When the red hot summer slowly gives way to autumn coolness, asters and gladioli bloom, and summer holidays come to an end, the season for harvesting green tomatoes begins.

Green tomato preparations appeared on my shelves in the cellar relatively recently, but everyone in my household has become so fond of them that for the second year in a row I have been canning various green tomato salads, marinating green tomatoes with garlic, adjika, and even vodka.

But without stopping there, I am always looking for new and interesting recipes for preparing green tomatoes, and trying different ways to prepare green tomatoes for the winter.

Fortunately, I have no problems with the availability of green tomatoes, since my mother-in-law is an experienced summer resident, and every year she supplies me with a couple of buckets of this delicacy. Although, I have never seen green tomatoes for sale in city markets.

Pickled green tomatoes just like in the store

  • Green tomatoes - 600 g.
  • Dill umbrellas - 20 g.
  • Garlic – 1-2 cloves.
  • Bay leaf and peppercorns - 1 pc.
  • Water – 1 l;
  • Salt – 2 tbsp. spoons;
  • Sugar - 2 tbsp. spoons;
  • Vinegar 9% - 30 ml.

Advice! It is advisable to use dill in the form of umbrellas. Moreover, its seeds must already be mature. They will give the marinade a special aroma that is unique only to this plant.

  1. It is better to cut the garlic into small slices.
  2. Place herbs and all the spices at the bottom of the jars.
  3. Well washed and dried tomatoes must be pierced with a toothpick in the places of the stalk.
  4. Then the fruits are placed in jars close to each other and poured with boiling water. So you need to hold the jars covered with lids for about 5 minutes.
  5. Now pour the water into the pan, add all the ingredients for pouring and boil.
  6. Add the required amount of vinegar to the jars, fill with boiling marinade and close the lids tightly.

The tomatoes according to this recipe are moderately spicy, aromatic, and look very appetizing in appearance. Perhaps the most difficult thing about this recipe is sterilization. Nuances of choosing fruits

To prepare lightly salted, pickled, barrel or salted tomatoes for the winter, you should choose fruits at food markets or in stores in a city or town. It is also worth remembering the degree of ripening of the product: the tomato crumb should have a dense and hard structure, it should not be ripe in appearance, it is better to choose a brown tomato in color.

Dents and various cracks, as well as possible signs of tomato disease, are unacceptable for preserving the product. The degree of ripening of the green component of homemade preparations should be the same. Inconsistency when creating the perfect jar for the winter period is not allowed at all.

If we talk about the size of the product, then preference is given to small or medium-sized green tomatoes. Cherry and its analogues are not used. Ideal for cooking is a fruit that looks like a plum, because the plum is not large in size, but at the same time dense in structure. Green tomato salad

This salad is not hidden for the winter, but is eaten freshly prepared.

  • 3 large green tomatoes;
  • 200 g walnuts;
  • bulb;
  • fresh herbs to taste;
  • seasonings: pepper, salt, coriander;
  • 1 tbsp. l. vegetable oil;
  • 6 tbsp. l. vinegar.
  1. Chop the tomatoes and place in a saucepan with 200 ml of water. Add salt, oil, vinegar (2 tbsp) and bring to a boil; leave for a few minutes.
  2. The tomatoes are placed in a colander. Onion, cut into large rings, is added to them.
  3. Nuts and garlic are passed through a meat grinder. The remaining vinegar and spices must be added to the resulting composition. Mix everything.
  4. When the paste becomes thick, add it to the tomatoes. Chop fresh herbs there too. Mix everything and put it in the refrigerator for an hour: let all the components combine with each other.

I think every gardener is faced with the fact that in the fall the tomatoes do not have time to ripen and turn red, but remain hanging as sad, green fruits on the bushes. The best recipes for canning green tomatoes for the winter

There are many ways to preserve green tomatoes.

This vegetable goes well with many spices and other vegetables:

Tomatoes can be subjected to different cooking techniques, for example:

  • twist with and without sterilization;
  • marinate;
  • salt;
  • to ferment;
  • stuff and make salads.


It is better to choose a small size of vegetables for winter preparations in order to compactly place them in a liter jar. This volume is convenient to store in the refrigerator after opening and place in the pantry.

Classic way

You can simply prepare pickled tomatoes using the classic method. For preparation you will need:

  • tomatoes - 3 kg;
  • cherry leaves - 70 g;
  • dill - 70 g;
  • parsley -70 g;
  • peppercorns - 6–7 pcs.;
  • onion and garlic - 100 g each;
  • bay leaf - 3 pcs.;
  • salt - 1 tbsp. l.;
  • sugar - 1 tbsp. l.;
  • vinegar - 1 tbsp. l.;
  • sunflower oil - 1 tbsp. l.;
  • water - 1.5 l.

Cooking technology:

  1. Prepare a marinade from salt, sugar, water and oil.
  2. Place cherry leaves, peeled garlic cloves and herbs on the bottom of the jar.
  3. Add vinegar to the marinade.
  4. Place washed tomatoes and chopped onion on top.
  5. Pour in the marinade and sterilize for 15 minutes.

Cold way

Cold pickling can be done in a barrel or enamel container. The method also does not exclude the use of a glass jar; before the procedure, the container is doused with boiling water. Necessary ingredients for 10 kg of the main component:

  • salt - at the rate of 70 g/1 l of water;
  • currant leaves - 12–15 pcs.;
  • dill - 200 g;
  • parsley - 50 g;
  • hot pepper - 2 pods;
  • cloves - 7–9 pcs.

The following follows:

  1. A layer of spices is placed at the bottom of the container.
  2. Then whole vegetables are placed.
  3. Sprinkle it all with salt.
  4. The last stage is to fill it with raw water and close the lid.

Without sterilization

Vegetables are tasty and relatively quick to prepare without the use of sterilization. For the recipe you will need:

  • tomatoes - 1.5 kg (per 3 l);
  • sugar - 4 tbsp. l.;
  • salt - 1 tbsp. l.;
  • water - 1 l;
  • grape vinegar - 100 ml;
  • bell pepper - for decoration.

Cooking instructions:

  1. Tomatoes placed whole in jars are scalded twice with boiling water.
  2. The pepper is cut arbitrarily and added to the container.
  3. A marinade is made from the remaining ingredients, adding vinegar at the last moment.
  4. Immediately after the marinade boils, it is poured into containers.
  5. Then you need to close it with sterilized lids.

With garlic

Garlic gives vegetables a rich, pungent taste and a piquant note. For preparation you need the following ingredients:

  • green tomatoes - 3 kg;
  • horseradish root;
  • garlic - 1 head;
  • peppercorns;
  • dill;
  • currant leaves;
  • bay leaf - 6 pcs.

Brine (per 1.5 liters of water):

  • salt - 1 tbsp. l.;
  • sugar - 100 g;
  • vinegar - 100 ml (per jar).

Preparation:

  1. Wash and dry the vegetables.
  2. Place a couple of currant and bay leaves, pieces of chopped horseradish root and peppercorns on the bottom of the jar.
  3. Then in layers: tomatoes, a couple of cloves of garlic.
  4. On top is an umbrella of dill.
  5. Boil the brine, vinegar is added separately to each jar.
  6. Pour hot brine over vegetables.
  7. Sterilize for 10–15 minutes.

With onion

Preserving onions with onions will not give a strong spiciness to the dish, but will make the taste more rich. In addition to the main component (3 kg), the following ingredients are required:

  • onion - 1 kg;
  • cloves - 6 pcs.;
  • peppercorns - 6 pcs.;
  • water - 1.5 l;
  • salt - 3 tbsp. l.;
  • sugar - 4 tbsp. l.;
  • vinegar - 1.5 tbsp. l. (per 3 liter jar).

Wash the vegetables. Cut the onions and tomatoes into slices, then grate the carrots on a coarse grater, and cut the peppers into strips. Mix all the vegetables and leave for several hours so that the vegetables release their juice. After this, add vinegar, vegetable oil, sugar, black pepper, salt, and bay leaf.

Bring the resulting mass to a boil and then boil for another 15 minutes. Then quickly roll it up. You should get about 10 half-liter jars. Turn the rolled jars over and leave them like this until they cool completely.

Recipe for green tomato salad with chicken and bell pepper

Rinse the chicken fillet and dry on a paper towel. Then fry in olive oil, after cutting the fillet into strips, until golden brown.

Next, prepare the vegetables: cut the green tomatoes into slices, chop the green onions, chop the basil leaves and parsley, and cut the bell pepper into strips. Prepare salad dressing separately. To do this, mix mustard, sugar, vinegar, sea salt and ground black pepper, the result should be a homogeneous mass. After this, combine all the salad ingredients, mix and pour over the dressing.
