During the zucchini season, it would be a sin not to enjoy all sorts of appetizers made from them. Moreover, you don’t have to spend a lot of time cooking. The tender pulp of the vegetable is easily saturated with the flavor and aromatic properties of other ingredients and the result is a rather original dish.

Although the most famous appetizer is squash caviar, have you tried vegetable sticks or pancakes? And what a gorgeous dish you get for the holiday table if you make boats from the fruits, fill them and bake them under a cheese crust! Quick dishes made from zucchini look quite original in the form of pancakes, noodles, cream soup, pickled salad and even cutlets!

In any case, you should please your loved ones with new dishes made from such a healthy dietary vegetable as zucchini.

Zucchini baked in crispy breading

Do you love cheese sticks? What about vegetable nuggets? You can also make something similar from zucchini. Wheels of zucchini in batter are good for breakfast, but if you want to sit with friends and treat them to a crispy snack, then I highly recommend making breaded zucchini sticks with a cheesy aroma and a taste of Italian herbs. They get entangled first!

Ingredients:

  • Zucchini - 5 pcs.
  • Breadcrumbs – 1 cup.
  • Grated cheese – ¼ cup.
  • Flour - ¼ cup.
  • Egg – 1 pc.
  • Water – 1 tbsp. l.
  • Italian spice mixture – 1 tbsp. l.
  • Salt – ½ tsp.

Preparation:

1. Cut well-washed and dried zucchini into strips 1.5-2 cm thick.

2. Pour salt and flour into a cooking bag and send the slices to them. Shake well so that the vegetable strips are completely covered with the flour mixture and the juice is sealed inside this kind of crust.

3. Pour breadcrumbs into a wide cup and mix them with grated cheese (ideally use Parmesan, but if you don’t have it on hand, then any other semi-hard cheese that can melt when frying) and spices will do.

4. In a separate cup, beat the egg with water - you get a kind of leison.

5. While the oven is heating up to 180 degrees, first dip each zucchini block in the egg mixture, then roll it in the cheese-breading mixture and place it in rows on a baking sheet. It is advisable that the sticks do not touch and there is at least half a centimeter of free space between the rows - this will allow them to bake evenly on all sides.

6. Place in the oven for 15 minutes. A couple of minutes before the end of baking, you can turn on an additional fan to obtain a crispy cheese coating.

7. Serve with ketchup or tartar sauce.

Pickled zucchini appetizer

When preparing this snack, zucchini will not be subjected to any heat treatment at all. All responsibility for preparing this dish falls on the spices and the effect of low temperatures.

Ingredients:

  • Zucchini - 1 kg.
  • Dill - ½ bunch
  • Garlic - 4 cloves
  • Honey - 1 tbsp. l.
  • Vegetable oil - 2 tbsp. l.
  • Apple cider vinegar - 2 tbsp. l.
  • Salt, ground black pepper - to taste

Wash the zucchini, peel and cut into thin slices. Now we place the zucchini slices in a colander, which we place in a bowl, add salt and mix gently. When the zucchini releases its juice, it will all flow into the bowl.

While the zucchini is steeping, wash, dry and finely chop the greens. When the zucchini gets rid of excess liquid, add the greens and mix. We peel the garlic, wash it, pass it through a garlic press and place it in a small bowl. Add pepper, vegetable oil, vinegar and honey there. Mix everything thoroughly and place it in a container with zucchini and herbs.

Zucchini pancakes

Pancakes? Yes, you read that right! It's pancakes! You can also eat them with sour cream or wrap the filling in them. For example, fried minced meat with onions is ideal as a filling for zucchini pancakes.

Ingredients:

  • Zucchini – 0.45 kg
  • Flour – 0.45 kg
  • Kefir – 300 ml.
  • Egg – 4 pcs.
  • Chopped dill with parsley - 3 tbsp. l.
  • Sunflower oil – 1 tbsp. l.
  • Butter - for lubrication.
  • Soda – 1/2 tsp.
  • Salt - 1 tsp.

Preparation:

1. Using the finest grater, grate the vegetable and place the resulting mass on a sieve. We squeeze out the excess juice well so that in the end we end up with pancakes and not soup.

Light zucchini appetizer for the holiday table

These zucchini are a great addition to any holiday table. They will go especially well with light alcoholic drinks.

Ingredients:

  • Zucchini - 2 pcs.
  • Parsley - ½ bunch
  • Cottage cheese - 150 gr.
  • Sour cream - 3 tbsp. l.
  • Salt - to taste

Wash the zucchini, cut off the place where the stalk attaches and cut them into thin longitudinal slices. Now the zucchini should be carefully placed in layers in a bowl. Don't forget to lightly salt each layer. Leave the salted zucchini for about 20 minutes so that they release their juice. While they are brewing, let's make cottage cheese.

Lightly salt the cottage cheese and mix thoroughly. Then add sour cream to it and mix again.

After 20 minutes, drain the excess liquid from the zucchini, and blot each plate with a paper towel. Now the zucchini should be fried on both sides in a frying pan. It is advisable to use as little vegetable oil as possible so that the snack does not turn out to be too greasy.

Place the curd mixture inside the fried zucchini, add a few leaves of clean parsley and roll the zucchini into rolls. A light and tasty snack is ready.

Squash caviar

If you are a fan of morning sandwiches with pates or any other ingredients on top, then this squash caviar is just perfect for you! Outwardly, it is very similar to store-bought, but much tastier and, as a rule, does not have time to stay in the refrigerator for a long time.

Ingredients:

  • Zucchini – 3 pcs. (average)
  • Onion – 2 pcs. (average)
  • Garlic clove – 2 pcs.
  • Tomato paste – 2 tbsp. l.
  • Water – 2 tbsp. l. + 2/3 cup.
  • Sunflower oil – 2 tbsp. l.
  • Carrots – 1 pc. (large)
  • Salt, ground pepper - to taste.

Preparation:

1. Grate the carrots using a grater. You don't have to grind it too much. Cut the onions into smaller cubes so that it can stew evenly with the carrots.

2. Sauté chopped vegetables with 1 tbsp. l. oils And so that we don’t end up with a burnt roast, add 2 tbsp. l. water and simmer over medium heat.

3. Cut the zucchini into cubes.

4. Pour the remaining oil into a second heated frying pan and fry the cubes over low heat until golden brown.

5. Place all the fried ingredients in one pan, add salt, pepper and simmer for about an hour, stirring occasionally and adding water so that the caviar does not burn. You may need less water if the vegetables are very juicy on their own.

6. A quarter of an hour before the end of the hour, carefully, so as not to burn yourself, add the garlic cloves crushed through a press with tomato paste.

7. Let the finished caviar cool to at least room temperature.

8. You can eat it as is, but to give it a more marketable appearance, use a blender to grind the vegetable mixture to a puree.

9. Store in the refrigerator. Serve with slices of bread, boiled potatoes or any side dishes.

Appetizer of fried zucchini with tomatoes

An appetizer of fried zucchini with tomatoes has a very interesting appearance. You can serve it with rye bread croutons.

Ingredients:

  • Zucchini - 600 gr.
  • Tomatoes - 3 pcs.
  • Garlic - 1 clove
  • Dill - 1 bunch
  • Spicy mayonnaise, salt, pepper - to taste

Wash the greens and finely chop them. We peel the garlic, wash it and pass it through a garlic press. Add garlic and dill to mayonnaise and mix everything thoroughly. The sauce for the appetizer is ready. If desired, you can add more salt to the sauce.

Wash the zucchini and cut into medium-thick slices. Then put them in a deep bowl, add salt, pepper and mix thoroughly. In a well-heated frying pan, fry the zucchini on both sides until golden brown, after dipping them in flour. Place the finished zucchini on a shallow wide plate in one layer. Coat each zucchini with sauce.

Wash the tomatoes. We remove the place where the stalk is attached to them and cut them into neat circles. Place one tomato slice on top of each zucchini coated with sauce. The appetizer can be served at the table.

Zucchini boats with minced meat and cheese

How beautiful any stuffed vegetables baked in the oven look. And zucchini, cut in half, looks especially romantic - almost like boats. All that remains is to fill them with filling, sprinkle with cheese and put them in the oven.

Ingredients:

  • Zucchini – 3 pcs.
  • Meat – 0.4 kg.
  • Cheese – 0.15 kg
  • Garlic clove – 2 pcs.
  • Sunflower oil – 2 tbsp. l.
  • Greens and sour cream - for serving.
  • Onion – 1 pc.
  • Dried oregano - 1 tsp.
  • Salt, pepper - to taste.

Preparation:

1. Your favorite type of meat must be minced using a meat grinder to make minced meat.

2. Chop the onion into small cubes.

3. Saute the onion pieces for literally two minutes so that they do not have time to become transparent and darken.

Zucchini appetizer "Lady fingers"

“Lady fingers” could well be called a dietary dish, if not for the mayonnaise and fried zucchini.

Ingredients:

  • Zucchini - 2 pcs.
  • Processed cheese - 2 pcs.
  • Garlic - 3 cloves
  • Dill - ½ bunch
  • Tomato - 1 pc.
  • Vegetable oil - for frying

Wash the zucchini and cut into lengthwise slices. Then these plates should be salted and left for 15 - 20 minutes so that the zucchini loses excess liquid. For lovers of hot sandwiches, I recommend an interesting option with carrot, cheese and zucchini filling. You can even take this snack with you on a picnic or just treat yourself in the evening when you want something tasty from vegetables.

Ingredients:

  • Bread loaf pieces – 8 pcs.
  • Zucchini and carrots - 1 pc.
  • Cheese – 80 gr.
  • Sour cream - 2 tbsp. l.
  • Garlic clove – 1 pc.
  • Mustard - 1 tsp.
  • Salt, pepper - to taste

Preparation:

1. Using a medium grater, chop the zucchini.

2. We do the same with carrots.

3. Don't forget to chop the cheese. It must be of a variety that melts well in the oven.

4. Combine all the vegetable rub with cheese in a deep cup.

5. Season with sour cream and mustard. If you want a little garlicky flavor, then use a press to crush a clove of garlic directly into the cheese and vegetable mixture.

6. Season with pepper and add a little salt. Mix all ingredients until smooth.

For many, this snack will remind you of sandwiches for buffet tables. It's kind of a one-bite sandwich.

Ingredients:

  • Zucchini - 1 pc.
  • Tomato - 1 pc.
  • Garlic - 3 cloves
  • Carrots - 1 pc.
  • Hard cheese – 100 g
  • Mayonnaise, herbs - to taste

Wash the zucchini, cut into medium-thick slices, add salt and leave to steep for 10 minutes. Peel the carrots, wash them and grate them on a fine grater. We also grate the cheese on a fine grater. We peel the garlic, wash it, and put it through a garlic press. Wash the greens, dry them and finely chop them. In one container, combine herbs, garlic, cheese, carrots and mayonnaise. Mix everything and, if necessary, add salt.

When the zucchini releases juice, drain it and fry the zucchini in vegetable oil on both sides, after dipping it in flour. Place tomatoes cut into circles on the fried zucchini, and cheese and mayonnaise mixture on top of the tomatoes. Additionally, zucchini can be decorated with dill.

With just zucchini on hand and a couple of other ingredients that you usually have in the refrigerator, you can make an original appetizer very easily and simply, and your guests will no longer take you by surprise. After all, good housewives are distinguished by the fact that they can instantly set the table “from practically nothing.”
