To prepare the cream we will need the following products:

Flour or starch as desired. High quality butter - not stale or a substitute, only butter according to GOST fat content 82.5.

Mix the yolk with sugar and milk:

Add flour (starch), vanillin.

Cook over low heat, stirring until the desired temperature is reached, you get a fairly thick milk sauce:

Should not be too liquid.

Remove from heat and cool completely:

Beat the butter until white and fluffy.

And slowly add the shelf syrup.

The butter and syrup should be at the same temperature. If the butter separates a little, continue whisking until smooth and shiny.

The result is a thick cream that is suitable for filling.

If the custard turns out to be very liquid, you can put it in the freezer and wait until the cream thickens.

If it is not thick enough for the filling, you can add a little softened butter.

You can fill wafer rolls with this cream using a pastry syringe on both sides.

How to make cream tubes?

  • powdered sugar – 250 g;

  • Flour - a heaped tablespoon;
  • Milk – 240-250 ml;
  • A packet of vanilla sugar.

Take a small bowl, put the yolks and sugar there. These two components need to be thoroughly ground. Next, without ceasing to grind the mass, sifted flour and milk are added. The output should be a liquid mass without any lumps.

Take a saucepan, pour out the resulting mass and put it on low heat. Gently stir the cream until it thickens. After this stage, you can remove it from the heat, let it cool slightly, and then beat it with a blender or mixer.

Place the resulting thick cream into tubes using a small spoon or a special syringe.

Preparing waffle dough.

In a mixer bowl, combine 150 ml of water, egg yolks and powdered sugar, beat until smooth and creamy for 10-12 minutes.

Then gradually add sifted flour, soda, vanilla sugar and pour in the remaining water, stir until smooth.

Next, pour in the melted butter, beat for another 8-10 minutes until smooth.

Bake waffles in an electric waffle iron, adding 1 tablespoon of batter.

Preparing the cream.

Soften the butter to a plastic mass (I put it in the microwave for 1 minute at medium power - it turns out to be the desired consistency), place it in a mixer bowl, add powdered sugar and beat until smooth and fluffy.

  • 5 ml cognac.

While the waffles are cooking, it is a good idea to take out the butter to soften it a little. After this, it is better to cut it into small pieces and use a mixer (or blender) to start beating.

We continue the butter whipping process until the mass turns white. When you notice that it is time, you can add a spoonful of condensed milk. But you shouldn’t turn off the mixer: continue beating until the mass becomes fluffy. In the last minutes you need to add cognac.

The cottage cheese must be wiped using a sieve. When it is practically free of lumps and grains, we begin to gradually add it to the oil mass and beat again.

The result is an incredibly tender, fluffy mass that can be used not only as a filling for tubes, but also for other culinary delights.

Cream for wafer rolls with condensed milk

In order to make this filling, you need to prepare the following components:

  • Approximately ¾ of a 200 gram stick of butter;
  • A can of condensed milk.

The first stage is the simplest: you need to boil the condensed milk. An hour before it is ready, take the butter out of the refrigerator and place it on the table so that it becomes a little softer.

Next, take a suitable container (deep bowl). Cut the softened butter into pieces and put it in a container, then beat it with a blender or mixer.

You will have to beat it for quite a long time, because the result should be a fairly fluffy white mass.

After this, you can add milk in small portions. However, the blender should not be stopped running. You need to beat the mixture for at least another 8-10 minutes.

The finished fluffy cream is placed in a pastry syringe, with the help of which the waffles rolled into a tube are filled.

Protein cream in a water bath (meringue)

Ingredients

  • egg whites - 2 pieces;
  • granulated sugar - 125 g.

Cooking method

Remove the eggs from the refrigerator 1 hour before. Separate the white from the yolk. Place the yolks in the refrigerator; they can also be used to make cream, for example, custard (the recipe is at the beginning of the article). Pour the egg whites into a high-sided bowl, add granulated sugar, and beat with a mixer at low speed for 1 minute. Then place the bowl on a saucepan with a water bath, but so that the barely boiling water does not come into contact with the bottom of the bowl. Beat the whites in a water bath at medium speed for 6-7 minutes until the granulated sugar dissolves. Remove the bowl from the water bath and continue whisking for another 1 minute. Transfer the finished cream into a pastry bag and fill the wafer rolls.

Recipe for waffle rolls with cream in an electric waffle iron

Many people have a unit such as an electric waffle iron at home. But for some reason, most housewives think that such a dessert will take too much time and bring a lot of trouble. However, this is a misconception. To prepare waffles you need:

  • Pack of butter;
  • Egg – 3 pcs.;
  • Flour - a couple of glasses;
  • Sugar (or sand) - a glass;
  • A pinch of vanillin.

  1. The dough for the electric waffle iron will be liquid, the consistency will resemble kefir. You need to beat the melted margarine with sugar so that its crystals are completely dissolved.
  2. Then I add the yolks into the mass, having previously separated them from the proteins, starch and flour.
  3. I beat the egg whites in another bowl and add margarine and sugar to the prepared mixture. Mixing to get good tasty treats must be done by hand, and it is strictly forbidden to beat the composition.
  4. I pour the dough onto the underside of the device, which has been heated for a long time. I bake an equal layer of sheet for 4 minutes until the waffle turns golden brown.
  5. When hot, I roll the finished sheet into a tube. Let it cool.
  6. I'm starting to make the custard. During this time, the workpieces will cool down. I heat the flour so that the cream is fragrant. I mix it with the whipped chicken. eggs. I make a thick batch of homogeneous mass.
