Light, but at the same time satisfying and healthy soup made from meatballs with the addition of potatoes and rice cereals. A familiar homemade dish, familiar to many from childhood. “Usual” does not mean mediocre - the soup tastes simply great!

The recipe is not only simple, but also very versatile, variable, and can be easily adapted to personal tastes. For example, rice can be omitted or replaced with noodles, pearl barley or buckwheat.

Ingredients:

  • Minced meat (beef, pork, chicken) – 690 g.
  • Onion – 1 head;
  • Salt – 1-1.5 teaspoons (or to taste);
  • Black pepper (or a mixture of peppers) – 2 teaspoons;

For the soup:

  • Potatoes – 4-5 tubers;
  • Rice (preferably basmati) – 3-4 tbsp. spoons;
  • Carrots – 1-2 pcs.
  • Onions – 1 pc.
  • Soup seasoning (any favorite) – 1 tbsp. spoon;
  • Vegetable oil – 2-4 tbsp. spoons;
  • A bunch of fresh parsley (or dill);
  • Salt and pepper to taste;

How to make meatballs for soup from minced meat

We start as expected with meat. As noted above, you can have any minced meat, a mixture of beef and pork, or just chicken, fish, turkey, etc. This will not change the cooking process.

Peel the onion, then pass it through a meat grinder or grind it in a blender until it becomes a paste like this. Place it in a cup with the minced meat.

Add 1-2 teaspoons of salt and pepper thoroughly. If you wish, you can add some more spices. Now knead the minced meat thoroughly with your hands so that it turns out tender and homogeneous.

It is best to do this with gloves (for example, latex). The meat will not stick and the balls will turn out perfect.

Take a little minced meat, then lightly crush it in your hand, and then roll it into an even ball between your two palms. In general, we sculpt as if from plasticine. It turns out like this meat ball.

Do this with the remaining minced meat and place the balls on a tray or baking sheet. If desired, these meatballs can be placed in the refrigerator so that the minced meat thickens a little.

How to cook meatball soup

Let's move on to the soup, but first of all we need to make a standard frying of onions and carrots. Finely chop the onion, grate the carrots or chop into thin strips.

Pour a couple of tablespoons of oil into the pan and heat it up. Place the onions first. Cook and stir until the onion begins to brown. Next, add the carrots, stir and simmer for a few more minutes.

Meanwhile, boil water in a kettle. Pour boiling water into the pan and stir gently. The volume of water depends on the size of the pan, keep in mind that you will need to add other ingredients to it.

Pour pre-washed rice into the pan, add salt, pepper and soup seasoning. Cook and stir occasionally until the rice becomes softer.

Meanwhile, peel and rinse the potatoes, then cut them in any way you like. In this example, the potatoes will be cut into fairly large pieces.

Place the potatoes in the soup, and then carefully transfer the meatballs into the soup. We put one at a time, do not plop it down so that the boiling drops do not fly away.

That's it, now continue to cook the soup over low heat for 30 minutes. During this time, the potatoes and minced meat should be cooked, but if something goes wrong, then increase the time by another 10-15 minutes.

Wash and finely chop a small bunch of parsley or any other aromatic herb. Place the parsley in the soup, stir, cover with a lid and simmer for another 10 minutes.

  • Minced meat - approximately 500 g.
  • Broken rice – 3 tbsp. spoons;
  • Bulgur – 3 tbsp. spoons;

  • Onions – 2 pcs.
  • Sunflower oil – 4 tbsp. spoons;
  • Tomato – 1 pc.

  • Parsley – 10 sprigs;

  • Chicken fillet – 350 g;
  • Potatoes – 2 pcs.;
  • Onions – 1 pc.;

  • Boiled rice – 2 tbsp;
  • Chicken broth – 1.3 l;
  • Tomato paste – 2 tbsp;
  • Short vermicelli – 80 g;
  • Sunflower oil – 20 ml;
  • Salt - to taste.

How to make tomato soup with meatballs

First you need to prepare the potatoes: peel them, wash them and cut them finely into cubes. Then put it in a saucepan with broth. Place the pan over medium heat and start cooking.

The second step, as always, in the process of preparing first courses, is to deal with carrots and onions. They need to be washed and cleaned. Then these vegetables need to be chopped. As a rule, I prefer to cut carrots into circles, and onions for such dishes as finely as possible. And put them in a frying pan heated with sunflower oil. Lightly simmer the onions and carrots in a frying pan over low heat for 8-9 minutes.

Then place the carrots and onions in the pan with the broth and potatoes.

Prepare the minced meatballs. Wash the chicken fillet and pass through a meat grinder. Add two tablespoons of boiled rice.

Add salt to taste and mix well. I also added some carrots and onions to the minced meat, but this is not necessary.

Form the minced meat into walnut-sized meatballs. Place them in boiling soup. Salt the soup to taste. If children and people for whom spicy food is contraindicated will not eat it, add ground black pepper.

When all the ingredients in the soup are almost ready, add tomato paste to the pan.

Add thin vermicelli.

The peculiarity of this recipe is that there are non-standard meatballs. We took rice with bulgur just for them. You can say it will turn out to be small meatballs.

Grind the onion to a paste (you can grate it), chop the parsley finely, and rinse the grains a couple of times.

Place greens, rice, onion mixture and bulgur into a bowl with minced meat. Add a few pinches of salt and mix well.

Roll the resulting mixture into small balls and place them on a large bowl lightly sprinkled with flour.

Now sprinkle flour again and gently shake this bowl so that the meat balls are coated on all sides with flour.

Let's start cooking the soup

Finely chop the onion, then fry it in vegetable oil. You can do this either in a frying pan or directly in a saucepan (so as not to dirty the dishes again).

Meanwhile, grate the tomato (or chop it in a blender), chop the carrots and potatoes into cubes. Also put the kettle on to boil.

Once the onion is browned, add grated tomato and tomato paste to it. Stir, cover with a lid and simmer for a few minutes.

For lovers of everything dairy, creamy or cheese, you can cook this delicate spicy soup. In addition to meatballs, this dish also includes wheat grain and chickpeas. No potatoes, no carrots (but you can add them if you want).

The milk base will be represented by natural yogurt. If desired, it can be replaced with cream or light sour cream.

We will need:

  • Minced beef – 300 g.
  • Yogurt (unflavored) – 300 ml.
  • Wheat (cereals) – 120 g (can be replaced with pearl barley);
  • Boiled chickpeas (or beans) – 120-200 g.
  • Butter – 2 tbsp. spoons;
  • Olive oil – 1 tbsp. spoon;
  • Egg – 1 pc.
  • Onions – 2 heads;
  • Flour – 2 tbsp. spoons;
  • Dried mint – 1 tbsp. spoon (or your own set of herbs);
  • Black pepper, salt – 5 pinches each;
  • Water or broth - 2 liters.

Meatball soup preparation process

First of all, pour 2 liters of water into a saucepan, add washed wheat or any other cereal that you like best. Let it cook for 20-30 minutes. Meanwhile, get to the meat.

How to make meatballs for soup

The whole highlight of the recipe lies not in the original set of ingredients, but in the special technique for preparing meatballs. We blind them, and before sending them to the soup, fry them in butter until a crust forms. It’s a trifle, but the taste of the soup changes dramatically!

Finely chop the onion, then add it to the minced meat. Add salt, pepper and mix well.

Wet your hands with water, or even better, wear gloves. You need to make these small meatballs from the minced meat. The principle is the same, take some minced meat and roll it into an even ball.

  • Semolina – 1-2 teaspoons;

Step-by-step preparation

  1. Prepare all vegetables in advance (rinse, peel). Grind the onion (1 small head) to a pulp using a blender, grater or meat grinder. Chop the greens finely. Also grate 1 clove of garlic on a fine grater.
  2. Place minced meat in a large bowl, add grated onion, garlic, herbs and semolina. If your minced meat is runny, you can add 2-3 teaspoons of semolina. Mix everything thoroughly.
  3. Make small balls from the resulting minced meat, then put them in the refrigerator.
