First let's marinate! Cut the zucchini into slices about a centimeter thick. We peel mature vegetables from seeds and peel, and prepare young zucchini unpeeled.

Grind a teaspoon of cumin and the same amount of pepper in a mortar, rub the slices with this mixture, then pour in olive oil. Place in the refrigerator for 20-30 minutes.

Place melted butter in a frying pan and heat the pan. Place the zucchini in the melted butter and fry on one side for 5 minutes.

If you fry vegetables in butter or in a mixture of butter and vegetable oil, a golden brown crust will form quickly, and the dish will turn out much tastier.

When the vegetables are browned, turn them over and fry for another 5 minutes on the other side. You don’t need to spend a lot of time cooking zucchini; 7-10 minutes in total is quite enough.

Chop the green onions quite coarsely and pour them over the vegetables. There is no need to stir at this stage, just let the onion warm up, so it will remain slightly crispy.

Place the zucchini in the melted butter and fry on one side for 5 minutes.

When the vegetables are browned, turn them over and fry for another 5 minutes on the other side.

Now let's prepare the sour cream sauce. Pass the garlic cloves through a garlic press. Finely chop the sprigs of fresh dill. Grind the colored pepper in a mortar.

Add 2-3 tablespoons of cold water so that the sauce is not very thick, add a teaspoon of salt, stir - the sauce is ready.

Pour the sour cream sauce into the frying pan, shake until it spreads, and quickly bring to a boil over high heat.

We remove the seeds from the red sweet pepper and cut the pulp into small cubes.
