During this time, let's make raisins. We wash it well and fill it with boiling water to swell.

Pancakes with cottage cheese, recipe in the oven

Pancakes with cottage cheese cooked in the oven turn out incredibly tasty, and what is especially important is that there are quite a few ways to make such a treat in the oven.

First, we need to prepare the pancakes themselves, and Povarenok has various recipes on this topic, which with all the details, step by step with photos and videos, will tell you how to make the dough and bake traditional Slavic flatbreads with your own hands.

Pancakes on mineral water

As for the fillings, above we have given several options for curd fillings for pancakes, which can be “packed” into flatbreads in various ways: rolls, tubes, bags, parcels, envelopes.

Further preparation of pancakes with curd filling in the oven involves several options:

  1. On a greased baking sheet, place the filled and folded pancakes in one layer, then generously grease them with melted butter and lay out a second layer of pancakes, which should also be seasoned with butter. Bake at 180°C for 10 minutes;
  2. Place the pancake bags on a greased baking sheet, grease with oil and bake at 200°C for 10-15 minutes until golden brown.
  3. Place pancake tubes or rolls (like cabbage rolls) with the filling in a layer in a baking dish, pour in a sauce made from eggs, sour cream, and if the filling in the pancakes is sweet, then add sugar to the sauce; if the filling is salty, then season the sauce with salt and pepper to taste. Bake at 190°C for 30 minutes.
  4. Place pancake rolls with garlic and curd filling in a baking dish, sprinkle with grated cheese and bake in the oven for 5-10 minutes at 170°C until the cheese melts.

  • ½ tsp soda;
  • ½ tsp salt;
  • 3 tbsp granulated sugar;
  • 1 tbsp butter;
  • 2 tbsp vegetable oil.

For filling:

  • 350 g cottage cheese;
  • 1 tbsp powdered sugar;
  • 2 tbsp sour cream;
  • ½ tsp vanilla extract.

  1. Sift the flour into a bowl so that it is saturated with oxygen;
  2. Add salt, sugar, soda and 500 ml of milk. Heat the rest of the milk in a saucepan on the stove;
  3. Pour vegetable oil into the dough and knead with a whisk or mixer;
  4. Then gradually add hot milk and mix it into the mass;
  5. To make the mixture more liquid and without lumps, pass it through a sieve. If necessary, add a little water;
  6. All that remains is to pour in the melted butter, stir and leave for 20 minutes;
  7. Heat the frying pan well, add a few drops of sunflower oil and rub it with a napkin;
  8. We take the dough into a ladle, pour it into the frying pan and turn it so that the mixture is evenly distributed over the surface;
  9. Fry the pancakes on both sides, and then, if desired, grease them with butter;
  10. Place the cottage cheese in a bowl and mash it with a fork;
  11. Add powdered sugar, vanilla extract, sour cream and mix well;
  12. Spread the filling over the surface of the pancake and carefully wrap it into a tube.

If desired, top the stuffed appetizer with your favorite jam or preserves.

Pancakes with curd

Break two eggs into a deep container, add sugar and a little salt - without it the pancakes will be a bit bland.

Using a whisk vigorously, beat until the mixture becomes foamy. Or turn on the mixer at medium speed and after a minute you get a fluffy mass. Pour in kefir. I take the low-fat one, it is liquid and not very sour.

Stir until smooth, add vegetable oil. For a more delicate taste, you can replace it with creamy one by melting and cooling slightly.

Now the most important step: gradually add the sifted flour. Gently mix the pancake batter, getting rid of any lumps. Ideal kefir pancakes can only be made from well-kneaded dough; it should not have a very thick consistency. Therefore, add flour in portions, stirring and checking the thickness.

We make sure that the pancake dough has the consistency we need: it pours out of the ladle easily and there are no lumps in it. If it is thicker or waterier, add kefir or flour.

Adding slaked soda will make the pancake dough airy and the pancakes themselves into a small hole.

This is what the dough will look like after adding soda: the thickness will remain the same, but will become airy. You can compare it with the previous photo and see the difference.

Heat the frying pan and grease it with a piece of lard or butter. Using a ladle, scoop up some dough and pour it onto one side. Tilt the frying pan, shaking it gently, and spread the dough into an even thin layer. Place on medium heat and bake on one side until golden brown. Exactly with one - we fry the second only a little. When the bottom is browned, turn the pancake over. Hold for a few seconds, the second side remains light. Cover a stack of thin pancakes.

When all the pancakes are ready, proceed to preparing the filling. My filling for pancakes is made from homemade cottage cheese, but I know how to prepare a delicious curd filling for pancakes from store-bought ones in packs. We choose the fattest 18%. If the fat content is lower, then you need to separate the whey. Place in a gauze bag and hang over the sink for half an hour. The whey will drain and the sour taste will go away with it. Mash the cottage cheese into a homogeneous mass with a fork or masher. You will get a delicious, delicate cottage cheese filling for pancakes, to which you add raisins or other dried fruits and sugar. In addition to sweet pancakes with cottage cheese and raisins, you can make savory ones by adding salt, herbs or grated cheese to the cottage cheese.

Now I’ll show you how to wrap pancakes with cottage cheese so that they don’t fall apart when frying. Place the pancake with the browned side up and add a tablespoon of curd filling, stepping back a little from the edge.

Cover the cottage cheese, wrap it from the sides to the middle and wrap it again.

We try to make pancakes stuffed with cottage cheese the same size. You can freeze any excess in a container with a lid. Then, without defrosting, place in a frying pan and fry.

Heat sunflower or butter in a frying pan. We place the pancakes with cottage cheese with the seam down so that it is secured and then the pancakes will not unfold. Fry on all sides until desired brownness.

We like the top side to be well-cooked, almost crispy, and the inside of the pancakes to be tender.

You can serve pancakes with cottage cheese warm or hot; heat the cooled ones in a frying pan, covering them with a lid. But it’s better to go straight to the table, with sour cream they are so delicious, you can’t stop eating them! Happy pancakes and bon appetit! Your Plyushkin .

Step-by-step preparation:

Step 1. First you need to prepare the pancakes. Mix eggs with sugar and salt until smooth. To do this, you can use either a whisk or a blender.

Step 2. Then, pour all the flour into the resulting egg-sugar mixture. At the same time, do not forget to sift it, as this enriches it with oxygen and the products will turn out more tender and fluffy.

Step 3. Add a small amount of milk and knead into a smooth dough.

Step 4. When all the lumps are mixed, add the rest of the milk and bring it to a homogeneous consistency.

Step 5. After this, heat the vegetable oil in a frying pan and fry thin pancakes. You should not add too much fat so that they do not absorb it too intensely.

Step 6. Once they are cooked, you need to make the curd mass.

Step 7. If the cottage cheese is too grainy and dense, it should be ground through a fine sieve to obtain a juicy and tender filling. In some cases, this manipulation is repeated two or even three times, achieving a delicious, delicate consistency.

Step 8. Then add a chicken egg and sugar to the cottage cheese. Knead the filling so that the components are distributed evenly.

Step 9. After this, start wrapping the pancakes. It is necessary to take into account that it is advisable to make thick envelopes in such a way that the curd does not have the opportunity to go beyond the pancake. This is important to observe, since they will then need to be re-fried in a frying pan.

Step 10. For this method of folding, place a small amount of filling in the middle, shifting a little from the center to the edge and laying out the curd mass in a small sausage

Step 11. Next, fold the smaller edge over the curd and fold the edges inward. Then roll the pancake into a roll.

Step 12. When all the products are folded accordingly, in a clean frying pan you need to heat a small piece of butter and fry the pancakes on both sides in it. But keep in mind that they need to be covered with a lid so that the egg in the filling is completely cooked.

You can serve pancakes with cottage cheese with either sour cream or any sweet sauce.

Bon appetit!

Pancakes with cottage cheese in a slow cooker

A multicooker is an indispensable assistant for many housewives, and especially for students living in dorms and sometimes not having the opportunity to resort to the traditional method of baking pancakes in a frying pan. And today I will tell you how to make pancakes with cottage cheese in this unit.

You can make any dough for pancakes that you prefer, even with kefir, even with water, even with cottage cheese, or even dietary Dukan’s. You can find out more about all kinds of pancake recipes on our website.

Quick pancakes with dry yeast

Dukan pancakes without starch

Thin pancakes with sour milk

Pancakes should be baked in a multicooker on both sides using the “baking” or “frying” mode, depending on the model of your multicooker. Don't forget to grease the bottom of the bowl with oil or grease.

While the pancakes are cooling, prepare the cottage cheese filling, either sweet or salty. You can explore various filling options above in this post.

Fill the cooled pancakes with filling in the shape of an envelope. How to do it?

  • Place 1.5 tbsp on the spread pancake in the center. filling and overlap all the edges of the pancake on top of the cottage cheese, forming a square.
  • Or you can make a pancake package. To do this, step back 4 cm from one edge of the pancake and lay out the filling (1.5 tbsp). Next, we overlap the edge of the cottage cheese, also fold the side edges of the pancake onto it and then roll the pancake with the filling to the end.

The filled pancakes now need to be fried to an appetizing crust. To do this, set the “baking” or “frying” program, add oil to the bowl and as soon as the oil begins to sizzle, put pancakes in it and fry on both sides.

You can also simmer pancakes in the “stewing” or “heating” mode in butter or even in sour cream filling (egg + sour cream + sugar) for 20 minutes.

Pancakes with holes in milk, stuffed with cottage cheese - A simple and tasty recipe

Thin, delicate, delicate pancakes are a perfect match for the delicate curd filling. This cooking option is one of the simplest. To finish, we won't fry or bake the rolls. You can eat it right away. Great quick idea!

Ingredients:

Dough:

  • 500 ml. milk (you can use sour milk).
  • Granulated sugar – 50 g.
  • Salt – ½ tsp.
  • Flour – 150-170 g.
  • Soda - incomplete tsp.
  • Table vinegar – 1 tbsp.
  • Raw chicken eggs – 2 pcs.
  • Vegetable oil – 70 ml. (+ a little for frying).

Filling:

  • Cottage cheese 5% - half a kilo.
  • Granulated sugar – 50 g.
  • Sour cream 10% - 2 tbsp.

Preparation:

1. Sift flour into a dry bowl.

2. Next add soda, granulated sugar, salt and mix. Now break 2 eggs into this dry mixture.

3. Pour milk after the eggs. You can take fresh, or you can take sour. The main thing is that the liquid is warm. Mix everything with a whisk until smooth. Now add vinegar and stir again. The mass will begin to react and foam will appear.

4. All that remains is to pour oil here so that the products are more tender and the frying pan does not have to be oiled often. Let the mixture sit for 15 minutes.

5. By this time, heat the frying pan thoroughly. Coat it with a brush dipped in vegetable oil. Pour in just a little dough (about half a ladle). Turning the pan by the handle in the desired direction, let it spread evenly. Fry over medium heat until the bottom of the circle is golden brown.

The frying pan with oil should be as hot as possible so that the dough, when it hits the surface, begins to bake from the first second, and not heat up along with the dishes. This is the main secret of the first pancake NOT lumpy.

6. Fry the other side as well. Only it will take 2 times less time. Thus, we deal with all the dough, laying out the finished products in a stack.

7. Prepare the filling while our stack cools a little. To do this, you just need to mix the cottage cheese with granulated sugar and sour cream. You can mash the mass with a masher or beat it with a blender (if you like a more delicate consistency).

8. We begin stuffing. On the pancake, sticking to one side, place about 1 tbsp. fillings.

9. Cover with the bottom side and two sides.

10. Now turn the roll up. Thus, we roll up all the pancakes. They can be fried or baked until golden brown if you like. But we already indicated from the beginning that this recipe is a quick one, so we won’t do that.

How to cook pancakes with cottage cheese on kefir: recipe with photos step by step

Pancakes made with kefir are similar in consistency and taste to yeast pancakes made with milk, but softer and more tender. Porous, airy kefir pancakes perfectly take any shape. Kefir adds a slight pleasant sourness to the dough. These pancakes are suitable for stuffing with any (sweet or salty) curd filling.

Pour kefir into the bowl, quench the soda in it, add fine salt, flour, egg and stir well with a whisk, breaking up any lumps of dough. If the dough turns out thick, dilute with a small amount of water.

Grease pans for baking pancakes with vegetable oil using a silicone brush. You will need a little oil - 1 or 1.5 tbsp. l.

Scoop the dough into a ladle, pour it into a heated frying pan, and, tilting it, distribute the dough evenly over the bottom in a circular motion.

Bake kefir pancakes over medium heat on a large or medium burner. Evenly fried, they will acquire a beautiful surface on both sides.

Prepare the cottage cheese for the filling: soft - mash with a spoon or fork, grainy - pass through a meat grinder or break with a device with holes.

Add sour cream and the remaining (2 tablespoons) sugar, mix thoroughly, without rubbing, so that the cottage cheese filling is airy.

To make it easier to handle and to prevent the filling from spilling out, roll the pancakes into a ball: fold the pancake in half, place a tablespoon of filling on one end of it in a triangle (sharp end towards the fold of the pancake), and roll it up into a tube.

Place the pancakes on a plate and serve with sour cream. The decoration of strawberry slices will “revive” pancakes with cottage cheese. Now these are not just pancakes with cottage cheese, but a wonderful dessert with cottage cheese and berries.

It happens that even freshly purchased cottage cheese has a foreign smell or taste, which raises doubts about the correctness of its preparation or its freshness. Don’t rush to throw it away, but cook delicious pancakes with cottage cheese in the oven.

Let's bake. The dough is thick, spread it over the pan using a ladle.

Grease the finished fluffy pancakes with butter.

The blanks turn out a little thick, but their taste is amazing! It is worth preparing a special filling for them.

Filling ingredients:

  • Cottage cheese – 200 gr.
  • Sour cream – 100 gr.
  • Dill – 1 bunch

In my opinion, the best way to stuff pancakes is with kefir. They are softer and more fluffy, but at the same time more elastic and do not tear when folded. And if you add just a little sugar to the dough, they are even suitable as snacks with meat fillings.

A rather interesting result is obtained with “chouxed” kefir dough - first boiling water is added to the beaten eggs, and then kefir.

What you will need:

  • cottage cheese – 400 gr;
  • kefir – 350 ml;
  • boiled water – 250 ml;
  • wheat flour – 250 gr;
  • condensed milk – 100 g;
  • fresh chicken egg - 3 pcs;
  • sunflower oil – 3 tbsp. l;
  • granulated sugar – 1 tbsp. l;
  • finely ground salt, soda - 1/2 tsp each.

Prepare hot boiled water in advance, because the pancakes in this recipe will be custard.

How to cook

Using a mixer, beat eggs and sugar in one bowl.

Pour boiling water into the egg mixture. At the same time, she becomes even more magnificent and beautiful. Remember to always whisk.

Now kefir. It must be heated to a temperature of 30 degrees. And pour into the dough. Add sunflower oil and add sifted flour one spoon at a time. Add soda. Leave the dough for 30 minutes.

Bake pancakes from the prepared dough in a preheated and greased frying pan. Place the finished pancakes in a pile on a plate. Each one should be greased with butter.

Now let's prepare the filling. Combine cottage cheese and condensed milk. Mix everything with a mixer to form a homogeneous paste.

Now we start stuffing the pancakes. Place two tablespoons of curd paste in the middle of each. And roll it up in the usual way.

Serve hot or cold with your favorite drink and sweets, such as sour cream or honey. But the pancakes themselves turn out sweet. Therefore, this additional component can be dispensed with.
