The Midwest favors dishes with an Italian twist, such as Chicago pizza or fried ravioli.

A signature dish of Tainan. These are egg butter noodles served in a small bowl with either meat or egg, boiled with soy sauce to enhance the flavor, and topped with bean sprouts.

Ding Bian

Everyone prepares the dish in their own way, for example, Chaozhou noodles have a lighter and lighter broth, while Lanzhou noodles, on the contrary, have a richer taste, and, interestingly, beef and soup are prepared separately.

Dough: 2 cups flour, 1 tbsp. spoon of salt, 0.65 cups margarine, 3 tbsp. spoons of butter, 0.25 cups of cold water, 1 tbsp. spoon of cream, 1 teaspoon of granulated sugar.

Filling: 6 medium apples, cored and peeled, cut into thin slices, 0.3 cups granulated sugar, 0.25 cups each flour and ground cinnamon.

Place the apple slices in a bowl, separately mix 0.25 cups of flour, 0.65 cups of granulated sugar and cinnamon and pour this mixture over the apples. Cover and leave in the refrigerator overnight. To prepare the dough, combine 2 cups flour and salt in a large bowl. Cut the margarine into small pieces and mix with flour and 2 tbsp. spoons of butter until crumbly. Make a well in the middle and add cold water. Knead the dough and roll it into a ball. Let stand for 20 minutes. Then divide the dough into two parts and roll out so that one part lines a pie pan with a diameter of about 20 cm (an appropriately sized frying pan with a removable or fireproof handle is suitable), and the other covers the top of the pie. Place the dough in the mold, put the apples on top and scatter the remaining butter, cut into small pieces. Cover with the second part of the dough and pinch the edges, making several slits to allow steam to escape. Brush the top of the pie with cream and sprinkle with granulated sugar. Bake in a preheated oven at 200°C for 10 minutes, then reduce the temperature to 175°C and bake for another 30–40 minutes or until the crust is golden brown.
