Ingredients:

  • 8 kg vegetable bell pepper;
  • 2 liters of water;
  • 7 tbsp. l. granulated sugar;
  • 4 tbsp. l. table salt;
  • 16 g citric acid.

Cooking method:

  1. Remove the stems and seeds from the peppers.
  2. Immerse the vegetables in bubbling water in a saucepan for 2-3 minutes and immediately transfer them to ice water.
  3. To take up less space, stack the peppers one inside the other and fill the jars with them.
  4. Prepare a brine from the indicated products and pour boiling peppers over them.
  5. Sterilize the jars and roll up the lids.

Ingredients:

  • 3 kg vegetable sweet pepper;
  • 3 kg of tomatoes;
  • 1.5 kg onions;
  • 230 ml sunflower oil;
  • 4 tbsp. l. 9% vinegar;
  • 6 tbsp. l. sugar sand;
  • 3 tsp. table salt;
  • 10 black peppercorns;
  • 6 peas of allspice;
  • 3 bay leaves.

Cooking method:

  1. Grind the tomatoes through a meat grinder or grind in a blender.
  2. Remove the stems from the peppers, peel the seeds and cut into strips.
  3. Cut the onion into cubes.
  4. Place all ingredients except vinegar in a large bowl. Place it on the stove and cook over low heat, stirring occasionally, for 60 minutes.
  5. Pour in vinegar and stir.
  6. Place the lecho into jars and screw on the lids.

Chicken terrine with sweet peppers

Ingredients

  • 600 g chicken fillet
  • 2 squirrels
  • 1 onion
  • 0.5 tsp thyme
  • 30 g basil
  • 1 tbsp. l. olive oil
  • 1 bell pepper
  • 3 tbsp. l. pine nuts
  • salt to taste
  • pepper to taste

Preparation

  1. Finely chop the basil leaves. Place it on the bottom of a rectangular “brick” shape. Finely chop the sweet pepper. Cut the chicken fillet into medium-sized pieces, place in a blender bowl and grind. Add all other ingredients except sweet pepper and nuts.
  2. Grind again. Add chopped sweet peppers and pine nuts to the minced meat. Mix. Transfer the minced meat into the mold on top of the basil. Cover with foil and place in an oven preheated to 170 degrees. Bake for 1 hour. Then remove the foil and bake for another 30 minutes.
  3. Turn off the oven and let the terrine stand in it for another 1 hour. Place the terrine pan in the refrigerator and chill for 3 hours. Turn the terrine over onto a plate and remove the pan. Cut into slices and serve.

Adjika

It is impossible to imagine Georgian cuisine without this seasoning! Adjika can be a sauce for many dishes, as well as a marinade and even an ingredient in soups.

Ingredients:

  • 2.5 kg bell pepper;
  • 250 g hot pepper;
  • 1 cup tomato paste without additives;
  • 800 g tomatoes;
  • 500 g carrots;
  • 1.5 kg of onions;
  • 3 heads of garlic;
  • fresh parsley sprigs;
  • fresh and dried cilantro;
  • table salt.

Cooking method:

  1. Cut off the stems of both types of peppers and remove the seeds from the sweet pepper. You can leave it in bitter - they will give adjika more pungency.
  2. Pass all the vegetables through a meat grinder or spin in a blender.
  3. Place all the products in a large container and place it on the stove.
  4. Allow 10 minutes for cooking. Transfer the adjika into the jars and screw on the lids.

Pickled peppers

To prepare this preparation, which in winter will be an excellent addition to any meat dishes and even just boiled potatoes, it is recommended to choose multi-colored peppers - green, red, orange and yellow.

Ingredients:

  • 4 kg vegetable bell pepper;
  • 10 tbsp. l. sugar sand;
  • 2 tbsp. l. table salt;
  • 1 glass of olive oil;
  • 2 bay leaves;
  • 200 ml vinegar 9%;
  • 2 pcs. carnations;
  • 6 black peppercorns;
  • 2 allspice peas;
  • 1 liter of water.

Cooking method:

  1. Cut off the stems of the peppers and remove the seeds. Cut the pods into quarters.
  2. To prepare the marinade, add all the ingredients except pepper and vinegar to a pan of water on the stove, bring to a boil and count 5 minutes.
  3. Add vinegar.
  4. Boil water in another saucepan and blanch the peppers in it for 2 minutes.
  5. Immerse the pepper in the bubbling marinade, reduce heat and count 5 minutes.
  6. Place the peppers in jars, placing them as tightly as possible, pour in the marinade so that there is no empty space and roll up the lids.

- rinse the rice, boil until tender and rinse again - cut the onion into medium cubes, grate the carrots on a coarse grater, fry the vegetables until soft, about 3-4 minutes, add the diced tomato (remove the peel from the tomato), add spices, salt, cook for another 3 minutes until the tomato is soft - add cooked rice, fried vegetables to the raw minced meat, add salt to taste, stir - fill the peppers with minced meat - grease the baking sheet with oil, put onion, cut into rings, on the bottom of the baking sheet, add half a glass of stuffed peppers on the onion water and place the peppers in a preheated oven at 180 degrees. In total, I cooked the peppers for 1 hour 10 minutes (check the peppers for doneness, the cooking time depends on your oven) - after 20 minutes of cooking, I turned the peppers over to the other side - the peppers turned out to be the most tender and super tasty
