Cooking step by step:

Preparing potato dough:

We choose soft varieties of potatoes for potato growers - American is best.
If you don’t have this variety, then Slavyanka will also do. So, wash the potatoes... Peel and boil until tender in salted water. As an option, we cook it in its jacket and peel it hot - it turns out tastier. Drain the water and make a puree, adding butter to it.

Next, cool the resulting puree a little, add egg yolks, flour and knead the potato dough. The dough for making potato pancakes should be fluffy, so knead it well with a spoon or stir with a blender. Add 2 tablespoons of flour, but if necessary, you can add more - so much so that the dough stops sticking to your hands.

Preparing the filling:

Cut the ham or meat into small pieces. If you use meat for the filling, you need to boil it until tender, cool and grind in a meat grinder or simply chop it finely.

Finely chop the onion. Fry it over low heat until golden brown. Mix the onion with ham or meat, add salt and pepper to taste, add more herbs + your favorite spices.

Turn on the multicooker in the “Frying” mode, let it warm up for a few minutes, after which we grease the multicooker pan with vegetable oil. We make flatbreads from potato dough. If the dough is hard, then roll it out with a rolling pin, and if it is soft, then form the cakes with your hands. Place the filling in the middle of each flatbread and begin making potato pies.

After sealing the edges of the pie, press it down on top so that it comes out flat - a flat pie is easier to fry. Roll the potato pancakes in flour or breadcrumbs, then place them in a slow cooker. Fry our potato pancakes in vegetable oil on both sides until golden brown. You can fry them in a frying pan (whichever is more convenient for you) - it turns out no less tasty.

After frying, place the finished potato pancakes on a napkin so that excess oil drains off. Serve potato pies with broth or a side dish of vegetables.

Kartoplyaniki are lazy potato pies. From the name it is clear that the main ingredient of this dish is potatoes, or rather the dough made from them. Fillings and additions can be any: mushroom, meat, vegetable. Potato pancakes are served as a separate dish, with sauces or vegetable salad, and as an addition to borscht, for example.

  1. Mash 500 g of puree in a bowl. Cut a small bunch of greens (the amount of greens and the ratio of components can be adjusted at your discretion). Add greens to the puree and mix everything.
  2. Pour 0.2 cups of kefir into the bowl and add a quarter teaspoon of soda. Stir everything and pour into mashed potatoes.
  3. Beat 1 egg into the potato dough, mix everything until smooth. If desired, add a little pepper or spices for the potatoes.
  4. Pour 3-5 tablespoons of flour into the dough in portions. The amount of flour must be adjusted depending on the consistency of the dough. Leave the dough for 15-20 minutes so that the flour absorbs gluten.
  5. Place the dough on a floured board and roll it out into a thick sausage. Cut the sausage into portions and form each piece into a potato pie. The shape can be any: round, like cheesecakes, oblong, flattened.
  6. Pour a little oil into a heated frying pan and place the potato pancakes one at a time. Once a golden brown crust has formed on both sides, reduce the heat and fry for 3-4 minutes, covered, until done. Place the finished potato pancakes on a plate covered with a paper towel to remove excess fat.

Serve hot with sour cream, horseradish, mustard sauce and ketchup. Drink with kefir or tomato juice.

  • For potato pancakes with cracklings, take lard with a layer of meat, cut it like cracklings, and fry it together with onions until transparent.
  • The fillings are mixed right into the dough, as are the herbs. If desired, you can pepper the dough and add your favorite spices.
  • To form kartoplyaniki or potato zrazy, flatten a portion of the dough, like into pies, add the filling and pinch the edge. Place the potato pancakes, seam side down, and fry covered for 5-7 minutes.

Potato pancakes can also be made dietary. To do this, place the filled pies on a baking sheet and bake until golden brown for 20-25 minutes. Brush hot potato pancakes with melted butter. Serve hot.

Potato pancakes are not always prepared from leftover puree. In order to prepare a light dough, potatoes are boiled in their skins until tender and immediately peeled.

  • 2 tbsp. spoons of tomato paste;
  • 1 clove of garlic;

  1. Heat the milk and melt the margarine in it. Pound the hot potatoes, adding the milk mixture. Beat the egg and pour into the puree. Stir, add flour and knead.
  2. Shred the cabbage, finely chop the carrots and onions. Mix everything, grind with salt, add sugar and a few drops of vinegar. Heat the oil in a deep bowl and add the vegetables. Lightly fry.
  3. Add tomato paste, squeeze out the garlic clove. Stir gently, cover with a lid and simmer for another 30 minutes over low heat.
