Step by step

  1. I have made this recipe twice already. I cooked it with champignons, but this time I used dried mushrooms and I didn’t like it. So, it’s better not to experiment and cook with champignon. Therefore, I will describe how I cooked with champignon. And so, for this recipe you will need meat (any), one onion, frozen vegetables (any), champignons, two eggs, flour (look at the consistency), milk, three cloves of garlic, butter, olive oil, nutmeg (according to tip of a knife, the main thing is not to overdo it), fresh herbs, salt, ground black pepper, turmeric. It is better not to add other seasonings (you can overpower the taste of the mushrooms).
  2. First, let's make minced meat.
  3. Add eggs, milk, flour, half the butter, turmeric, salt and pepper to the minced meat. Squeeze the garlic and add the nutmeg.
  4. Mix everything well. The meat dough should be like pancakes.
  5. Pour a little oil into a well-heated frying pan (you don’t need to pour a lot) and lay out some of the dough. And quickly level it in the pan.
  6. The cakes fry quickly and are easy to turn over. Fry until done (I won’t tell you the time, it all depends on the amount of dough poured).
  7. The cakes are ready. You can start filling.
  8. Cut the onions and mushrooms. Place two frying pans on the fire.
  9. In one pan, fry the onion until golden brown.
  10. In a second frying pan, fry the champignons in butter. The fire should be turned on to maximum. Fry quickly, do not leave the stove. Cook until golden brown. Fry separately from the onions so that the mushrooms are not saturated with the onions.
  11. Now combine the onions and mushrooms in one pan.
  12. Add vegetables, salt, pepper and simmer for about seven minutes.
  13. In a blender, blend the vegetables and mushrooms until smooth.
  14. And we will collect the cake. I got three cakes. You need to distribute the filling among all the cakes. Leave a little more on the top so that there is enough for the sides (although this is everyone’s business).
  15. Collect all the cakes into a cake, coat the sides and sprinkle finely chopped herbs on top. The meat pie is ready. It is advisable that it sit for soaking for at least two hours, or preferably overnight in the cold. Bon appetit!

Cooking meat pie

First we prepare the minced meat. You can take any meat, but it is better that it is not too fatty. You can mix veal and pork, beef and chicken, add lamb - basically, whatever you like best. Add two or three onions and a few cloves of garlic per kilogram of meat. Salt, pepper, mix everything thoroughly.

Divide the minced meat into several parts. In this case, three cake pans were used, so the minced meat was divided into three parts. If desired, you can make more thinner cake layers - 4, 5, etc.

Place the cakes in the molds into the oven. At a temperature of about 200 °C, all three cake layers will be baked for 40–50 minutes. If you bake them one at a time, each cake will take about half an hour. Of course, a lot depends on your particular oven, so check for doneness as you normally would.

This is what our finished baked crust looks like. It smells like freshly fried cutlets and the most aromatic piece of boiled pork at the same time. Well, that’s okay, now we’ll taste a piece right away.

We trim the cakes along the edges and even them out in size. Yeah, “waste” can be used immediately for its intended purpose. Pets will be especially pleased.

This is how we folded all three cake layers and, if necessary, trimmed them a little.

We prepared a napkin on which we will “assemble” our cake.

And this is our filling, instead of cream. Ketchup, hot chili sauce, mustard, mayonnaise, garlic sauces - you can use what you like best. Suitable for laying between layers and mashed potatoes. You can add fried mushrooms with onions, garlic, green peas, finely chopped pickled cucumber, carrots, etc. to it.

Spread the bottom cake with a layer of spicy tomato “cream.” Other cakes can be spread in exactly the same way, or with something else - depending on your mood.

Let's start preparing mashed potatoes. In this case, a semi-finished product was used, but you can also boil regular potatoes. Then mash it, add butter, a couple of egg yolks if desired, and it will certainly be no worse!

So, the puree is ready, now we will form the side walls of our cake.

We coat the cakes on all sides and on top too.

We don’t regret the puree, we spread it more! The layer should be quite dense. You can spread a beaten egg on top and put it in the oven for a few minutes to brown the crust.

Now we decorate our cake. To do this, you can use all the same sauces, as well as berries and vegetables (cranberries, cherry tomatoes, chopped carrots, fried or pickled mushrooms, etc.).

When you sit at home for a long time and take care of the house and children, you often start experimenting with different products. So this time I decided to try to cook something new. I prepared this cake according to the “Liver Cake” type, but instead of liver I used minced meat.

To start, I prepared a fry of onions and carrots. Peeled the onions and carrots and washed them. I chopped the onion, but not too finely, and grated the carrots on a coarse grater. Then I lightly fried everything in a frying pan, just enough so that the onions darkened and the carrots became soft. There is no need to fry any more, otherwise the filling will come out dry. I got 5 meat cakes, each of them about 0.5 cm thick.

Depending on the size of the cake, we may need different amounts of meat and other products. Let's give an approximate volume of ingredients for the cake, slightly larger than average, for 10–12 fairly large portions. You can cook smaller amounts. We will need:

  • meat – 2 kg
  • potatoes – 1 kg
  • onions – 5 pcs.
  • garlic – 1–2 heads
  • eggs – 2 pcs.
  • butter
  • ketchup
  • mustard
  • mayonnaise
  • vegetables, mushrooms, berries - optional
  • salt, pepper, spices

Pancake cake with meat filling

The perfect way to get the little ones interested in a superb breakfast of beautifully presented empanadas. Who would refuse such a delicacy!

List of components:

  • sifted flour - 150 g;
  • high-quality mayonnaise - 200 g;
  • eggs - 5 pcs.;
  • carrot;
  • dill, salt, pepper - use to taste;
  • cheese (choose hard varieties) - 300 g;
  • garlic cloves - 2 pcs.;
  • onion - 1 pc.;
  • mayonnaise - 150 g;
  • cheese (processed or creamy) - 200 g;
  • mushrooms - 300 g.

Cooking method:

  1. Finely grate the hard cheese. Separately, beat mayonnaise with eggs. Combine both compositions, add flour and mix everything thoroughly until smooth.
  2. Divide the dough into two parts. Place chopped carrots fried in oil in one, and chopped dill in the other.
  3. Fry thin pancakes in a well-heated frying pan.
  4. Meanwhile, boil the chicken breast. Cut the cooled meat into small pieces and combine with onions and mushrooms.
  5. Grind cream cheese with fresh mayonnaise.
  6. Assembling the cake. Place the dill pancake on a plate and cover with the cheese mixture.
  7. Place the mushroom mixture on top and cover with carrot cake. Next, add mayonnaise sauce and a layer of white meat. We continue the process in the same order.

We keep the finished product in the refrigerator for two hours so that all the ingredients are “imbued” with mutual tastes and aromas.

Step-by-step cooking process

  1. Pour one kilogram of beef meat (quite fatty flesh on the bone) with two liters of cold water, put the pan on high heat and bring the contents to a boil.
  2. Advice. You can use absolutely any meat: pork, chicken, any poultry.
  3. After the broth boils, reduce the heat to low, skim off the scum with a slotted spoon and cook covered for two hours. You cannot add water during the cooking process: the broth must be very rich.
  4. After two hours, add salt to taste, a few peas of black pepper, and a small piece of smoked brisket (you can add smoked ribs) to the broth. There we also put peeled onions (whole heads), a couple of peeled and washed carrots, parsley stems tied with thread.
  5. Cover the pan with a lid and cook everything together for another hour.
  6. Then add bay leaves, wait 15 minutes and turn off the heat.
  7. Remove the meat and brisket with a slotted spoon into a separate bowl and let cool.
  8. We take everything else out of the broth and throw it away.
  9. It is advisable to strain the broth itself.
  10. Pour 150 milliliters of strained broth into a plate and let cool to room temperature.
  11. Pour 25 grams of gelatin into the cooled broth, mix thoroughly and leave for the time indicated on the package.
  12. Pour water into the pan, add salt and put on fire.
  13. At this time, we separate the broccoli and cauliflower into inflorescences.
  14. Boil cauliflower in boiling water for 5-7 minutes. Boil broccoli in boiling water for 10 minutes.
  15. Chop the cooled meat very finely (but you can simply disassemble it into fibers).
  16. We also finely chop a piece of brisket.
  17. Prepare the garlic: peel 3 cloves and chop with a knife.
  18. Heat the well-swollen gelatin in the microwave (but do not bring to a boil) until all the grains are completely dissolved.
  19. Pour hot gelatin into the broth and stir thoroughly.
  20. We assemble the cake in a mold, which is best covered in advance with cling film.
  21. Place the meat on the bottom of the pan, sprinkle it with chopped garlic, then lay out the pieces of brisket.
  22. Pour enough broth so that it is slightly higher than the meat.
  23. Place the next layer of cauliflower pieces, and between them - broccoli florets.
  24. We send the snack cake to the refrigerator so that the first layer of broth hardens: for 20-30 minutes.
  25. Then pour in the remaining broth (pieces of broccoli should stick out a little) and place the cake in the refrigerator overnight.
  26. Remove the cake from the mold along with the film, then remove it.
  27. We serve this beauty on the table and enjoy the unearthly taste.
