) – 200 g;
  • 2 chicken eggs;
  • 1 tbsp. l. regular sugar;
  • a bag of vanilla sugar;
  • 2 tsp each semolina and sour cream;
  • a pinch of salt;
  • 1 tsp. butter.

The entire cooking process (from kneading the dough to serving the dessert) will take about forty minutes:

  1. First you need to prepare the curd mass: put cottage cheese, sour cream, butter, sugar (vanilla and regular), egg yolks and semolina into the bowl of a food processor or blender. Beat the mixture well until completely homogeneous.
  2. Now it’s time to work on the whites - they need to be thoroughly beaten with a pinch of salt until they form a strong, stable foam. Having achieved this, you need to gradually, one spoon at a time (as the recipe recommends), begin to introduce proteins into the curd mass. You only need to stir the mixture with a spoon, very carefully so as not to lose air bubbles - the main secret of the amazing airiness of the dessert.
  3. Prepare the molds and fill them with dough (a little more than two-thirds - the curd soufflé will rise). Immediately send the filled molds to bake. They should spend 25 minutes in the oven. One very important point: the door should absolutely not be opened at this time - otherwise the soufflé will hopelessly fall off.

The finished curd soufflé must be served immediately - after 20 - 30 minutes it will lose its delicious appearance (photo), although the taste will not be affected. To enhance the impression (however, this is not at all necessary), you can sprinkle the treat with powdered sugar.

Delicate curd soufflé with apples

Semolina slightly “weights down” the delicate consistency of the dessert. The curd souffle that this recipe offers is prepared without it, but with apples, and it turns out especially tender (photo). It is also baked in the oven. To prepare this dessert you need to stock up on:

  • cottage cheese – 300 g;
  • apples (preferably sweet) – 2 pcs.;
  • eggs – 2 pcs.;
  • powdered sugar – 100 g.

Step-by-step manufacturing recipe:

  1. Remove the peel and seeds from the apples and puree them in a blender. Squeeze the juice from the resulting mass.
  2. Combine applesauce, cottage cheese and egg yolks. Stir the mixture until smooth.
  3. It is recommended to beat the whites with a mixer, adding powdered sugar little by little. The mass should be very dense. Having achieved this, you need to carefully combine the egg whites with the curd mass.
  4. Divide the dough into the prepared molds. Bake in an oven preheated to 200 degrees for about 20 minutes. The door should not be opened during baking.

When prepared in this way, the curd soufflé will not increase in size, but it will not fall off over time. It can be safely stored in the refrigerator for up to three days, as the recipe states. However, it is unlikely that this amazingly delicate delicacy will stay in the house for so long.

And the finishing touch: when the dough is already poured into the mold, its “collar” needs to be cleaned of soufflé and sugar by running your finger or a paper napkin over it. This simple procedure is performed to ensure that the dessert rises beautifully evenly when baking (photo).

Preparation

1. To remove lumps from the cottage cheese and make the structure of the finished soufflé more delicate, rub the product through a fine strainer.

2. Beat the egg into another deep bowl. Add granulated sugar, vanilla sugar and salt. For this step you will need a mixer. Beat all ingredients until the mass increases in volume by 2-3 times. The egg-sugar mixture will noticeably lighten and become denser.

3. Rinse the banana. Remove the peel. Grind on a medium grater to a puree consistency.

4. Add the grated cottage cheese to the chopped banana. Stir with a spoon until smooth.

5. Pour in semolina. Stir it into the curd mixture.

6. Add the beaten egg. Gently, so as not to disturb the airy structure, stir in the remaining ingredients in a circular motion.

7. For baking, it is most convenient to use small silicone molds. Grease with a piece of butter. Sprinkle with semolina. If using iron pans, line with parchment paper and then grease with butter. Using a spoon, move the curd mass into the mold 5-7 mm below the top edge. Preheat the oven to 180 degrees. Place the pan with the curd mixture in the oven and bake for 30-50 minutes. When baking, rely on your oven. The soufflé should be slightly browned.

8. The curd soufflé is ready. Leave it in the pan for 10-15 minutes to allow the baked goods to cool slightly. Then carefully remove onto a flat plate. Sprinkle with powdered sugar.

Cottage cheese soufflé - recipes with photos

A special feature of cottage cheese soufflé is its speed and ease of preparation. With minimal time, you will get an amazing dish that will not leave any family member indifferent. You can supplement the cottage cheese with pieces of fruit, berries, or even cherry, raspberry, or strawberry jam. But if you don’t add sugar to the soufflé, then such a dish will become an excellent snack. To successfully prepare a dessert, follow these recommendations:

  1. The secret of a tender and airy soufflé is that for preparation it is necessary to use soft and grain-free cottage cheese, and sour cream should be of high fat content.
  2. Egg whites should always be whipped in a glass, ceramic or enamel container. If you use aluminum dishes for this, the whites will turn out with a gray tint.
  3. To prepare the soufflé, use egg whites that are not fresh, as it will be easier to whip them into a strong foam. To obtain a thick, durable foam, the bowl for whipping must be perfectly clean, without drops of water and fat.

The classic device for baking soufflés is the use of an oven. To prepare six servings of curd souffle you will need forty minutes of time and the following ingredients:

  • a bag of vanilla sugar;
  • 2 tsp. sour cream;
  • 2 eggs;
  • 2 tsp. semolina;
  • 1 tsp. butter;
  • 1 tbsp. l. Sahara;
  • a pinch of salt;
  • cottage cheese – 200 g.

Step-by-step instructions for preparing a delicious curd soufflé:

  1. Preparing the curd mass. To do this, put cottage cheese, semolina, vanilla and regular sugar, butter, sour cream, two egg yolks into the bowl of a food processor or blender. Beat the ingredients into a homogeneous consistency, which we then leave in the cold for half an hour.
  2. Then you need to beat the egg whites with a pinch of salt. The foam should be strong and stable, because the quality of the finished soufflé depends on this. Then combine the cottage cheese with the whites and mix.
  3. For baking, you can use silicone portion molds, which must be filled 75% with curd dough so that the soufflé has room to rise. Place the molds in an oven preheated to 200° for 25 minutes.

In the microwave

A microwave will help you prepare a cottage cheese soufflé for breakfast in a matter of minutes. For such portioned baking, you can use a regular cup. You will need the following products:

  • 1 egg;
  • a handful of raisins;
  • 1 tbsp. l. Sahara;
  • cottage cheese – 150 g;
  • cocoa – 0.5 tsp;
  • powdered sugar – 0.5 tsp;

Dessert in the microwave is prepared according to the following scheme:

  1. In a small bowl, beat the cottage cheese with a blender along with sugar, egg and cocoa into a general paste.
  2. Add the washed raisins to the cottage cheese and mix gently with a spoon.
  3. Distribute the resulting dough in a white ceramic cup and place in the microwave for 3-5 minutes, monitoring the baking process. If the soufflé begins to rise, it is ready. Transfer the finished dessert to a plate, decorating with powdered sugar on top.

In a slow cooker

It is difficult to imagine a modern kitchen without a variety of household appliances. Such a multifunctional device is a multicooker, which you can also use to prepare curd soufflé. For this dessert you need to prepare the following ingredients:

  • 5 eggs;
  • 250 grams of sour cream;
  • cottage cheese – 750 grams;
  • 3 tbsp. l. starch;
  • one and a half glasses of granulated sugar;
  • a pinch of vanillin.

Step-by-step cooking in a multicooker consists of the following steps:

  1. Initially, grind the cottage cheese with the yolks of five eggs, adding vanillin, starch and sour cream.
  2. Beat the chilled whites with powdered sugar in a blender or mixer until a strong foam forms, as for meringue. Combine the resulting mixture with the curd mass and knead.
  3. The entire consistency must be carefully transferred into the multicooker pan, closed with a lid and set to “Baking” mode on the display. Please note that you cannot open the lid and do not control the soufflé baking process itself. The multicooker will finish cooking on its own in 65 minutes.
  4. When the device informs you about the end of baking, immediately set the “Warming” mode for half an hour with the lid closed.
  5. The final stage of preparation will be transferring the finished dish onto a beautiful plate. You can sprinkle powdered sugar on top.

In a steamer

You can make the soufflé healthier and less caloric by steaming it. A double boiler will help you create a wonderful dessert that is not inferior in taste to dishes prepared in the oven or microwave. For this dessert, first prepare the following products:

  • cottage cheese 7% fat - 350 grams;
  • 15 grams of butter;
  • fresh milk – 150 grams;
  • 3 tsp. granulated sugar;
  • 1 tbsp. l. soft honey;
  • 1 egg;
  • 1 tbsp. l. semolina;

    Recipe 2: Curd soufflé with yogurt

    An incredibly tender and light curd soufflé, an ideal recipe for those times when you really want something sweet, but your diet doesn’t allow you to eat cakes. Preparing the dessert is very simple; you don’t need to heat or boil anything.

    Required ingredients:

    • 250 g each of cottage cheese and yogurt;
    • Two spoons of gelatin;
    • Sugar - to taste;
    • Some warm water.

    Cooking method:

    We dilute the gelatin in a small amount of warm water and leave it to swell. In the meantime, grind the curd with the required amount of sugar to a homogeneous consistency. Add regular yogurt without additives to the cottage cheese. Then add the prepared gelatin and mix everything thoroughly. This jelly can be served after hardening on its own or decorated in an interesting way. Let's use fruit or berry juices and cocoa as dyes. We divide the mass into as many parts as we plan to make layers. We paint the parts in different colors. First, pour one part into a glass mold and put it in the refrigerator until it hardens, then pour the second and also put the mold in the refrigerator, then the third, etc. The frozen curd soufflé with yogurt can be taken out of the mold by simply turning it over onto a wide dish. If necessary, the dessert can be cut.
